Southwestern Egg Rolls

I love getting southwest rolls when we eat out and these tasted even better without the deep frying. I omitted the chicken and increased the corn and spinach and black beans. Instead of jalapenos, I added a 4oz can of diced green chilies, and replaced cilantro for the regular parsley. Wrapping the tortillas neatly wasn't the easiest, but after folding and rolling, I stuffed the sides into the middle and placed in a rectangular pan to hold shape. I didn't use toothpicks or freeze, just kept in the fridge overnight. Brushed with butter just before baking in 400 degree oven for 15 minutes, turning once. Delicious!

Slow Cooker Chicken Parisienne

Assembled and cooked recipe as written but used fresh chicken tenders and a carton of fresh mushrooms. Chicken was tender and sauce was delicious; served over egg noodles. Easy, economical and now a new family favorite.

Lentil and Buckwheat Salad

This is good and I'll make it again, mostly for its vitamin and vegetarian benefits. It's not terribly flavorful, but it might get better in the fridge overnight. The only substitution I made was using dried marjoram instead of fresh.

Daddy's Fried Corn and Onions

This was surprisingly tasty considering its simplicity. I made this to go with pot roast and substituted some beef drippings for the butter. I also used frozen corn and a plain old yellow onion. Which I guess means I used this recipe more as a guideline, but it was still shockingly delicious.

Bodacious Broccoli Salad

Spinach and Orzo Salad

I made this for friends last weekend - the rescipe was super easy. Instad of roasted peppers I used a jar of roasted pepper pesto. This eliminated the need for olive oil and balsamic vinegar and was very tasty. I will definitely serve again this summer!

Ground Beef Mexican Style

I loved this recipe, but modified it as others did: In addition to the ingrdients called for, I added minced garlic, taco seasoning and a can of green chilies. I stirred in about a cup of sour cream at the end. Since it is summer now I served it over Fritos like a taco salad instead of noodles. I think this made it more summer-like. We loved it!

Chicken Tortilla Soup V

I love this recipe and make it regularly with rotisserie chicken from the grocery store. This is even better with the mexican style tomatoes with cilantro and a can of green chilies.

Apple Cinnamon Oatmeal

I made this for the first time yesterday. I think next time I'll choose a sweeter apple and peel it. I didn't add any sugar or syrup but I think it would taste better with one of the two... and maybe some nutmeg and walnuts. Overall it's a good basic recipe that you can easily add things to depending on what you like.

Baked Chicken and Zucchini

This was surprisingly hearty considering all of the vegetables. The flavor wasn't much (I sprinkled on some dill and more salt than usual), but my husband and I were very pleasantly satisfied after dinner. Must have been soul food or something - this was everything a meal ought to be.

Corn Casserole I

I did not make a casserole but instead made individual servings of this in muffin tins. I filled 18 muffin tins, after greasing them, and baked at 350 for 35 minutes. There were tasty. The first batch was a little bland for our tastes so I added 2 tbsp chopped fresh chives and 1 cup of chopped ham. It made a great breakfast.

Breakfast Loaf

This was such a wonderful breakfast! I used a sourdough bread round which perfectly complimented the cheese and ham. Instead of using the tomatoes and peppers in the loaf, I served the loaf alongside sliced tomatoes. I also added some chives to the scrambled eggs. Delicious and easy!

Sweet and Sour Chicken I

Unbelieveably yummy!! I followed the recipe, and all the tips, and it came out perfect and delicious! I didn't have food coloring, so my sauce was clear, but it did not change the taste. I also used black pepper instead of white because I couldn't find any...didn't seem to make a difference. The best tip I found was to season the chicken liberally after it was cut up with salt, pepper, onion powder and garlic powder. really added to the taste. Thank you for sharing this!

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

Wonderful!!! Made this for my husband on Valentine's Day! The only thing I did differently was I marinated 2 Ribeyes in Montreal seasoning for 5 hours and broiled it. The butter was just too terrific!

Flourless Chocolate Cake II

Tasted too much like the cocoa powder, wouldn't come out of pan neatly even after following the directions I felt it was a waste of money... it was to be dessert for Valentine's Day. But other people have had good luck so maybe it's an oven problem on my end.
