Tex-Mex Turkey Soup

I made this soup almost exactly as per the directions (except I only used 1.5 tsp Chili powder and forgot to add the tomatoes) and my fiance and I still thought this was mildly spicy-- we made sure to have enough sour cream on the top to help tone down the spice a bit. This would be too spicy for people who don't tolerate spiciness well (i.e. my mother :). We had this as leftovers for a few days afterwards as well and it was even better-- great with extra cheese and scooped up with tortilla chips. Thanks!

Cranberry Sauce Extraordinaire

I really liked it, but most people didn't eat it. My husband's family's not very adventurous so I should've known better. More left overs for me! I also liked it on a bagel with cream cheese.

Double Layer Pumpkin Cheesecake

I really enjoyed it. Used a bit more pumpkin, about 1 tbsp more of sugar and pumpkin pie spice instead of the spices. YUM!

Mexican Chicken Corn Chowder

I also shredded the chicken beforehand, but might chop it into small pieces next time - otherwise it looks kinda like, well gross. Tastes great though! Used some other suggestions - the roux in the beginning I thought was key (cooked butter and flour until light brown then threw in garlic and followed the rest of the recipe verbatim), and will add the aromatics next time. Threw in an extra can of extra sweet kernel corn, but will throw in another can of creamed corn next time - I like it sweeter. Will also go with Pepper Jack cheese next time and the Rotel was a nice addition. I didn't have any bouillon so I used chicken stock and that worked fine, but might use the bouillon for more flavor next time. I really liked this chowder (it's really easy) - I had someone hold my soup for a sec while I did something and I turned around to catch him putting a 4th bite in his mouth!

French Dip Sandwiches

Truely a perfect recipe - for once I did not change a thing. I heeded other's advice and used low sodium soy sauce. Defintely the right choice, it was salty enough as is, I can't imagine it with full-sodium soy sauce! The meat had a very delicate but well rounded flavor, it's definitely unique to other French Dips that I have tried. I had to cook it for 13 hours to get it to the shreddable consistency that I wanted (I had to start at midnight the day before), but it was awesome that I literally had everything I needed except for the meat in my cabinet; I was so excited. Served on club rolls with provolone, and also sauteed one sweet onion, then threw it in with the broth to cook for 10 minutes. Soooo good!

Garbanzo Bean Chocolate Cake (Gluten Free!)

My alterations: I used a 16 oz can of chickpeas, 1 tsp baking powder, added 1/2 tsp cinnamon and nutmeg (for extra flavor), and didn't include any of the sugar. They were still plenty sweet, but for some reason the bottoms of my cupcakes were dry while the insides were super moist. This recipe made about 9 filled-to-the-brim cupcakes, which I baked for 25 minutes at 350F in my silicone muffin pan. While these cupcakes are somewhat healthier in that they contain more fiber and protein than normal cupcakes, they are also more calorie dense (a small trade-off I guess :)

Cinnamon Ice Cream

This is my favorite ice cream to make at home. I used 3/4 cup sugar and skim milk instead of heavy cream, but it was still plenty rich and delicious! I would recommend this recipe to anyone.

Blueberry Oat Muffins

So good! This is my mom's go-to recipe for blueberry muffins. It's hard to tell they contain oatmeal and orange juice in the finished product. My favorite part is the crunchy cinnamon sugar on top :)

Chicken Souvlaki Gyro Style

I ended up making a different tzatziki sauce, but the souvlaki marinade is delicious! I don't have a grill so I had to sear the chicken on the stove, and the marinade made this delicious crust. So so good!

Fabulous Cilantro Pesto

A nice change for pesto. I wasn't sure about the combination of cilantro and parm. cheese and walnuts, but it actually works. I used whole wheat pasta, omitted the pepper, added a few tablespoons of lime juice and used less olive oil for a chunkier pesto. Just be careful not to use too much cilantro, or else it becomes bitter.

Delicious Raspberry Oatmeal Cookie Bars

The first time I made them I followed the recipe exactly and they were amazing. I tried them again with some modifications other users suggested without success (half butter, half apple sauce, adding cinnamon and vanilla extract, and used apricot preserves, although this last part I did like). I recommend keeping the recipe as shared

Delicious! I added about 1/4 cup of mini chocolate chips to the batter and a sprinkle of cinnamon and brown sugar to the glaze. My husband liked them plain, but I loved them with the glaze. YUM!

Mama's Best Broiled Tomato Sandwich

I like this way better with white than with wheat (but I grew up on white bread). The wheat drowned out the taste of the mayo/parm mix (so much for the hard work!) The tomatoes were soooo juicy and delicious after the broiling. The balsamic marinade makes the perfect kick. I did sprinkle some salt on top and I had felt like it was lacking a little before, so I added some feta on top this last time, and I think that is they key. I am addicted now! Also, toasting the bread first is also key, otherwise the heavy open faced sandwich will never hold up!
