Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Nov. 2, 2008
While I really liked these pancakes, my husband wasn't impressed. I think it's because they are very dense. I will make them again, but next time I'll make a fresh blueberry syrup to top them off.

I've tried quite a few sweet potato casserole recipes & this one is, by far, the best. Another keeper for my holiday menus.

Cherry Ham Glaze

Reviewed: Nov. 2, 2008
A definite keeper! I once bought a ham w/ a packet of cherry glaze,; while it was very good, it wasn't nearly as good as this glaze. I think it's the actual cherries that make the difference This is going to be a Christmas staple in my family for years to come.

Pork Chops for the Slow Cooker

Reviewed: Nov. 2, 2008
I'm giving this 4 stars only because, for some reason, the chops were tender but dry. Next time I'm going to only slow cook it for half of the time & see what happens.

Lemon Garlic Tilapia

Reviewed: Nov. 2, 2008
I was expecting something a bit more flavorful when I read the ingredients. Next time I make this, I'll do it with salmon to see if it turns out better. I think I will take the suggestions of another reviewer & saute the garlic first. The butter sauce was very tasty when mixed with rice pilaf. lol

Cajun Dirty Rice

Reviewed: Nov. 2, 2008
This is NOT Dirty Rice; it's more of a Red Beans & Rice dish. Dirty Rice doesn't have beans in it. With that being said, we liked this dish. I will make it again.

Fried Rice I

Reviewed: Nov. 2, 2008
I followed the recipe exactly as it was written, but it didn't turn out right. It was very sticky & gummy; strange, I know. The flavor was good, but the consistency left much to be desired.

Chicken Tetrazzini IV

Reviewed: Oct. 29, 2008
This recipe was went over well with my whole family. Even my pickiest eater cleaned her plate. Before making this i read many of the reviews so i made a few modifications. I doubled the amount of sauce and added about half a cup of an Italian cheese blend to it. I used fresh mushrooms which i sauteed with 2 cloves of minced garlic. And i used a 13 ounce box of spaghetti. I ended up with extra white sauce, which will be great for keeping re-heated leftovers from being to dry.

Zippy Beef Bake

Reviewed: Oct. 27, 2008
LOVED IT!!!!! This was a great go to on a night we had football and soccer practice. I used ground turkey, as that was all I had. I love pepperjack cheese so I used that instead and I put extra in. I also used the steam in a bag rice you find in the frozen section. This saved alot of time. The family loved it. This was a very QUICK and Tastey meal. I'll be making this on a regular basis.

Slow Cooker Chicken Stroganoff

Reviewed: Oct. 26, 2008
I made this the original way the first time and LOVED IT!!!!! Tonight I only have ground turkey and rice. I'm gonna throw in a can of diced green chiles at the end, just for a little zip. I'll let you know how it turns out. It turned out GREAT!!!! I just put the ground turkey mixture over white rice. I served steamed veggies on the side. All 3 of my kids ate it. FYI...I always use light cream cheese, and low fat chicken soup, it does not change the taste. Thanks for a great go to dinner.

Turkey Cabbage Rolls

Reviewed: Oct. 12, 2008
Fabulous! I complimented the recipe with oregano, garlic and other italian spices to taste... used all tomato sauce and no paste and an absolute must to add mozzarella in the mix; not much but a touch will help the rolls say together after baking. I also blanched the cabbage to help leaves separate. Any mix of ground meats will work. A new favorite for the 3,7,10 and 45 yr old kids in my house! Superb!!

Creamy Carrot Soup

Reviewed: Oct. 6, 2008
Oh, my goodness! This soup is DELICIOUS! I used "crystallized" ginger instead of powdered, bouillon cubes instead of broth, fresh basil instead of Rosemary (didn't have any) and 2% Evaporated Milk instead of Heavy Cream (which would have been my preference, but we're trying to "diet"). I also topped each bowl with some crusty bread and a thick slice of PepperJack cheese (any "hard" cheese would work equally well). We're a family of 5, and there wasn't a drop left. NOTE: next time I make it (and there WILL be a "next time"), I think I'll include some sliced up turkey sausage or kielbasa and serve it over pre-cooked rice or barley. What a meal THAT will be!

Easy Four Cheese Lasagna

Reviewed: Oct. 6, 2008
Not too bad...could use a little bit more of a kick though. Still tastes good but you should definitly get 2 cans of tomato sauce. I would also recommend adding a little bit of cumin to the sauce to make it taste less basic. Overall, not too bad.

Super Easy Chicken Chili

Reviewed: Oct. 5, 2008
Very very very good!!! This was the first chicken chili I had ever made and I followed the recipie almost exactly (except I didn't use that much onion since my family isn't too fond of them) and it was a total hit!!! My family did say it was a little bit spicy, but they have really sensitive toungues....I thought it was AMAZING....and I will definitly be making this again!!!!!

Old World Escarole and Beans

Reviewed: Oct. 4, 2008
My grandmother used to make this (using any kind of pork she happened to have on hand, or meatless) all of the time and -- specifically because escarole is too bitter for my taste -- I never liked it and have always "adapted" her recipe by substituting spinach for it. But my husband likes escarole (he orders it every time we go to dinner at a local Italian restaurant), so the other day when escarole was on sale for $0.79 per pound and a bag of spinach was selling for $2.99, I thought I'd give him a thrill. I par-cooked 3 boneless pork chops (instead of the bacon) in a little bit of butter and a splash of olive oil, added a handful of baby carrots and a T. of granulated sugar to my pot and cooked everything together for 45 minutes. My husband loved it, and promised that if I would make this for him at least "sometimes", he'd never ever again spend $6.95 for a bowl of escarole soup (sounds like a plan). As for me? I still don't like escarole, but prepared this way, I had to begrudgingly admit that it was at least "quite edible".

Cream of Celery Soup

Reviewed: Oct. 4, 2008
I've been trying desperately -- for both nutritional and economic considerations -- to all but eliminate meat from my family's diet. And especially because this soup used all of the same ingredients I've always used when making my "meaty" soups (celery, carrots, onions, pepper, flavored stock, butter flour, etc.) I thought I'd try it. And I'm glad I did. I scaled the recipe to 10 and added a potato (as a thickener). After about 45 minutes, I pureed all of the vegetables. Even with the added potato, the soup was a bit thinner than we would have liked, so I lined all of our bowls with some PepperJack cheese, added a couple of crackers to mine and served my husband's and grown son's over some leftover Barley. Once we adjusted to "all that celery" (but, then again, isn't celery what a cream of celery soup is supposed to taste like?), we all agreed that if this is what it's going to be like being a vegetarian, it's OK by us. (PS: I made half the recipe in my soup pot for "immediate consumption" and tossed the rest of the ingredients into my CrockPot. BY REQUEST, I will be filling all lunch thermoses with this soup and serving it again tomorrow night. Now, THAT's a 5!)

Chicken and Broccoli Alfredo

Reviewed: Sep. 23, 2008
I have a large family (often 6 adults, one of whom is eating for 2 :)), so I make "Something Alfredo" (chicken, turkey, ham steak, shrimp, scallops, etc.) and "Something Tetrazzini" pretty often. I saw this recipe and thought I would try it -- as written -- if only to see how it stacked up to my own. And it was good (which is why I gave it a 4). But it was good in the way, for instance, that my daughter, a new cook and soon to be new Mom would appreciate better than I. I printed this recipe for her. I'm going to keep making "mine" my way.
