Best Brownies

Really moist and not cakey. I read other reviews about not over mixing and put the dry ingredients in my mixer first then the wet ingredients on top and mixed for no more than 2 minutes, stoping halfway to scrap the sides and bottom with a spatula. Also I didn't use dry cocoa, I melted 1/3 cup semi-sweet ghiraddelli chocolate chips in the microwave for thirty seconds at a time until they were creamy. Alot of recipes I've tried are to rich and cakey, this is my go to brownie recipe from now on.

Grilled Salmon I

This is a super recipe. I fixed a 1.7 pound wild Sockeye Salmon and it was great. I marinated for about 5 hours and cooked the fish skin side down for 7 minutes, flipped and cooked an additional 6 minutes. Served with Basmati rice, Szechuan noodles and a couple of pasta salads. I will use this marinade many times more.

Tater Tot Casserole II

I made this for a group while we were on vacation. Everyone loved it! You could add cooked sausage or bacon if you wanted it to be a complete breakfast casserole. I made it as listed with the addition of a little more cheddar cheese and I used the seasoned tater tots. You could spice it up really easiely. I am going to make it for a cook out next time. Thanks for sharing. This one is a keeper!

French Toast Souffle

I made this for a group while we were on vacation. It is wondeful. Easy to make and convenient to make ahead the night before. Everyone loved it. It would really be good to add cinnamon or some other flavoring. I think fresh strawberries or blueberries would complete it perfectly. Thank you! I will be making this again and again.

Strawberry Sherbet

We pick tons of strawberries during the season and this is a great way to use them. I halved the recipe and use my Krups ice cream maker. I have to refreeze the cylinder after the first batch and freeze the other half of the sherbet the next day. I don't add the cinnamon but this recipe is delicious. My friends rave about the wonderful, fresh strawberry taste.

This was so easy and very good. I used my rice steamer which requires equal parts rice and water. I also used vegetable broth instead of water. Makes it even tastier! We packed it in a cooler and enjoyed it on the lake. I will make this again soon! Thank You.

Breakfast Pies

These were very tasty. I used the smaller canned biscuits, but they were still a little too thick on bottom. I think I will stretch the dough a little more next time by making 12 instead of 10. I also added another egg and tablespoon of milk. This is a great idea. Thanks for sharing.

Banana Sour Cream Bread

By far the best banana bread I've ever made. I added 1 cup of mini semi sweet chocolate chips. It was wonderful, but beware it makes 4 loaves of bread. I have only two loaf pans so I made muffins too. Thanks I will keep the recipe close at hand.

Banana Sour Cream Bread

The best banana bread I have ever eaten. I added a cup of mini sem-sweet chocolate morsels to add a little chocolate flavor. I also made muffins. Sprinkle some additional cinnamon/sugar mixture on the tops before baking. Adds even more flavor. Or try a streudel topping for muffins. It is out of this World!
