Best Cream Of Broccoli Soup

Chicken Pasta Primavera

After one substitution and a streamlining of cooking direction steps, my family gives this five stars! I substituted a can of Italian Stewed Tomatoes for the diced tomatoes w/green chile peppers. To streamline the process while giving the chicken more flavor AND cut some of the fat, I sauteed the chicken chunks with the peppers and fresh garlic in 2 T olive & 2 T butter. *I still used the garlic powder as well during this process to ensure there was enough seasoning. Once the chicken was cooked through and the peppers tender, I added the two cans of tomatoes and the herbs (heaping 1/2 tsp of each of the three herbs) and let the mixture simmer while I boiled the water and cooked the pasta. This process seemed to have eliminated the comments of bland-tasting chicken and gave a more flavorful sauce. Very tasty, not too heavy and delicious leftover!

Tasty Baked Meatballs

Oh my gosh these are sooo yummy. I didn't have onion soup mix so I just used diced onion and 2 tbps of italian seasoning. Also used 2 egg whites and 1 egg. I will definitely be making these again soon.

Filet Mignon with Rich Balsamic Glaze

This was quick and easy, but I think the steaks I had were bigger they came out medium rare, which is to my liking not everyones! I am reducing the sauce a big more right now to pour over the other steak and eat as another meal.

Penne with Pancetta and Mushrooms

Wonderful, simple flavor and easy! Only made a couple "measurement" revisions to original recipe: I used only 11 ounces of Penne as I like to make sure my pasta is not dry. I used a good heaping tablespoon of garlic as we like it, and I doubled the amount of Italian seasoning since it was the only other seasoning. I mixed the Parmesan cheese into the pasta mixture at the end so that it would blend with the sauce. Delicious! Everyone, including picky 5-year old, loved it. Will definitely make again.

Comforting Cube Steaks

Very tasty with some minor modifications, and mine turned out, yes, fork-tender when I prepared them the following way: I lightly pounded the steaks on each side with a hammer tenderizer (spikey side), sprinkled both sides with pepper and liberally with Cajun seasoning and garlic powder (NEED to do this - this is the only real seasoning other than the onion soup unless you prefer things more on the bland side). In a large non-stick skillet, I lightly browned each side of the steaks in about 1 tablespoon of olive oil. I mixed together the can of Sprite (we did not detect any "sweet" after taste), 2 cans of mushroom soup, and envelope of dry onion soup mix, then I poured the sauce mixture over the cube steaks after browning; brought up to a boil, then turned down to simmer and covered the pan. I let the steaks simmer for about 2 hours - fabulous! Even our picky 5 year old who usually fusses about chewy beef liked them, and the sauce is delicious served over rice. This stove top method seems to work well for us - quicker and better than the slow cooker.

Pizza Casserole

This was a very tasty, easy recipe to make. However, I did make a few adjustments to "rev." up the flavor a bit to our liking and preferences: I used rotini noodles in lieu of the egg noodles (they clump less); I used 1/2 pound hot Italian sausage in lieu of the ground beef; I used four cloves of garlic; I omitted the bell pepper (we don't get it on our pizzas); I sliced the pepperoni pieces in half for better blending in the casserole and used Turkey pepperoni to cut the fat; I used almost 3/4 of a 32 ounce jar of pizza sauce (I don't like my pasta casseroles dry); and probably closer to 6 oz. of shredded Italian cheese blend in lieu of mozzarella. It was yummy! Will definitely make again!

Cazuela de Vaca (Beef and Pumpkin Stew)

I tried this receipe for my in laws who are Chilean and just flew in from South America on night. I was sadden that the cazuela/pumpkin turned out dry. I would use butternut squash or acorn squash next time. My mother who made this dish back in the old country recommended trying it with butternut squash. You can also use this receipe with chicken instead of beef if you like. My father in law wanted to add Cumin since it was missing just a tad flavor. Overall it is a nice basic soup and I followed the receipe 100% as written. I was hoping to impress but instead got a cooking lesson at dinner.

Linguine with Chicken and Sauteed Vegetables

YUM..YUM..YUM.. Ok this one just plain made me curious. I followed the driections with just a little change. I used more soy than called for. I acutally forgot the broccoli at the end. It did not make a difference. This was a great dish for a quick healthy dinner. I think I may just make this as a vegeterian dish next time and add even more cabbage. Either way it is a definite KEEPER!!!!

Unbelievably Easy and Delicious Vegetarian Chili

I wish I could give this one more stars. I was curious about the ingredients and made this. I did put ground turkey in and I used 2 cans of chili beans as I love them. What a wonderfully easy way to make chili and very tasty. I used the left overs to make nachos. I used baked chips and 2% Mexican cheese. What a great, lo-cal, lo-fat appetizer. Thank you for a keeper.

Gooey Butter Cake III

Ground Turkey Casserole

This was very good. I also followed the lead of others and put a diced onion in with the turkey while browning it. I used a little salt and lemon pepper. I only had extra large elbow macaroni and used Hunts spaghetti sauce, intstead of plain tomato sauce.I mixed everything together and topped with the shredded cheese. The flavor was great, it turned out delicious!!!!!! I made a huge pan of it and I'm looking forward to my left overs tomorrow.

Zippy Beef Bake

LOVED IT!!!!! This was a great go to on a night we had football and soccer practice. I used ground turkey, as that was all I had. I love pepperjack cheese so I used that instead and I put extra in. I also used the steam in a bag rice you find in the frozen section. This saved alot of time. The family loved it. This was a very QUICK and Tastey meal. I'll be making this on a regular basis.

Slow Cooker Chicken Stroganoff

I made this the original way the first time and LOVED IT!!!!! Tonight I only have ground turkey and rice. I'm gonna throw in a can of diced green chiles at the end, just for a little zip. I'll let you know how it turns out. It turned out GREAT!!!! I just put the ground turkey mixture over white rice. I served steamed veggies on the side. All 3 of my kids ate it. FYI...I always use light cream cheese, and low fat chicken soup, it does not change the taste. Thanks for a great go to dinner.

Penne with Spicy Vodka Tomato Cream Sauce

This is quite yummy, but I like the Penne w/ Vodka Sauce recipe from this site a bit better. I added 4oz of pancetta in with sweet turkey sausage. Also, I put the vodka in at the same time I added the garlic and red pepper (upped it to 1/4 cup). Finally I used fat free half and half instead of cream. Made the recipe MUCH healthier and thought the taste was still very good.

We Be Jammin' Jamaican Banana Bread

I've made this recipe before - it is the same exact "Jamaican Banana Bread" recipe I got from "Cooking Light" magazine years ago. Though it has a lot of ingredients, it is very good and different from the usual banana bread recipes.
