Chicken and Dumplings III

Reviewed: Mar. 15, 2007
This was really great... I took the advice from people below and added a can of cream of celery soup and increased the milk to 1 1/2 cups. I also added a can of mixed vegetables and a can of sliced mushrooms. Instead of the dumplings in the recipe, I used reduced fat bisquick. This was really fabulous... creamy and very good comfort food.

Awesome Slow Cooker Pot Roast

Reviewed: Mar. 15, 2007
This was excellent. During the last hour of cooking, I added 8 ounces of fresh mushrooms that I quartered, a teaspoon of dried thyme, and a tablespoon of butter and a tablespoon of flour combined so the sauce would thicken up a little. This recipe is delish.

Kentucky Butter Cake

Reviewed: Mar. 15, 2007
My boyfriend likes bundt cakes and things that are very plain, so this recipe fit the bill. This cake is pretty good if you like cake that tastes like butter and not much else. It's moist and good with cold milk.

Cuban Black Beans II

Reviewed: Mar. 3, 2007
I listened to some previous advice about using canned beans, which helped tremendously. Instead I used 2 cans of black beans and reduced the water to 15 ounces (tomato paste can filled two and a half times) and they turned out fantastic! We served the beans over a cilantro rice with ropa vieja and it was a perfect dinner.

White Chili I

Reviewed: Mar. 1, 2007
I think the title to this recipe is slightly misleading. Chili conjures up visions of something that's thick and stew-like which this definately isn't if you make it as written. While this recipe is really good, it's a soup more than anything. Because I wanted to make something more "chili" like, I made a few changes. Instead of cubed chicken, I used ground turkey. I used two 4 ounce cans of green chilis to add more flavor without adding heat. I also got two cans of beans and pureed 1/2 of 1 can. I definately didn't rinse or drain them. Also, I added the beans along with all of the other ingrediants and simmered it for 45 minutes. The result was still a little thin but it was much more like chili. Next time I will puree an entire can of beans and leave 1 can whole. All in all it was a good recipe. It made about 6 decent sized servings and between 4 people, there was nothing left.

Delicious Ham and Potato Soup

Reviewed: Jan. 21, 2007
Thanks for sharing this quick and truly delicious recipe! This is one of my families favorites. The only modification I made was replaced the onion for diced carrots and used onion powder for the onion flavor.(don't like to bite into onions) Followed everything else per the recipe and have made it twice. Both times came out fantastic!

Creamed Spinach II

Reviewed: Dec. 21, 2006
Wow... this was delicious. Plus it's much healthier than your normal creamed spinach recipe and it's easier too. I did follow the advice of the reviewers before me and sauteed an onion and some garlic in a little bit of butter before adding the cream of mushroom soup and spinach. It was delicious. Between 3 of us, there was nothing left. I even used 98% fat free cream of mushroom soup.

Chris' Bay Area Burger

Reviewed: Nov. 28, 2006
These turned out really good. Not your typical boring hamburgers. I mixed the seasoning into the burgers and let it sit for about 30 minutes before grilling. Then we topped them with sauteed onions and melted provolone cheese. There wasn't anything left.

German Potato Pancakes

These turn out great. They're very plain which is how they should be. Make sure you get them really really thin so that they cook quickly. Otherwise it might take about 10 minutes per side. We served them with sour cream.

Pear Bread II

Reviewed: Nov. 20, 2006
This was a wonderful bread! Thanks for sharing it. I hate when people say "oh I made this change and that," but the fact is we all modify recipes to our own tastes and nutritional requirements, so with that said, I changed this recipe a bit to fit my needs.I used Splenda indstead of sugar(cup for cup) but also added 1/4 more of oil, another egg, 1/2 c. apple sauce, 2 bananas (I always have them lying around), 1 c. milk powder to boost protien content and bulk up the Splenda, and 1 tsp. baking powder. I omitted the nuts, but that is a personal preference.

Manhattan Meatballs

Reviewed: Nov. 9, 2006
These were pretty yummy. I made them and cooked them in the oven for 25 minutes on cookie sheets. Then I added them to a slow cooker with the preserves and bbq sauce on low for 2 hours. They turned out great. Next time I might add about 3/4ths of a cup of water so the sauce isn't so thick.

Quick and Easy Chicken Noodle Soup

Reviewed: Oct. 29, 2006
I was really impressed with this very easy and comforting soup. It tasted like I had been cooking it all day, when in fact I was tired from picking pumpkins at our local farm that day! A few things I changed simply for personal preference. I doubled the celery and used a little bit more butter to saute the carrots and celery together. Omitted the onions but used onion powder in it's place along with a little garlic powder. I used a 15oz. box of low sodium chicken broth (all I had on hand) and used 3/4 of a rotissere chicken. This is my new favorite chicken noodle soup and I got a "better than my Jewish mother's" from my hubby!

Baked Ziti IV

This was pretty good... a little on the bland side. If you're in the mood for mostly pasta, sauce and cheese, then this is what you're looking for. If you like more bounce on your tongue, you might want to add some extra seasonings that your family likes.

Semmelknoedel (Bread Dumplings)

Reviewed: Oct. 12, 2006
I tried this last night and the first batch came out terribly. Even though the test ball stayed together, the rest of them completely fell apart and I had to throw out the entire batch. I addded half a cup of bread crumbs to the remaining mixture and tried again using low low heat. They stayed together for the most part and people ate them but I don't think I'd make them again.

Tangy Ginger Dip

Reviewed: Oct. 5, 2006
Last night I made this to serve with chicken pot stickers. Since I also made Green Thai Curry, I left out the hot sauce so I didn't have too many hot things on one menu. I also used Hellman's mayo. The sauce is fabulous. People were practically licking it out of the bowls.

Homesteader Cornbread

Reviewed: Sep. 28, 2006
This recipe turned out awesome. I didn't change a single thing. It was moist and fluffy... fluffier than any cornbread I've made before. I took it to a dinner party and professional chefs complimented how good it was. I think next time I'll add some jalapenos or green chilies and cheese and serve it with chili. Awesome.

Dijon-Tarragon Cream Chicken

Reviewed: Sep. 25, 2006
This recipe is excellent. Like one of the people below, I made the following changes. I rubbed the chicken with some mustard and let it hang out in the fridge for awhile. Then floured the chicken and fried it on the stove and then set it aside. Then I deglazed the pan with a little wine and cooked some garlic, onions and mushrooms until they were almost done. I added the cream, mustard and tarragon and cooked that for five minutes before pouring the mixtured over the chicken and serving. Everyone thought it was excellent. I will definately make this again.

Stuffed French Toast II

Reviewed: Sep. 9, 2006
This recipe had a very fun flavor that my husband and I enjoyed very much. I did change it a little, instead of making it like a sandwhich I used Texas Toast, sliced a pocket into it and filled it using a sandwhich baggie with the corner cut off. Just perfect!
