Spinach and Potato Frittata

I like to stay as close to the original recipe when I first try a recipe on here, and like many others have written, this recipe is a very good place to start. The basic idea was great. Just a little bland. I added mushrooms and extra spinach. I'll most likely make it again, but next time I'll probably add more seasoning. It was a nice light breakfast and VERY easy. One dish. I like that. :) Like others, I started on the stovetop for 7 mins, and threw it in the oven at 400 for about 10 mins more. Came out perfect.

Cajun Chicken Pasta

Spicy, but a little boring. I stuck pretty closely to the recipe. I subbed the cream with fat free half & half, used rigatoni, and didn't have green onions. I have a hard time believing those things would have improved it, had I included them. It was edible, but I don't know if I'll make it again.

White Cheese Chicken Lasagna

This, to me, is a 4 star recipe because it needed a little help. The taste is pretty good. Like a few others, I shredded the chicken. Definitely don't use plain chicken. Also, the spinach layer is too spinachy. I suggest mixing the spinach with the ricotta or something. I had a feeling the ricotta would be too plain, so I mixed in an egg and some s&p and parsley. I just wish I had followed my instinct with the spinach! I used the 2 C Mozzarella in the sauce, and didn't use the other 2 C. The parm & ricotta was enough for the other layers. Pretty tasty, it will probably be better in the morning. OH, and I used NO bake lasagna noodles. That probably saved a lot with the prep time. It didn't seem to take too long. I cooked it for 40 mins covered, and then 10 mins uncovered at 425.

Cheesecake Cookie Cups

Chicken Cordon Bleu II

This recipe is SOOOOOOOOO good! This is my first time ever eating cordon bleu and I am very happy with the outcome. I tried to follow the recipe word from word but somehow I forgot to bread the chicken before placing it into the butter. As a result I let the chicken simmer in the wine for 10 min. then placed it in another pan to broil the top in the oven. Even though it took me a little longer because of my mistake it was worth it. You could not go wrong with this recipe.

Downeast Maine Pumpkin Bread

This is a pretty good pumpkin bread. Very moist, not overly flavored or underflavored. I followed the recipe exactly in regards to the spices. I had no oil, so I melted shortening. I also added about 4 heaping teaspoons of ground flaxseed and put chopped walnuts on the top. It made 2 good sized loaves that needed to be cooked for about 65 minutes.

Black Bottom Cupcakes I

These cupcakes were great! I used Ghirardelli Cocoa power, and only baked for 20 minutes. They came out moist and perfect! I even drizzled a little semi-sweet baker's chocolate on top. We definitely make again and again. :-)

Vegetable Cheese Soup I

I did a few of the suggested tweaks--used a little less celery seed than called for, and added a stalk of chopped celery ('cause I like it) and a head of fresh chopped broccoli ('cause I love it!). The cooking time sounded far too long to me, so I cooked the veggies and broth on high for about 4 hours, then added the queso, creamed corn, and a package of shredded Monterey Jack, which I hadn't planned to add, but the soup was looking thin, and that thickened it up nicely. It was delish. Next time I think I'll leave out the potatoes and put in two heads of broccoli.

Big Soft Ginger Cookies

Like a lot of people, I used orange juice instead of water. Unlike another reviewer, I did NOT have to flatten them. They flattened like pancakes. Maybe it has to do with the altitude... When I did slightly flatten them, they turned out like gingersnaps you would buy at the store. (Only soft) :) If you freeze the dough it makes it VERY easy to handle. They are so delicious! Ok, I have to update this. I made them again. The first time I made them with crisco instead of margarine. They came out flat and chewy. DELICIOUS. The second time, I tried it with margarine and they COMPLETELY stuck to the airbake cookie sheet. Something I've NEVER experienced. BUT they came out puffy and VERY SOFT. (Just broken from scraping them off the sheet) Also, I tried them with the crisco and a little bit of brown sugar because I ran out of white, and they were TOO SWEET. Stick with the white sugar. I put the sugar cookie glaze on them with orange extract, but I definitely think they're better on their own. ALSO, the dough was MUCH more manageable with CRISCO rather than margarine - which to ME, is WORTH it. Hope this helps someone!

Melanie's Beef Barley Soup

This is also terrific made with lamb stock instead of the canned broth. Lamb bones are very cheap and easy to use for making stock, and if the bones are meaty enough, you can use the lamb meat in the soup instead of beef. Lamb and barley go really well together--give it a try!

Braised Balsamic Chicken

TRY THIS!!!! It is SOOOO EASY and it tastes like it's NOT! Just to let you know what also works if you don't have some of the things on hand. I used real garlic cloves instead of garlic salt and sauteed it with the onion. I used 4 bone-in chicken breasts, and put them in the skillet skin down first, to brown them. I turned the chicken back over once I added the other ingredients. I used fresh oregano and rosemary. I also used a can of STEWED TOMATOES instead of diced, which came out DELICIOUS. ( I did NOT drain them) I let this cook while I got ready for work (maybe a half an hour to 45 mins since it had the bone in it), and it came out so good. My husband LOVED it. The balsamic cooked down with the tomatoes to make a GREAT sauce. This is TOO EASY and TOO HEALTHY for you not to try!!!!

Herb Roasted Pork

My husband liked this more than me. The glaze was nice, but I wish I would have cut up the pork or something, so the flavor could get on the inside. I also tried to cut little holes to push some garlic inside the pork.

Favorite Corn Bread
