Crispy Potato Pancakes

Wow... this is delicious! I/we loved it. I didn't have any garlic powder so I used two cloves of garlic... yum. I also used virgin coconut oil for health reasons.

Tried and true recipe. My mother gave me this recipe a couple of years ago, I found it on here, too. Every time they turn out wonderful. Thank you!

Buttermilk Pancakes II

Reviewed: Oct. 30, 2007
Made a half batch of this recipe (Used 2 eggs) and they came out great! This is really a whisk opportunity as opposed to the instructed "using a wooden spoon or fork to blend". I don't know about over stirring but the whisk gets the batter nice and smooth with very few lumps. I know everyone loves their short stack but I prefer silver dollars for ease and convenience. These actually cooked faster than my usual dry mix and I was pretty busy poring and flipping. I might try a lower heat next time (was just under medium). Just remember bursting bubbles is your pancake's way of saying "Flip me!"

Mulligatawny Soup I

Reviewed: Oct. 24, 2007
I've made this soup twice so far, and am just now getting the opportunity to review it. The taste is wonderfully divine. I've been increasing my cooking skills in Indian cuisine more lately, and had to try this recipe. I must say, this is a bit Americanized compared to others, but the taste does not reveal that one bit, it seems! My husband loved it ( and that says a lot when he tells you over and over ) :D He does not like cooked apples either, so I would suggest grating the apple if you add it. I omitted the second time, and my husband told me to leave the recipe like it is. I did not feel the need to add the cream. However, I feel that coconut milk would be a wonderful addition to it instead of cream or half and half... Much Healthier, too!!! Good monounsaturated fats are always the way to go. Thank you for this awesome recipe. This will not be made around the house at least several times a month. ;D UPDATE: 3/19/09 -- I STILL LOVE THIS SOUP! And so does my husband. :D I can never go wrong with soup. I always add more carrots than what it calls for, though. :D YUM, YUM! :)

I made this to go on a brown sugar pound cake. It was perfect. I did increase the vanilla to 2 tsp to suit my tastebuds and it was so good. Great recipe that I will use again.

Brown Sugar Pound Cake I

Reviewed: Aug. 7, 2007
This cake was outstanding!! Very moist and just the right amount of sweetness. The chopped pecans was a nice addition. I did not change a thing when I made it. My husband, sister, and 2-yr-old daugther loved it. Needless to say I did as well. I topped it with caramel frosting, a recipe I got from this site. It was fantastic. I will definitely make this one again....especially this Christmas!! Thanks for a wonderful recipe.

Quick Gnocchi

This has to be one of the greatest recipes ever! I've had genuine gnocchi in Italy, and these aren't far off. If you want to make it a fun food for kids, it's easy to divide the dough and add some food coloring- they make a beautiful rainbow dish.

Thai Peanut Chicken

Reviewed: May 18, 2007
I made this dish last night, and I thought it was great! Thanks to other cooks for their invaluable advice on the sauce- the addition of the molasses and brown sugar, sans some of the soy sauce gave a great balanced flavor. I added some water to the peanut/soy mixture to yield more sauce without destroying the flavor or the texture. Not too salty. I love peanut butter so much, so that remained the control variable in this truly versatile dish. Another thing, I substituted red wine vinegar for white wine vinegar, and it played wonderfully well with this robust concoction. Also, mix in a handful of chopped pineapple, and it gives it even more charm. My daughter who is 2 didn't like it very much, as she can be picky at times (no brainer :) but.... I thought it was so awesome. Thanks again!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Jan. 1, 2007
Update: I just made this again for a Halloween get together and it is still fabulous and I never have leftovers. I made this for a New Year's party and it was a hit!!! I was a little worried after reading the reviews that the alfredo might be too prominent so I made a few adjustments. I made a double batch and used a 16oz jar of alfredo, 1/4c fat free plain yogurt, 1/4c low fat mayo, 1/4c more of mozzarella and 1/4c more of parmesian. I also just used minced roasted garlic. I didn't read the directions properly and I mixed everything together - which is the way to go. I then cooked it on low in my slow cooker so it could be kept warm all night. It tasted better than any restaurant dip I have ever had AND it passed my picky husband test - he raved about it. I will definately make this recipe again!

Banana Crumb Muffins

Reviewed: Dec. 11, 2006
These were very good! I substituted nonfat yogurt for the oil/butter and they turned out very moist and really heavy/filling. I waited until the last 5 minutes to add the topping - which made it a little difficult to put on since they had risen. I am debating on just adding it before cooking or seeing what would happen if you mix it right in to the batter. Great way to get rid of old bananas!

Great for a chocolate fix. The second time, I substituted Splenda for the sugar and spray butter for regular butter and they came out just as delicious. I also didn't beat the eggs for 8 minutes either time...don't know what sort of difference that makes.
