Shrimp Scampi Bake

Absolutely delicious!! I followed the recipe exactly except I had to use dry parsley because I did not have fresh and I didn't cook the shrimp nearly as long. My shrimp were done in about nine minutes. Served with alfredo noodles.

Jay's Hearty Breakfast Skillet

This is fabulous! Since it is a "skillet" and not a "scramble" I opted to follow the recipe as stated and I made fried eggs, over medium for me and over medium well for hubby. It was gorgeous plated and oh so yummy! 5 stars! Thanks for sharing!

Slow Cooker Pulled Pork

This was good and SO easy! I used Big AL's BBQ sauce from the site (my go to sauce) and it was a great addition. Being from NC and with an abundance of great BBQ I couldn't give it the best, but it was good and definitely worth a crock pot day! Thanks for the rootbeer inspiration.

Coconut Pecan Frosting I

I am a die hard coconut hater from way back and I can barely tolerate pecans but this frosting is excellent. I used it on Dark Chocolate Cake II from Allrecipes. I usually tweak a recipe a little but this I made exactly as directed and it turn out great. This recipe has earned a permenant spot in my collection.

Peanut Butter Kiss Cookies

These were delicious and are gluten free! (Big Bonus!) I followed the "most helpful" review to use 1/3 brown, 1/3 white, 1/3 powdered... Perfection! The only thing I would add is to blend the sugar and peanut butter, then add the egg, and let stand about 5 mins. Blend again and roll! Perfect!!

Brazilian Cheese Bread (Pao de Queijo)

My hubby, who is gluten free, was so excited when I made these for him. He really loved them, even reheated. I used the garlic, because we love it, and I also used Italian Blend cheese (because it is what I had). Again, he loved them and they were for him.... 5 stars! Thanks for sharing!!

Warm Crab Parmesan Dip

Iced Pumpkin Cookies

I made these to use up the remaining fresh pumpkin that I had on hand. I have made so many pumpkin(ish) things this fall so far. These were good, even though I didn't use the the "drizzle". I did add some white chocolate chips and Reeses baking pieces. I added them (just pressed them in) before baking. Yum! Next time, I want to try the drizzle, as it also sounds yummy. My way was great too!

Spiced Pumpkin Fudge

This is soooo creamy and delicious. The only thing that I done differently was to use fresh pumpking and walnuts instead of pecans (only because that is what I had on hand). OMG! I will definitely be making this again this holiday season.

Chicken Enchilada Soup I

We really enjoyed this soup. Based on our own tastes I added 1 can of corn (drained), I can of Rotel (drained; instead of chopped tomato). I only used the red enchilada sauce and five corn tortillas. Black beans would be good too, but hubby is not a big bean fan so I didn't add them. I used Taco Seasoning I from the site for the season and used 2 tbsp. Perfect!

Cheesy Ranch Potato Bake

The only thing I did differently was to use less ranch because we didn't want it swimming in it. I stirred after adding the ranch (probably half the amount called for) and added the cheese and then added a "squirt" of ranch allover the top. Yummy dish! Definite "comfort food"! Thanks for sharing!!

This was good. I took another reviewers suggestion and added torn up corn tortillas instead of masa harnia, so that my soup would be gluten free. The cook complete down and worked wonderful as suggested. Thanks for that suggestion. Perfect!
