Sweet Marie Bars

I sent these to my husband in Iraq, and he told me that these got gobbled up before the rice crispy treats did. I'm glad I doubled the recipe! I wasn't picking up the peanut butter flavor as much as I liked so I added an extra half cup. I also used melted semi-sweet chocolate chips for the icing rather the what the recipe calls for since I didn't want them to go bad in the mail. I've since been asked to quadruple the recipe and send them again very soon.

Fiery Pork Skewers

Yum, I loved this. I wasn't able to grill these, so I made something similar to a stir-fry. I let my tenderloin marinate while I chopped a bell pepper, onion and mushrooms. I also added pineapple chunks and some minced garlic. It was very good, I'll make this for my husband when he redeploys.

Shrimpcargot

Yum, I thought these were delicious! I did find them a bit hard to eat/bite through, so next time I make them I'll either use smaller shrimp or chop the shrimp. I also discovered that while I normally love portobello mushrooms, I didn't care for the taste of them in this recipe. I topped mine with colby-jack cheese, and thought the garlic butter shrimp was awesome. Cannot wait to have these again, thanks for sharing the recipe!!!

Bacon Quiche Tarts

I halved the amount of cream cheese, used cheddar instead of Swiss, caramelized minced onion and upped the amount of egg. Still fantastic. My husband loved them.

Fried Mozzarella Cheese Sticks

Hubby and I really enjoyed these. The only big issue we had was that the cheese wasn't melty inside the breading. Not sure if we need to try a different brand of cheese stick, or lower the temp and fry a bit longer. The flavor the the breading was great though!

Baked Spaghetti Squash with Beef and Veggies

This is very good, and an excellent way to get my 2 year old full of veggies. I did use a frozen pepper and onion blend, and zapped the spaghetti squash in the microwave. I also added zucchini. I decided not to bake it as a casserole (we were tired and hungry). I simply sprinkled cheese over the individual servings and we were good to go. This reheated very well for lunch today also.

Spaetzle and Chicken Soup

This was very good. I am in the process of cleaning out the pantry and found a package of spaetzle that need to be used. I had actually roasted a chicken earlier in the week and had made chicken stock from the carcass so I used that and the leftover chicken for this. My 2 year old, who is not a big fan of soup, gobbled this up.

Roast Beef Horseradish Roll-Ups

I didn't particularly care for these. I think the cream cheese may have been a bit overpowering. I did like the horseradish, spinach, roast beef combo. It was great to pack for lunch as well. I'm might make these again if I can find something to substitute for the cream cheese.

Black Bean and Corn Quesadillas

Yum, these were very good. Hubby just deployed, yet again, so I need recipes that I can assemble quickly. This fit the bill, and my not quite 2 year old ate it. My corn was super sweet, so I omitted the sugar, I also omitted the pepper flakes since the baby was eating it. I sprayed it with vegetable spray and baked it in a 350 oven for about 15 minutes. Served it with Spanish rice, salsa and sour cream, can't wait to have it again.

Midwestern Pork Tenderloin Sandwich

Yum, these are the best! I used a pork tenderloin since I had one that needed to be used, so our sandwiches were a little on the small side, but still great. After pounding the pork slices flat, we dipped them in seasoned flour (salt, pepper, garlic and onion powder), a beaten egg, and then the cracker crumbs. I served them on potato buns with dill pickles, mustard, mayo and ketchup. They went great with warm Sarah's Applesauce (from this site). Hubby said they tasted exactly like the ones his dad makes, and our 2 year old ate all of his. Thanks for helping me recreate one of hubby's favorite meals.

Basic Chicken Salad

Ragu® No Frying Chicken Parmesan

I love this no fry version of chicken parmesan. If you're in a big hurry you can substitute frozen chicken patties. Occasionally when I feel like changing it up a bit I'll marinate my chicken in Italian dressing before dredging in plain bread crumbs.

Fried Egg Sandwich

Thanks for reminding me of this great breakfast option. I'm always in a rush in the morning and end up eating during my drive to school. I like stuff that I can eat with one hand (I know that I shouldn't be driving and eating, sorry) and this fit the bill perfectly. I used 2 eggs in my sandwich, shredded cheddar and mustard. Thanks to all the other reviewers for some great suggestions. I'll be trying them out over the course of the semester.

Cinnamon-Apple Chex® Mix

Yum, this is such a nice change of pace. I added a whole 5 oz. package of dried apples, used golden raisins and dried cranberries, and used sliced almonds rather than whole ones. My husband came home and asked what smelled so good, then refused to try it. More for me! The cinnamon taste is very subtle, but I don't think that I will up it when I make this recipe in the future.

Cherry Enchiladas

I really enjoyed these, hubby didn't try them since I used the cherry filling, but I bet he would like them with apple. I used an 8x8 pan, and it worked fine, although the bottoms of the enchiladas were soggy. I'll make these again though, and experiment with other pie fillings.

Roast Sticky Chicken-Rotisserie Style

This was excellent. I've roasted many a chicken, and they've all turned out pretty well, but this has to be my favorite method so far. The gravy made from the drippings was great too. I plan on using the leftovers for chicken manicotti and enchiladas, and on using the carcasses for stock. Thanks for a great recipe that I can get several meals out of.

Garlic Pork Roast

Delicious! I was a bit worried about the sweet potatoes, because we aren't big fans, but I thought it complimented the pork extremely well. The pork itself so so moist and tender. My potatoes were very mushy, so next time I make this I will add them later on rather than at the beginning. I made a gravy with the stock, and while it was delicious, you really don't need gravy with this meal. We can't wait to have this again.

Onion Potato Rolls

I have made these several times and just can't get enough of them! I make them exactly as the recipe states and they turn out beautifully every time. I use them for hamburger buns and sandwich rolls, and they work great!

Southwest Chicken

This is a great weeknight meal. I diced my chicken before browning it, so the entire meal (rice included) came together in less than 20 minutes. As written it is a bit bland, so be generous with your seasonings. This will be added to our rotation for busy night dinners. Thanks!
