Easy Italian Sausage Lasagna

It was good, my husband and kids loved it. I did change a few things. I put 2 cloves garlic in the pan with the sausage. I whisked 1 egg into the ricotta, and added some dried Italian Seasonings to the sauce. I also watered the sauce down a tad (about 1/2 cup water), b/c I didn't think it was enough. I think there needs to be an additional 8 oz can of tomato sauce added to the recipe, I only had enough meat sauce for 2 layers. But i will make this recipe again!

Sweet and Sour Kielbasa

Excellent! Per other reviewers suggestions, I doubled the ketchup, added a tsp. of minced garlic, chopped up a whole sweet onion (small), used cider vinegar instead of lemon juice, replaced the water with an 8 oz. can of pineapple chunks and their juice and increased the kielbasa to 2 lbs. Prepared this as a meal and served it over mashed potatoes (using the yummy sauce as a gravy). Will make again and again this way - the whole family loved it.

Valentino's Pizza Crust

I have been making homemade pizza for my family for several years. We recently moved and I misplaced my basic dough recipe, so I searched on the site and picked this dough to make. My family LOVED it! They told me I didn't have to keep looking for the old recipe! :0) I did add a bit more sugar. And note, the dough is pretty sticky so you'll be tempted to add more flour but don't! I'm convinced that's why it bakes up so nicely! Also, I prebaked my dough in the pizza pan for about 15 minutes to make sure it would cook all the way through, then added toppings & cheese and baked for another 15 minutes. I topped it off with about a minute and a half under the broiler. All the way around, this pizza crust was great! It reminded my husband and I of Uno's Restaurant in Chicago. 5 stars for sure!

Curried Coconut Chicken

This was a good starting point -but I can only give 3 stars because I had to make so many changes to suit MY taste. I was going for something similar to what I order at my favorite (and very expensive) local Thai restaurant. And, I think I came fairly close. Not that everyone would agree with my changes, but here they are: I added 2" of fresh peeled ginger - minced it and tossed it in with the onion and garlic, I replaced the canned tomatoes with 2 freshly diced tomatoes (because I had them), I added one chopped yellow bell pepper, I chopped the sweet onion into good-sized chunks instead of slices, I made sure to use 'sweetened' coconut milk, I omitted the tomato sauce and added one fresh lime (juiced), I used 1/8 tsp. of black pepper and 2 tsp. of salt added to the end mixture (instead of seasoning the chicken) as well as 1/4 cup of freshly chopped cilantro and 1 tbsp. of cornstarch. It was still quite a thin sauce, but this is also how it is served at the restaurant I love - so I don't think it is supposed to be thick. After all of these additions and subtractions - I thought it had a wonderful flavor. I am questioning whether adding some pineapple chunks would have been good - I might try that next time. Although I love hot and spicy food, I did not experiment with adding additional heat - because I was also feeding this to my two small children. But if it were just for me and hubby, I would have tried adding some red pepper flakes to start. :)

Enchilada Casserole III

This was good - and easy enough to prepare for a weekday night. Mild enough for the kiddies. Definitely could have used some sour cream on the side, though. I wasn't jumping up and down over it - but I wouldn't have a problem making it again.

Broccoli and Tortellini Salad

This was very good with a few changes. I thought that two heads of broccoli was enough with the amount of pasta. Also, there was not enough dressing, in my opinion. I increased the mayonnaise to 1 1/2 cups, the cider vinegar to 3 tablespoons and left the amount of sugar the same. This allowed for an even coating. Other than that - I left it as written and it was a tasty side dish, for sure!

Chicken Marinade

I wasn't crazy about this marinade. It was a little harsh for my taste and I don't think I would ever be inspired to make it again. Not sure what would make it better. Perhaps diluting the soy sauce, or using a "lite/less sodium" version. Could have been a little sweeter as well.

Cheddar Bay Biscuits

Very good drop biscuits! Easy to make and the whole family enjoyed them. I took the advice of a previous reviewer and served them with creamy french dressing for dipping. Yum!

Ambrosia Fruit Salad

My family did not care for this at all. It may be that we just don't like "Ambrosia" salads. I was turned off by the texture of the coconut in it. And, I particularly disliked the nutmeg and cinnamon flavor. Sorry!

Whit's Chicken Enchiladas

This recipe is awesome. I doubled the green chiles and used 2 jalapenos to give it a little more kick, but otherwise left the recipe intact. There's a Mexican restaurant where I live and my boyfriend's favorite dish is comparable to this, so I was ecstatic when these came out so great. Definitely one of our faves :-)
