Easy Key Lime Pie I

Absolutely delicious!! And yes, it's better the second day. 4 eggs, 2 cans of condensed milk, 1/2 cup each of lime juice and lemon juice, 1 teaspoon of lime zest and baked for 25 minutes. Perfect!!

Mediterranean Chicken with Eggplant

Very good. I did not have tomato paste so I used about a cup or so of jarred marinara and eliminated the water. I also added a handful of sliced marinated green olives - worked very well. I love eggplant - delicious dish.

Hamburger Vegetable Soup

Garlic Mashed Red Potatoes

This recipe was so easy, and I was pleased with my first attempt of making homemade mashed potatoes. The only change I made was to add a can of fat-free chicken broth for additional flavor during the boiling process. I will definitely use this for future meals.

Croutons

These croutons turned out fabulous. Thanks to previous reviewers I made sure to use a pizza cutter which saved lots of time I'm sure in cutting the croutons. Also 10 minutes was a better gauge of time for my oven. My husband's face lit up when he popped one in his mouth!

Marinated Turkey Breast

My fiancce & I decided to have Christmas alone this year so we fired up the grill and LOVED this recipe! I didn't have whole cloves on hand so I used ground cloves and mixed it with the other ingredients - worked perfectly! If your grill tends to get too hot or juices from the turkey sparks flames in the grill, try propping the lid open a small amount with a SAFE pair of tongs to allow a little air in - it will not dry out the turkey. Thanks for sharing this recipe!

Children's Gingerbread House

This is a really great recipe. Time consuming but well worth your efforts! I had to use bread flour but if you're not going to eat the house after you build it, it works just fine. (Remember to use 2 tablespoons less per cup if you have to use bread flour!)

Indian Tandoori Chicken

Excellent and easy. I let the chicken breasts marinate for a day to give full flavor. I also left out the food colorings, and my guests laughed when we initially looked at the chicken..it was the craziest shade of pink/coral that I've ever seen. But it still looks like the chicken I'd get at my local Indian restaurant. Everyone loved it. I paired it with basmati rice, coconut-curry sauce, steamed vegetables, and naan. It really tasted authentic!

Naan

Although the naan didn't come out as I had hoped (kinda dense, no bubbles), myself and the guests loved it. I added the 1/2 tsp. as suggested by others, but it still didn't seem to affect density. The taste was great, I left out the garlic and we've been using the naan with jams. I also used an electric griddle and they came out great.

Pumpkin Bread

This bread was great, even though I didn't put the allspice in it. I also put too much in the loaf pans and it baked over the edges, so I'd greatly suggest a deep loaf pan, or perhaps trying three pans. I've received lots of compliments on it!

Slow Cooker Chicken Taco Soup

OMG! This was delicious. I followed the recipe to the letter and it was perfect. I loved the taste the beer gave the soup. What a treat and so easy. I wouldn't hesitate to serve this to a crowd of people and if you want to make it hotter just add hot taco seasoning and hot diced tomatoes with chilies. But we loved it just like it is!!

Easiest Filet Marsala

Basically a very good recipe but I think it called for too much balsamic vinegar. I would cut this down to 1/8 cup. I added about 1/4 cup of chopped onions and browned them in the butter. Then I added the mushrooms followed by the wine with 1 teaspoon of Maggi Sauce. As directed I added the balsamic vinegar and reduced the liquid. I added just a bit more wine with some salt and pepper to taste and then a little cornstarch with water to thicken the sauce. My husband loved it and with less vinegar I think this will be a winner!
