Microwave Peanut Brittle

Good recipe BUT....Nothing on this recipe indicated the wattage of the microwave. This recipe cannot be cooked for 12 minutes on a newer high watt microwave after the total 16 minutes the mixture exploded out the bowl with the addition of the baking soda. The peanuts were already 'burnt smelling' when it came to 6 minutes on the timer. It tasted like marshmallows blackened over a campfire. I threw it all in the trash, and started over. I cooked it for only 6 min, THEN added the peanuts with the butter and vanilla. Cooked it for another 4 minutes....tested it with the old water trick then added the baking soda...Much Better....BUT....not nearly enough peanuts. I would put in like 2 cups for the amount of the candy mixture it makes.

Gourmet Sweet Potato Classic

This was very sweet and the potatoes need to cook waaaaaaaaaaaaay longer than 30 minutes. Why do you peel them after they cook? Why can't you boil them? Maybe thats a stupid question?

Pumpkin Muffins II

Excellent! I used half wheat flour, and half white flour. half brown sugar, and half white sugar. I substituted apple sauce for oil as others recommended, but then I chickened out and put about two table spoons of oil and the rest apple sauce. I halved the cloves because I'm not a huge fan of the flavor as per recommendation below. I think it would be fine w/ the entire qty because I don't taste the cloves heavily. Next time I may add a little more cinnamon because I <3 cinnamon flavor!

Cream Cheese Frosting II

This was definitely not sweet enough. I also thought the consistency was a little runny, so I added an extra cup of powdered sugar, and it is perfect. I understand it is a cream cheese based recipe, but its also a frosting and it should be sweet! As written it would probably be perfect for a danish or something.

Cranberry Sauce

my first not from a can cranberry sauce and I thought it was pretty easy. I did half white sugar and half brown as per reviews. I cooked it a lot longer for a thicker sauce. I will try grand marnier next time!

Garlic Butter

Not a success, but we had to substitute soy margarine for butter and omit paprika because of food allergies so its probably a great recipe but my family didn't care for our safe version.

Tasty. I burned the walnuts, but this was still good, and I'm sure pretty nutritious. I thought this would be bland but it was not. The red onion gave a nice perk.

Grandmother's Buttermilk Cornbread

These had excellent flavor and moist. They had great flavor. I only took a star away because I cut the sugar in half based on the other reviews and the corn bread was plenty sweet this way.

FANTASTIC!!! DELICIOUS! I didn't give this 5 stars because you totally do have to cut the morsels in half or it will be too sweet (glad i read the other reviews). They were so fluffy and sweet! Oh... I left out crushed cloves because I didn't have any, and I used regular molasses because I've didn't see "light molasses".

Caribbean Holiday Shrimp

This has great flavor. I substituted lemon for lime because I personally prefer the flavor of lemon, and it tasted great. My only suggestion is that it seems like it should be on a salad or in pasta or something. I guess its good as an appetizer as well.
