Shepherd's Pie VI

I used less carrots and added peas and corn. I sauteed onion and garlic before cooking the beef, and I also used beef bullion cubes instead of the broth. (I also added some Worcestershire sauce.) My husband loves this! It was really easy.

Cheesecake Brownies

Pretty easy and a nice way to use boring brownie mix. The cream cheese for some reason wouldn't get smooth but they still turned out well. I might use a smaller dish next time to get a thicker brownie or use less cream cheese because the cheesecake part is pretty thick.

Brooke's Best Bombshell Brownies

If you are looking for a cakey light brownie, THIS IS NOT IT!!!! These are the fudgiest most delicious brownies. I've already made them twice. I didn't have chocolate chips either and they still were DELICIOUS. They are so good warm with ice cream or cold, or with chocolate icing. This is THE perfect brownie recipe. Make sure you sift the cocao, bc the first time I made it, I didn't and it had little pebbles of cocoa throughout the dough. PERFECT brownies.

Garlic Cheddar Chicken

Great, easy recipe. My husband liked it alot. I did cut back on the butter though. Substituded for EVOO instead.l Worked out great. Will surely make it again.

Maple Salmon

This was a very easy recipe for a quick...I just got home what can I make for dinner?? If you have salmon on hand of course. The syrup was not too overpowering. Just PLEASE make sure you use REAL maple syrup. You will not get the same taste with an imitation.

Easy Baked Tilapia

This was an alright recipe. I thought it was a bit too bland. I also recommend cooking the veggies seperate from the fish, the water from the veggies, made the fish watery and took longer to cook.

Chocolate Cherry Merlot Brownies

My husband LOVED these brownies. I am not a big fan of cherries to begin with so I thought they were a bit too tangy for the brownies. They were still good though. Will use this recipe again.

Herb and Chicken Pasta

This was a pretty easy recipe. It did not produce alot of sauce, so the noodles were a little dry. I would use more broth. I would say you could double it, although it maybe a little too spicy then. I was certainly good and I will be using this recipe again.

Mini Cheesecakes

These were so easy and came out perfect. I had never ventured down the cheesecake path before, but this recipe showed me how easy it can be. I used lady fingers as the crust and used normal cupcake size instead of the mini and it all came out delicious. I used mini chocolate chips in half of them too.

Chicken and Dumplings III

This was pretty good. I doubled the broth/soup. I also added yellow summer squash. (I sauteed all the veggies first, and browned the chicken in there and then shredded it. THEN I added all the liquids.) I followed someone else's advice about the dumplings and added some fat free half and half to the dough until it was sticky. They came out LIGHT AND FLUFFY. Unlike someone else's review, I used skim milk and it did NOT curdle. The dumplings came out perfect with the extra liquid to make it sticky. This is my GO TO recipe for the dumplings now!

Blueberry Cream Muffins

Don't get mad at me! I changed the recipe a little bit because I wanted to make it healthier- and I can tell you it worked! I didn't use ANY oil - I used sweetened (it's all I had) applesauce and 1/2 C ground flax seed with 2 tbsp water. I also used LIGHT sour cream. They came out really ugly, and I was afraid they would be really dense. BUT THEY WERE LIGHT AND FLUFFY! Even with the flax seed! They were ugly, but tasted good. My only complaint - maybe I would have added more blueberries. (I used frozen.)
