Cake Mixes from Scratch and Variations

Followed directions exactly and wound up with a crumbly "cake" that tasted like sweetened cornbread. I'll keep trying using other reviews - may end up being a great base recipe.

Baked Potato Soup

I really enjoyed this recipe! It was flavorful and not as heavy as other potato soups I've had in the past. I didn't change much, just that since I use center cut bacon I didn't have much drippings so I added a pat of butter. Also, I added the bacon and the cheese and fresh chopped scallions (In lieu of parsley) at the end instead of garnish and the cheese really added to the creaminess. Will definitely make this one again!

Crustless Cheese Quiche

I am in love with how easy this is. Five stars for that! Excellent, excellent base. Four stars for taste as written. Alone I thought it would be rather bland, so I added some mushrooms, did half feta and half cheddar, omitted the butter as others did, and added onion and garlic powder to the egg mixture. Delicious!

Chicken Soup II

Great soup! I had a cold and instead of downing a can of condensed chicken noodle soup, I thought I'd make some from scratch. I love spinach, so this was right up my alley and the tortellini was a nice twist as well! I made a few variations---limited the onions and celery just because I'm not a huge fan. I did use fresh spinach instead of frozen and it worked just fine. Instead of meat, I used a three cheese tortellini and omitted the egg noodles (too much pasta). Finally, I didn't go through the trouble of taking the chicken off the bone (thought it made the soup more "hearty" and it falls right off anyway) and I also added a couple teaspoons of butter. All in all---this was a fantastic recipe! I served it with garlic bread and it tasted event better for lunch the next day!!!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Excellent dish. I looked at the reviews and really only added extra garlic. Added about another teaspoon. I cooked the onion with the pork chop, then removed the chops and followed the recipe as written. DELICIOUS!

Chicken and Spinach Alfredo Lasagna

This was very good and relatively easy to make. Everyone loved it. The only change I made was to mix the spinach and the ricotta before assembling. The sauce recipe does make alot. It was very good but I might cut back on the sauce just a little next time, just my preference.

Valentino's Pizza Crust

This was ok. To me, the taste was kind of off and the pizza didn't seem to get done all the way in the center. I would recommend pre-baking thecrust for a few minutes before adding your toppings or better yet use rapid rise yeat in place of the regular kind.

Delicious Chicken Casserole

World's Best Lasagna

Perfect! I prefer more noodles, so I added enough to divide the ingredients into another layer than the instructions state. Also be careful with the salt, add it to the sauce to your taste. Others have said this sauce is great for all kinds of things - I agree.

Scalloped Potatoes and Onions

I'd like to say two things first: 1) I always change recipes, and 2) I really don't like mayo. That said, I did not change a THING in this recipe and it tasted AMAZING. This is now THE scalloped potato recipe for me. It's fantastic! (My potatoes were pretty thin, though, so it only took an hour at 350.) Thanks so much!

Ten Minute Enchilada Sauce

OMG this is my go-to enchilada sauce! I've abandoned my mom's time-consuming blender process for this SUPER FAST, SUPER YUM recipe. It is the BEST! I use butter instead of oil, and instead of water I use a 15-oz can of beef broth. But FIVE STARS for a fantastic enchilada sauce! This is the only enchilada sauce I make anymore. Thank you!

Apple Walnut Pound Cake

This was AWESOME. My husband ate the entire thing! I used three apples, upped the milk a little, and added some cinnamon to the batter. (Thanks, Jillian!) Excellent recipe! This cooked for much longer than I expected, though (probably an extra 15 min), but that's probably because of the extra apples. Oh, also, I baked this in an 8x8 glass dish. I didn't think it would fit in a loaf pan! Delicious, though. Absolutely a keeper!

French Toast Casserole

I thought this was very good. I used leftover apple bread that I had made earlier and cubed it as the recipe instructs. I doubled the recipe and baked in a 9X13 pan and used the required amount of milk and eggs. It took a full 60 minutes to bake the custard and I did have to cover with foil about the last 20 minutes. I think this is a great basic recipe that you can easily alter to fit your family's needs and using what you have on hand. I came out as good as something I might expect to find at a bed and breakfast.
