Beef and Irish Stout Stew

Reviewed: Mar. 1, 2008
I researched other recipes because I like this base and the flavors added guarantees an amazing turn out, and super easy! I added the following ingredients: 3 red potatoes diced, 1 celery stalk sliced, 6 oz tomato paste, 2 cloves garlic, 2 bay leaves, paprika, 1/4 cup brown sugar, 1 tablespoon worcestershire sauces, 1 cup organic beef stock, 4 slices bacon and a crock pot. You'll want to warm your crock pot before putting the stew in it. Take 1/3 cup flour (omit the 3 tablespoons vegetable oil) and place in gallon bag with meat, shake to coat and set aside. Cut bacon up and fry in pan with mix of butter and oil (1 tablespoon each). Remove bacon, save bacon fat in pan. Add meat and brown, add onions and saute with meat. Move meat, bacon and onions to crock pot. Deglaze hot pan with 1 can Guinness, 1 cup beef stock, and 1 tablespoon worcestershire sauce, add to crock pot. Add all other ingredients and cook on low for 8-10 hours. Check the liquid level, I had to add a total of 2 more cups beef stock while it was stewing. The kicker, serve over Champ (mashed potatoes and green onions), and Irish soda bread (with raisins) to soak up the stew left in the bowl, there's no other way to get the full flavor! Enjoy!

I made this for my mom's vineyard themed birthday, she absolutely loved it! I think I'll try chocolate with red rasberry dessert wine next time.

Smushed Apples and Sweet Potatoes

Reviewed: Jan. 22, 2008
Yummy and healthy! To take it one step further, I peeled the apples and diced them and added 1/3 cup applesauce to the apple/sugar mixture. Once everything was put together in a casserole dish, I sprinkled a packet of Maple Brown Sugar instant oatmeal on top. I sprinkled cinnamon on top of that and covered the top in little pieces of butter. I baked it in the oven at 375 for 1 hour and oh my it was delicious!

Oatmeal Peanut Butter Cookies

Reviewed: Dec. 13, 2007
YUM! I followed what ZJSGRAM did for the recipe and they were amazing! Instead of using chocolate chips I used Hershey Kisses. I unwrapped the kisses beforehand, and let them cool in the fridge. Once the cookies came out of the oven I immediatedly pressed a kiss into each cookie and let them set. Make sure you give the chocolate time to settle so don't start stacking the cookies on top of eachother too soon or you'll have a chocolate mess! I also used a melon scoop for the dough to make them the same size. Great recipe!

Easy Apple Crisp

Reviewed: Dec. 11, 2007
My whole family loved this recipe! It's so easy to make and it makes your house smell so good! Note, any apple tastes great with the dish, but definitely use white cake mix, no other cake mix will taste as good! I've been told to make 3 batches of this for our Christmas party, enjoy!

Whipped Sweet Potato Casserole

Reviewed: Dec. 4, 2007
Yum! I made this recipe for two as an after dinner treat. Instead of marshmellows (watching my waistline) I ground up a 1/3 cup mix of peanuts: macadamea, pecan, almond and mixed in just a little bit of honey. It gave it a nice crunchy texture and the honey gave it a different kind of sweetness that was not too sweet. I also mixed cinnamon in and didn't use as much nutmeg. Great easy recipe!

Powdered Sugar Cookies I

Reviewed: Nov. 17, 2007
These make the best Christmas cookies! My Great-Grandma had a similar recipe. Our tradition is to roll teaspoon size dough in sugar and cinnamon and stamp the cookies with the bottom of a slightly floured crystal glass before putting them in the oven. They look like snowflakes and mom uses Great Grandma's crystal glass every Christmas.
