Cuban Midnight Sandwich

REALLY GOOD!!! I will definitely make this again! I used rye bread since we had it around. About the fat content, if you follow the recipe as it says it will certainly have a lot of fat. 1/4 cup of mayo for each sandwich, olive oil, cheese, and the meats all are very fatty. I tried to lighten it up. I used a smart balance spread instead of olive oil, used light mayo and mustard as a spread, and went easy on the meat and cheese. I didn't feel like it was missing anything!!

Hot Fudge Ice Cream Bar Dessert

My boyfriend and his friends love chocolate and peanut butter so this dessert was a big hit. I thought it had a burnt taste to it since I wasn't paying attention when melting the chocolate, but nobody else seemed to notice !

Beef and Bean Chimichangas

I L-O-V-E these! I made homemade refried beans for them. It takes a little extra time but it is so worth it. I also made a full batch despite that fact that it is only my roommate and I. They made some awesome leftovers. Will definitely make them again!

German Apple Pancake

I made this on Christmas morning. My Mom and Dad liked it, but I thought it was way too eggy (I used 3XL eggs). The apples were good though. I agree with the post that said this is more of a custard than a pancake. Probably won't make this again unless Mom & Dad ask for it.

Best Chocolate Chip Cookies

These are the best chocolate chip cookies EVER. At first, I was always tempted to leave them in longer than 10 minutes but then realized that they maintain their perfect chewy-ness at exactly 10 minutes in my oven. I use a mixture of peanut butter and chocolate chips and everyone always loves these (including me!)

No-Bake Mile-High Banana Split Pie

My boyfriend really enjoyed a Banana Split Pie my friend made with custard and meringue. I'm not a big fan of either so when I found this recipe I thought it sounded delicious. I used an icecream scoop to put semi-frozen cool whip scoops on top instead of peakes. I put the pie in the freezer until it was ready to serve so the cool whip would keep its shape. I definately recommend this recipe because it's not too much work for a great looking and tasting dish!

Zucchini Bread IV

Yum! I took these to work and everyone asked for the recipe! I used 1/2 applesauce and 1/2 oil, a little less sugar, and substituted some wheat flour for part of the white flour to make it a little more nutritious, but even with "healthy" substitutions it still tasted fantastic! You could also add another cup of zucchini if you have a bunch that you want to get rid of.

Lower Fat Banana Bread I

This is my "secret recipe"...everyone says I make the best banana bread and this is it! I usually add some chopped walnuts and reduce the sugar a little bit, but it is still delicious as written. Extra good if you make it a day ahead of time, wrap it up in foil, and let it sit overnight...makes the edges really moist.

Oatmeal Whole Wheat Quick Bread

I don't know if the weather affects this type of bread or not, but my "loaf" or rather blob on a cookie sheet was more of a brick. I ground the oatmeal in a chopper/procesor nearly into a powder. I would love some better instructions to lighten up the loaf! I will say that the flavor is EXCELLENT!

Louisiana Sweet Potato Pancakes

I really enjoyed this recipe. I omitted the butter, used whole wheat flour, used 1/2 cup oats in place of 1/2 cup flour, and added about a 1/2 tsp each of cinnamon and vanilla. I put the batter in the fridge over night and added a little extra milk in the morning. The first batch I made tasted doughy in the middle so the next batch I took the back of a spoon and spread out the batter. Very good!

Mixed Fruit Crisp

this turned out decent...The choice of using cortland apples for this was a bad one on my part. Granny smith's would have been much better!! I'd suggest making sure the bananas are layered deep within the crisp as well...they taste funny when they dry out a bit and then are mixed with everything else. With some tweaking, this could be fabulous!

White Chocolate-Cranberry Biscotti

mmm. these were devine! doubled the recipe and made thoughtful, homemade christmas gifts for my aunts! Piled high in a nice, clear cookie jar and paired with some gormet or homemade hot cocoa mix, and it became a treat-turned-gift that everyone was impressed by. Fantastic recipe for biscotti!

Quick Hoppin' John Soup

this was absolutely fantastic!! really filling and flavorful! I, like many other reviewers, opted for spicy italian sausage and also added both onions and celery to the mix, which really added a lot of taste and body to the soup. The spicy sausage with this recipe is just a perfect pairing; I'd highly suggest it! And also, Uncle Ben's has a quick long-grain & wild rice that comes in a box w/ seasoning and it's really inexpensive...I noticed people saying they couldn't find this rice with the seasoning, but I'm just telling you all- it's out there!!

Upside-Down Peach Muffins

this was a great twist on the standard muffin. the bottoms make these tasty treats tops!! Also, I'd definitely recommend using fresh peaches, not canned. i used canned and the peach slices kind of slid out of their places when turning out of the muffin tin. I think the fresh peaches would have held their form more while cooking, especially if arranged so they're vertical in the muffin tin, not horizontal.

Oatmeal Peanut Butter Cookies III

Absolutely amazing! I add mini chocolate chips to the cookie and use milk instead of cream for the filling. Be sure not to overbake...I do med size cookies for 8 minutes. Everyone always asks for the recipe!
