Ethiopian Cabbage Dish

Reviewed: Oct. 3, 2009
We truly enjoyed this dish. We eat cabbage quite often and it was a nice change to how I normally cook it. Plus, you can add/subtract spices per personal tastes very easily so depending on what we are eating it with determines how much/little we add.

They are delicious, but you definitely have to make sure not to eat too many! I used them to make ice cream sandwhiches and they were fantastic, so thank you for the recipe!

Butternut Squash with Onions and Pecans

Reviewed: Oct. 3, 2009
Sorry, but there was too much onion in this to make it enjoyable, and I love onions! The butternut does not have a strong enough flavor to hold against an entire onion; perhaps, if less was used this would taste better but I'm not using another 40 minutes of my life to find out. Thanks for the interesting side dish though, always worth a try once :)

Refried Beans Without the Refry

Reviewed: Sep. 13, 2009
These are fantastic! The best part was that all you have to do is put them in the crock pot and walk away, can't be easier! I did use all black beans, because that was all I had on hand and it worked perfectly. Can't wait to try this with pinto beans :)

The overall flavor was pretty good, but wasn't quite what I was hoping. Still, it was enjoyed by all so thank you!

Creamy Rice Pudding

Reviewed: Sep. 13, 2009
The only reason that I'm giving this four stars instead of five is that there is far too many raisins! Next time I'll cut back to 1/3 cup and try that, otherwise I won't change a thing. Also, the consistency of this pudding was perfect (and I did use skim milk, I just let it simmer for 20 minutes like the recipe instructed). Thanks for the great recipe!

French Fried Potatoes

Reviewed: Sep. 2, 2009
Not being able to eat french fries at most restaurants because they are either coated in flour or cooked in the same grease as other breaded things, I have been searching for a way to make crispy fries at home. This is it! I am so happy to finally be able to enjoy fries every once in a while again! Thank you for the recipe, I'll be sharing it with my whole family.

Grilled Bacon Jalapeno Wraps

Reviewed: Aug. 20, 2009
The way this recipe is written, it lacks enough flavor for us (hence the 3 star review). However, I made some changes that seriously made this one of the best jalapeno popper recipe of all time. I used about 4 ounces cream cheese and 4 ounces finely shredded Mexican cheese blend. Then I added 1/2 tsp seasoned salt, 1/2 tsp dried parsley, 1/4 tsp garlic powder, 1/4 tsp onion powder, and a dash of thyme. I froze them for about 20 minutes prior to grilling them on high for about 4-5 minutes on each side. They were delicious. We sat there and stuffed ourselves even after we were full because we couldn't stop eating them.

Rosemary Ranch Chicken Kabobs

Reviewed: Jul. 29, 2009
This has become my household's favorite go-to meal! I love that the chicken is always moist, and you can adjust the rosemary to your particular tastes. Thanks for sharing! Just one caution: If using wooden skewers, soak them for at least 30 minutes so they don't burn up on the grill!

Grecian Green Beans in Tomato Sauce

Reviewed: Jun. 26, 2009
This was great! I only used about 2 teaspoons of olive oil to saute the onion in. The amount called for in the recipe was just way too much. Then instead of water, I used chicken broth. I also probably used 1/4 more liquid than the recipe called for. Instead of tomato paste and canned tomatoes, I used two vine-ripened tomatoes. This recipe was delicious. It tasted just like what they serve at a local Greek restaurant. I'll definately make it again.

Makhani Chicken (Indian Butter Chicken)

Reviewed: Jun. 14, 2009
Sorry, but I wasn't very impressed with this dish. Too much tomato made the sauce very sour. Additionally, for the flavor that I got out of this dish, there are too many ingredients and too much time to put it all together. Marinading the chicken in the yogurt mixture didn't really add anything spectacular at all either. All-in-all too much effort and too many ingredients made a sour meal.

Curried Coconut Chicken

This was a simple, quick, and delicious recipe! My husband had two servings, which rarely happens, so I would give this a six if I could. The only drawback is that our entire condo is consumed in curry smell . . . hope the neighbors don't mind! Thank you again.

Mexican Rice III

Reviewed: May 5, 2009
I made this for a company dinner and everyone couldn't stop talking about it. The only thing I did differently was use jasmine brown rice and I omitted the jalapeno because no one wanted spicy food. My Mother keeps raving about it a week later. Definately delicious.

Beer Lime Grilled Chicken

Reviewed: May 5, 2009
I followed this recipe exactly and it came out very good. The chicken smelled divine while it was cooking but the taste wasn't overpowering when you actually ate it. In the future, I wouldn't marinate it longer than about 30 minutes because I think the lime juice makes it a little tougher. I also think I'll double the honey and zest a lime into the marinade.

Avocado Tomato Salad

Reviewed: May 5, 2009
This is absolutely delicious. I served this alongside the Beer Lime Grilled Chicken and Mexican Rice. It was the perfect compliment. It was very refreshing. When all of the salad was gone, people were still using the leftover liquid in the bottom on top of the chicken since it tasted so great! The only thing I did differently was not use any of the greens that it called for.

Spicy Chicken Breasts

Reviewed: Mar. 15, 2009
This was absolutely wonderful! First, I flattened my chicken breasts, added the rub, grilled them up and let them cool down. Once cool, I cut them into strips and ate them alongside "Minty Orzo Lentil and Feta Salad" and it made the perfect picnic combo, and leftovers for lunch at work. Great recipe Barbara!
