Lemon Mushroom Herb Chicken

Reviewed: Dec. 9, 2009
Made just as the recipe stated and it was AMAZING. I made a pot of noodles to pour the leftover sauce on just so I wouldn't waste it. the only suggestion I have is to halve the flour mixture. I had about half left over. Thanks Valerie for the great recipe.

I'm a lunch lady for a small private elementary. I made this for the kids at school and even the ones who weren't broccoli fans seemed to like it. So...kid approved!

Turkey Gumbo

Reviewed: Dec. 9, 2009
Taking others' advice, I cut the oil down to a half cup and used a half cup of flour. The house still smells like a fry-up, but the end result gumbo was not too greasy. I didn't have any file powder or sassafras (which is what file is made from) so I subsituted a combination of sage, thyme and oregano - a recipe I pulled from Wikipedia. I used chorizo sausage I had on hand, leftover rice from an order of Chinese, and my leftover Thanksgiving turkey. A good use of what was hanging around in the fridge after the holiday.

Orange Turkey Brine

Reviewed: Dec. 1, 2009
I was a little disappointed with this recipe. I quess I was expecting a little more flavor in the meat than what I got. I even added an extra orange inside the bird with some fresh thyme and parsley, but this was not what I was looking for. Yes, the bird was a little moist but not that moist. This was a bit of a dissapointment. Sorry

Incredibly easy and incredibly flavorful. I made the chicken, removed it, then made the sauce in the same pan. Saved dishes in the long run. Wonderful!

No Salt Vinaigrette

My husband LOVED this recipe. He is on a restricted salt diet and finding tasty condiments is a huge help for me. I am going to try it with red wine vinegar for myself and I am sure it will be just as tasty! Thanks for the hubby pleasin' recipe.

This is very good. However, instead of using just regular plain Yogurt, use Greek Style plain Yogurt, it is much creamier and thicker than regular American Plain Yogurt.

Hot Artichoke and Spinach Dip II

Reviewed: Oct. 6, 2009
I have made this twice, both times, I used sour cream instead of mayonaise, both times I made a double batch. The 1st time, it came out good, but too thick. The 2nd time, I added about 1/4 cup more sour cream and the consistency came out much better! All in all, this is a wonderful recipe!!

Crispy Herb Baked Chicken

Reviewed: Oct. 2, 2009
I have been using a recipe pretty similar to this, except, I use Betty Crockers Roasted Garlic instant mashed potatoes, coat the chicken, melt and drizzle the butter over the chicken. It's already flavored and the butter over the pieces help from it sticking to the foil or the pan. My family loves it and so do the friends i've told about this recipe!

Greek Avgolemono Chicken Soup

Reviewed: Sep. 16, 2009
Avyolemono is my favorite soup and we love it lemony. Even my boyfriend who has no Greek in him at all, loves it extra lemony. I use usually make 2 large pans at a time (they don't last long), I actually use a whole cup of lemon per pan, and I shred the chicken breasts into the soup. I have tried both Orzo and regular rice. My sister makes both kinds every Easter, and I prefer the regular rice. My favorite rice is the Uncle Ben's Converted rice.

Entered 09/14/09..What can I say? This is absolutely fabulous. For some reason, I had to leave it in the oven for about 10 minutes longer though. And I was wondering, does anyone know if this would freeze good? **Update**09/21/09..I made this this weekend using chocolate cake mix and cherry filling. I also cut the sugar down to 2 cups. So good...

I baked these yesterday to bring to work today for someone's birthday. They were the 1st things to go, received lots of compliments and some recipe requests. ***The changes I made, I used butter instead of margarine, and only brushed it on, and replaced the sugar with Splenda.***They turned out great!
