Super Moist Pumpkin Bread

Very forgiving recipe. Used coconut coffee creamer instead of milk, but accidentally added 1 c. instead of 2/3! Used 1/3 c. applesauce, and 1/3 c. olive oil, still came out great! Makes awesome muffins.

Butternut and Apple Harvest Soup

Reviewed on Oct. 19, 2009 by lndrnsandi1965
I loved this soup! I wanted an easy recipe, and this is definitly it. Loved the combo of flavors. I had to make a few changes, as I wasn't able to get leeks, and didn't have any chicken stock. I substituted vegetable broth, and used dry sherry for the wine. I also seasoned it with a teaspoon of sweet curry powder. I'll definitly make this again!!!

Chicken....wow instead of beef...still use the taco seasoning when you cook up your chicken. Perfect for those of you looking for a lighter option...YUMM!
