Roasted Red Pepper Cream Sauce

My husband and I loved this sauce. I did saute some onions with the peppers before pureeing everything. It was a nice change from tomato sauce, and while it was time consuming (though I know that could be cut down by using jarred roasted peppers), it was easy. I served this with grilled steaks and pasta. I can't wait to make this again.

Hudson's Baked Tilapia with Dill Sauce

My husband claims to dislike seafood, however this is the third seafood dish in 2 weeks that I've gotten him to try. I have to say that the name did help me in getting him to try it as he's also a Hudson! He enjoyed the fish in spite of the name, and even said he would eat it again. The dill sauce complimented the spicy fish perfectly. I used the Creole Seasoning Blend recipe from this site for the fish and liberally dusted both sides.

Creole Seasoning Blend

This was a little salty for me, but otherwise great. I love that I can make my own seasoning and avoid the salt-loaded commercial seasoning blends. Next time I make this I'll just cut out a tablespoon of salt. It'll be a while before I have to make it again though, cause this recipe makes a ton.

Pork Chops with Garden Rice

I thought this recipe was great. My husband liked the rice, but he didn't like all the "stuff" in it. Maybe I lucked out, but I had no problems with my pork chops being dry. I did saute my veggies for about 5 minutes before adding the rice and the broth. I'll be making this again, and hopefully soon.

Amazing Ribs

I didn't realize ribs could be so easy to make! I skipped the boiling and grilling and just threw them in the slow-cooker for about 6 hours. They were great, really tender and so easy that I'll have to make them again.

Asparagus Wrapped in Crisp Prosciutto

To Die For Fettuccine Alfredo

My husband orders fettuccine alfredo everytime we go out to eat, so I thought it would be nice to make it for his birthday. This was a great recipe, it was easy, and best of all Hubby said it was awesome! I'll definitely be making this again, but at the moment neither one of us can move since we're so full;)

Elegant Orzo with Wilted Spinach and Pine Nuts

My husband and I really enjoyed this dish. I was a little worried about serving it to my husband since he hates spinach, but he ate it. I halved the amount of orzo, but left the other ingredients about the same. I was unable to find pine nuts, so I had to omit them. This was a quick and simple but totally elegant dish that went wonderfully with baked salmon. I'll definitely make it again.

Rosemary Ranch Chicken Kabobs

Oh, my! This is wonderful! I used it to marinate chicken and top round steak for kabobs. Let these marinate overnight and fixed them for Father's Day lunch. My family absoltely loved them! Will definitely do these again!

Awesome Broccoli Marinara

Golden Pork Chops

I really enjoyed these pork chops. I did saute my onions and mushrooms with some garlic before mixing into the golden mushroom soup. I seasoned my pork chops thoroughly with black pepper and then browned them also. I only had 4 chops so there was way more sauce than necessary, but it's great over mashed potatoes. I'll definitely make this recipe again, it's super yummy and easy.

Bacon for the Family or a Crowd

I hate frying bacon cause I always end up getting splattered on. Normally I make my husband fry the bacon up, but now I'm happy that I've found a better method!) And I like that I can cook up a bunch to keep in the fridge for sandwiches.
