The Best Rolled Sugar Cookies

Reviewed: Apr. 9, 2009
Great recipe. I cut the recipe in half and it still worked out great. The cookies hold up well without being too "hard". They spread only slightly and keep thier shape.

Mississippi Mud Pie I

Reviewed: Apr. 7, 2009
MMMM! This recipe was very delicious! We made it the exact way the recipe said except we halfed it, and instead of using a 9x13 pan we used and 8x8. My daughter loved helping me make this and she loved how it was a no bake pie. However, it was very hard getting the cool whip-cream cheese mixture to stick to the graham cracker crust. I also recommend putting the pie in your freezer right after, if you don't plan to eat it right away. Tastes delicious, and I hope you enjoy it as much as my family and I did!

Potato Salmon Patties

Even the kids loved these. Subbed unseasoned Panko for breadcrumbs since I didn't have any on hand and seasoned with greek seasoning, garlic salt and pepper. Didn't add dill or celery seed by choice, but forgot the garlic by accident. It was still super.

We love these. I have cooked them two ways. The first time following the directions exactly. The second time I preheated my oven to 500 degrees and put a few at a time on cooling racks and put the whole thing on the top rack of my oven. It took about 3-4 minutes per batch to bake this way. You are looking for the bread to puff and then you know they are done. When they came out of the oven I brushed with them with butter. Both ways were fabulous. I will definitely be making these again soon!!

Apple Pie by Grandma Ople

Reviewed: Feb. 17, 2009
Yummy! My hubby said it was the best apple pie I have ever made. Loved the caramel-y sauce - it really made the pie. The only change in the recipe was that I used red delicious apples since it was all I had on hand. I used the 'Pie Crust IV' recipe for the crust also on this site. Thank you for such a great recipe.

Creamy Banana Bread

Reviewed: Jan. 15, 2009
Very moist! I made mini muffins (minus the brownsugar and cinnamon mixture) and these were simply delicious. I used three medium sized bananas, used half brown sugar and half white sugar (because I like the "crust" you get from using brown sugar) instead of all white and cut that down to just two cups. Plenty sweet. A little trick for those of you with picky kids or veggie-hating hubbies (I have both!): I threw in a 1/2 cup of butternut squash puree to up the vitamins and such. You can't even taste or see the squash, but you get all the goodness of that veggie. Anyways, five stars!!

Creamy Rice Pudding

Reviewed: Jan. 9, 2009
Excellent - creamy and delicious. Used a short grain rice (Arborrio, which is used for risotto and such) which makes all the difference. Do not use a long grain rice for this recipe because you want the texture to be creamy and a long grain rice will not give you this texture. I also used lowfat milk and the pudding was still uber creamy.

Balsamic Vinegar and Ginger Bok Choy

Pretty Good. I added salt and pepper because I season everything and I think it tasted better seasoned. Also, I cut back on the vinegar to a little more than half of what was called for. It was still plenty vinegary. All in all a very good recipe - loved the capers in there!

The first time I made this I followed the recipe to a "T" and it was excellent. The second time I added about 2 tablespoons of powdered sugar and, in my opinion, it was perfection.

Flan II

Reviewed: Jan. 2, 2009
First try: as written. Found it rather thin. 2nd try, used half whole milk, and half heavy whipping cream. Increased eggs to 2 whole eggs, 3 egg yolks. I used 1 tsp vanilla per recipe. I think it could actually stand another egg yolk. Added the heavy cream at the end and just blended it in so it wouldn't whip or turn to butter. After much reading about the caramelized sugar, I agree that it should *NOT* be stirred at all. IOW, you don't set the pan on the burner and stir until it's melted. I used a small saucepan and shifted the sugar around by moving the pan, over medium heat. When it started melting, I turned the burner (gas) up on high and moved the pan around above the flame. When it turned the color of amber (no darker or it will burn), I poured it into the pan and had enough time to swirl it around before it hardened. Warming the dish first also gives you time to swirl it. I let it cool to the touch before putting in the custard mix. I made 2 recipes for guests: one with sugar and caramel, one with Splenda (less than called for) and sugar-free marmalade in the dish so it would be on top when flipped. No appreciable difference in taste between sugared custard and Splenda. I used 1.5 qt Pyrex dishes to bake; took about 1.5 hours. It curdled sligthly at the bottom and around the edges but was set and creamy in the middle, and really delicious. Several experts pronounced it superior to the recipes made with sweetened condensed milk.

Cake Balls

Reviewed: Dec. 24, 2008
Oh Fantabulous!!!!Followed the advice of others and froze first before dipping in chocolate. I used WAY more than 3oz of chocolate for the coating. Also didn't use the chocolate bark stuff (didn't want a waxy aftertaste), so I used the bakers dipping chocolate. Super Easy and soooooo Good. My 5 and 3 year old have already told me they want cake balls in place of a regular cake for their upcoming birthdays. Two thumbs up!

Danish Kringle

Reviewed: Dec. 22, 2008
This was so tasty! I made my own peach preserve for the filling. The only thing was it only made 2 kringles. The first one didn't come out so pretty or professional looking and had peach filling oozing out every which way... but it was soooo good! So for the next one I fixed the design flaws and crisscross it better.

Super easy and super good. I always sub whole wheat for white flour and add somewhere between 1/4 and 1/2 cup of peanut butter and a handful of mini m&ms. I would like to say I make these just for the kids, but my hubby and I gobble these up too!
