Andouille and Chicken Creole Pasta

I would say if you used a homemade version of Creole spice without salt this would be great. But, as is, it is too salty.

Garlic Chicken Fried Chicken

What i did is cut up the chicken breasts to make it lo0k like chicken fingers and topped it with gravy. Husband liked it so I'll give it a four. But if it was just me, i'll give it a 3.

Apple Oatmeal Crisp

I cheated and used a can of apple pie filing because it was all I had on hand. Everyone LOVED it!!! Great fast dessert. Easy to keep all ingredients on hand for that last minute request or suprise guest. I'll make other apple crisp, but because of ease, this one is a keeper!!!

Cream of Mushroom Chicken

would've given this a 5 if i didn't put too much salt on it. Although i'm a big fan of rice, this is way better served with pasta :) A keeper! 0h and for those who complained abt this being to0 thin, try removing the water then add 1Tbsp flour. Worked f0r me! ;)

Beef Tips

Gave it a three because although it's not really bad.. there was nothing special ab0ut it.. what i did was simmer the beef for 30 mins (just so the beef would absorb the flavor) then transferred it to the pressure co0ker where i gave it another 30 mins. to co0k.. it was oh-so tender! :)

Chicken Tortilla Soup I

This soup was good. For some reason I just felt like it needed a can of med enchilada sauce. That added a bit more spice to the soup. For those of you who can't find hominy...look in the Mexican food section of your grocery store. However, I don't think the hominy was all that prevalent in the soup. You can leave it out and not miss it. Well, unless you love hominy.

Smothered Beef Short Ribs

I made this with the short ribs. If you make it with a "better quality of meat" you will be making runny beef stew. If the fat is a big problem for you, let the dish sit overnight in the fridge and then skim the fat off the next day. I do agree with other reviewers, there was way too much liquid. I would only add four cups of broth, not eight. Served the dish over Trader Joe's Garlic Mashed Potatoes. All-in-all, something I made once and enjoyed, but will probably never make again.

Gary's Stuffed Mushrooms

These were a big hit at my luncheon. However, I must not have understood what was meant by large mushrooms. I had a lot of stuffing left over. I'm going to use it to stuff chicken tomorrow for dinner (got the idea from another reviewer.) Also, used one cup of butter and not two. It was plenty.

Roasted Garlic Cauliflower

Stovetop Pork Chops and Potatoes

Good flavor. Next time I will not cut my potatoes so thin and stir them during cooking. It looked more like cream of potato soup when the dish was finished. Might try again and add more veggies.

Layered Chicken and Black Bean Enchilada Casserole

I changed this from four stars to five. I have made this several times. It's great for lunch the next day! My husband and I enjoyed this dish. I was craving Mexican food and it hit the spot. For my own personal taste I used 1/2 medium enchilada sauce and 1/2 hot enchilada sauce. Used light sour cream. Will make again.

Chicken Enchiladas V
