Slow Cooker Beef Stroganoff I

Well, it's not every day that your boyfriend actually takes the time to says "Wow, this is REALLY good". Four thumbs up for this one. I did have to add a little water though, after adding the cream cheese....delicious though.

Corn Dog Muffins

I didn't notice that the cornbread mix I got only needed water, so perhaps that's why I didn't think these were great. My toddler wouldn't touch them, either :( I will try them with a different mix next time. Hopefully they'll be better. **Update** I tried it with a different mix and they turned out a lot better! Kids at work really enjoyed it!

Cranberry Hootycreeks

I wanted to try these cookies before the holidays to see if I liked them enough to give them as gifts and they were amazing! I can't stop eating them, so I'm definitely gifting these. Even though I was scared of beating the butter and egg without adding the sugar first, I followed the recipe exactly and they came out perfect.

Lime Chicken Soft Tacos

I'm giving it four starts because, while the chicken by itself had an amazing taste, the added ingredients on the tacos didn't go together that great for my taste. I used cilantro instead of oregano and the taste of the chicken reminded me of authentic Mexican steak tacos (which are usually served with raw onion and chopped cilantro and a splash of lime juice). I think next time I'll try the chicken on lightly fried corn tortillas, to imitate the flavor of the other tacos.

Annie's Fruit Salsa and Cinnamon Chips

I used this as a cooking project with a group of 5-10 year olds and they all loved it! A few of them even came up to me and asked for the recipe :) Used some different fruits (apples, pineapple, strawberries, blueberries, raspberries and peaches) but kept everything else the same. The chips are delicious!

Chicken Marsala

I had been craving Chicken Marsala for a LONG time and inhaled this. It tasted exactly as I had hoped/remembered. Definitely double the sauce, and thicken if necessary. Also, I pounded the chicken so it was tender, and I think that made a huge difference. Served it with angel hair. The chicken itself was a little bland, so instead of the salt/pepper/oregano mix, I might try poultry seasoning next time.

Penne Pasta with Spinach and Bacon

Giving it a four b/c if I had made it according to the directions, it would've been too bland and greasy for my taste. I used bowtie pasta since that's what I had, diced tomatos with garlic, basil and oregano, sprinkled some red pepper flakes and added some leftover grilled chicken breast. It was really delicious and I will definitely make it again! Thanks for an interesting dish :)*** I didn't mention the changes I made in my original review, so here goes. I didn't use any olive oil and drained most of the bacon drippings from the pan before adding all the other ingredients. The juice from the canned tomatoes was saucy enough for the pasta.

White Chocolate Raspberry Cheesecake

A-M-A-Z-I-N-G!!! Used raspberry preserves rather than fresh raspberries. I placed the springform pan on a jelly roll pan with a little bit of water to avoid cracks, but of course some of the water got inside. No biggie though. Next time I'll put the pan with the water on the bottom rack. Can't wait to make it again!!!

Mexican Rice III

Love, love, loooove this! I've made it many times and it's always great. Instead of the chicken bouillon I use a Knorr Tomate cube since that's what my mom uses on her rice, everything else I follow exactly.

Garden Pasta Salad

Made it with red oninons, black olives, broccoli, and grape tomatoes and I only used one bottle of dressing and that seemed to be enough. I made it for a bbq and it was all gone. My father-in-law said he went back for 3rds and everyone seemed to enjoy it.

Yummy Honey Chicken Kabobs

These were soooo good! I marinated them for about 6 hours and that seemed to be enough time. I marinated the chicken with pineapple slices and on a separate container marinated onions, green peppers, mushrooms and grape tomatoes. I combined the chicken and veggies on the kabobs and they cooked fine together. Our only complaint was that the chicken had a weird creamy coating on it, but we didn't mind it much and that could've come from marinating it together with the pineapple. Making these again tomorrow!

Chicken Enchiladas

I'm giving it a four b/c I poured half of another can of sauce on top of the enchiladas before baking so they wouldn't be too dry. That said, my husband said these were restaurant quality and I'll definitely be making them again. I served them with a Black Beans and Rice recipe I got from this site, which was the perfect side dish.

Roast Sticky Chicken-Rotisserie Style

The texture of the chicken is spot on. But you really need to watch the roasting time as mine was done in nearly 2.5 hours. The first time I made this recipe I made it exactly as written and it was overly salty for our tastes. The next time I toned down the garlic and onion powder, upped the paprika and time, and it mellowed out the salitness beautifully. Happy cooking!

Hot Peanut Sauce

I'm giving this recipe 5 stars WITH the changes I made. I took the advice of many others and added 1/2 tsp ground ginger root, 1 crushed clove garlic, and pinches of both garlic and onion powder, and slightly less soy sauce (I ran out). I used crunchy peanut butter and my fiance says it's the BEST he's ever eaten (we live in the Netherlands and this "satay sauce" is eaten quite regularly, so that's a big complement). I also tried adding less water (some reviews said it was 'like watery peanut butter' but I ended up adding the rest of the water because it was so thick! I think the amount in the recipe is perfect). My only other comment would be that the serving size is for 6 people, but we ate it with stirfry veggies and we used the entire amount between the two of us. For more than 2 - 4 people, I would definitely double this recipe! Delicious, will make again and again!
