Carol's Arroz Con Pollo

Reviewed: Sep. 14, 2007
The flavor in this dish was fantastic...of course, I burned my rice on the bottom, but, amazingly, it didn't ruin the taste of the rest of it. Even my somewhat picky oldest daughter liked it and asked for seconds.

Pork Chop and Potato Casserole

Reviewed: Sep. 14, 2007
I really liked this one. I changed a lot of things to fit my world and how it runs, but it turned out really great. I diced the potatoes...easier for my girls to eat. And I sprinkled some of that "potato steamers" seasoning on them, and some mozzarella before I layered the rest on...so mine wasn't bland at all, it came out awesome.

Lattice Chicken Potpie

Reviewed: Aug. 30, 2007
I liked this recipe...I changed a few things...used one bag of veggies, added canned diced potatoes and cream of chicken soup, and I cooked the chicken with garlic...and I thought it was awesome...I will not, however, form the lattice on top again...took too much time for me, but all in all, this was really good!

I used this recipe for my bosses birthday, I was so embarassed when everyone started eating it. The cake was dry and the flavor was awful. This is the worst recipe I have ever made. I will never use it again, nor would I ever recommend this recipe to someone.

Italian Panzanella Bread Salad

1. Made this again for the military wives. Again, it was the hit of the party. I let the tomato mixture sit in the fridge overnight and it turned out fine. 2.Everyone at the party LOVED this salad. I used a garlic and cheese bread instead of the white bread. Make this, you will not be sorry.

I love this! It tastes so g0od and it's very easy to make. To those wh0 gave this a 1 star try making this again but make sure that you use the thick teriyaki sauce (I recommend using Kikkoman Baste&Glaze teriyaki sauce) instead of the regular teriyaki marinade. A definite keeper! Thanks for sharing :)

Being a mom of an 18 month old I can say that quick easy meals are the best. My girl loves tomatoes and chicken. All I had to do was put it over rice and add some fresh sweet basil and she was in heaven. This is a very tasty meal.

Easy Chicken Enchiladas

mmm..mmm.. mmmm.. Great Enchiladas without the hassle! I did some few minor changes though, co0k the chicken meat in taco seasoning and dip flour tortillas in heated heavy cream before putting the mixture on it (this idea is from Gerry's chicken enchilada w/c can also be found in this site). We now have Spanish night on dinner rotation because of this recipe. Definitely a keeper!

Amish Meatloaf

Since I'm a firm believer that brown sugar should not go in the meatloaf but rather on it, I used the "Rempel's Family Meatloaf Recipe" (found in this site to0) f0r the meatloaf and kept this recipe's glaze.. I don't know bout y'all but that for me is a five star recipe. ;)

Rempel Family Meatloaf

Reviewed: Mar. 8, 2007
My perpetual search for the perfect meatloaf is O-V-E-R! Although I still had to make s0me alterations for this recipe, thus the 4 stars. First, reviewers were complaining about this being to0 salty so what i did was put 1T of onion powder in place of onion soup mix. Next, to0 bland. The solution? Put glaze on it. Mix 1/2 c Ketchup + 1 Tbsp Vinegar + 1 T Yellow Mustard + 1/4 c sugar. Brush it during the last 15 mins of baking. Mmmm-mmm. now that's a five star recipe.. Thanks f0r sharing!
