Caramel Brownies

This is as good a brownie as you will ever eat, AND it's homemade not from a box. I lost my caramel brownie recipe some time ago, so glad I found this! These were a hit at my house!

Peanut Butter Stuffed Jalapenos

Great concept, but maybe some more coaching would be beneficial. Mine were scorching hot, so the second batch I cooked a little more and came out tolerable but a little too sweet. I suppose the key is in finding the happy middle ground, but I doubt I'll be investing the time. Perhaps battering and frying might add some good texture?

Hummus III

This recipe is fantastic. I've easily made this hummus 25-30 times with constant variation. It's more authentic than the corporate at the grocery and way healthier (if you so choose *wink*). I enjoy boosting the garlic and adding some crushed red pepper or habenero for a little heat. Add more oil when blending for more smoothness, but I really enjoy the thickness and texture of some whole Garbanzos in there.

Easy Pie Crust

Amazing recipe! It's super easy and very versatile. I've added a dash of nutmeg and cinnamon and used it for a pumpkin pie. I've added a dash of sea salt and used it for a pot pie. A little brown sugar will turn it into a cherry pie with a sweet twist. Great all around and perfect for "off the cuff" experimenting without catastrophic loss if it goes wrong!

Pork Chalupas

our family loves this dish, however we fry our tortilla shells in a pan until crispy, and layer everything on top! kinda like a taco salad but so much better! ( I also season the meat so its not so bland)

Easy Chicken Tetrazzini

I made this recipe for my family and it turned out great. I did add spices to kick up the flavor. I used garlic powder, thyme, onion powder and sage. I cooked my chicken in water and spices then took the chicken out and used that water to boil my noodles....I used egg noodles as my family does not car for the other noodles.. I also added the same spices to the boiled mixture and it turned out good. I use chicken broth insted of the water/boul. mixture. and i used colby and montaray jack cheese mixture on top insted of chedder. My family loved the meal and has requested it to go into the family roatation

Grilled Chicken Salad with Seasonal Fruit

Great recipe! Others suggested reducing the oil and sugar and I did so. The dressing was delicious. I had no vegetable oil so I used EVOO and shallot instead of onion. I used Romaine lettuce,fresh strawberries and forgot the pecans. For the chicken I marinated it overnight in the white wine vinegar, orange juice and herbs of Provence. This gave the chicken a great flavor. I would use this recipe again and try other salad greens and fruits.

Creamy Au Gratin Potatoes

I was impressed with the simplicity of this recipe, even though it was very "homemade". If I'm going to follow a recipe, I prefer not to start with a can of soup! Anyway, I substituted about 1 cup of milk with buttermilk, and I used whole wheat flour for the rue, and it turned out perfectly. I also skipped the step in which she added the cheese to the milk gravy. Instead, I just sprinkled it on top of the 'taters and poured the milk gravy on top. This was DELICIOUS. It should be noted that the reason I used buttermilk is not because I thought the recipe might need it, but because I had some I needed to use! Same with the flour. I've got wheat flour on hand, so that's what I used! I think this is the sort of recipe that you can "tweek" and make your own, and just about anything you do will still come out wonderfully well!

Veggie Meatloaf

Absolutely delicious. The two eggs instead of one is integral for keeping it firm and bound. I used half mushroom and green pepper spaghetti sauce mixed with some organic ketchup on top and it was wonderful. Great meal and I'm looking forward to the leftover lentils and rice for lunch tomorrow or a soup tomorrow night.

Stir-Fry Pork with Ginger

Strawberry Pie II
