Black-Eyed Peas and Tortillas

Reviewed: Sep. 24, 2009
I thought this came out really good. However, I added pickled jalapenos instead of fresh, and tripled the recipe to fill 8 tortillas. I also allowed it to "cook down" so that there was virtually no liquid. Distinguishable citrus flavor - tangy and delicious! Serve with sour cream.

Baked Spaghetti Squash with Beef and Veggies

Reviewed: Sep. 24, 2009
This recipe definitely needs some tweaking. A little on the bland side. The salt shaker was making it's way around the table at our house. I love the kid-friendliness of this squash, though. I told them it was spaghetti and they did not question it. :) Would not make it again as is, but there is something to build on here...

Hey gang, this recipe makes me think of canolli. What if we were to use mascarpone as the filling in stead of the cream cheese? I'd love to hear back on that one.

Oaty Cereal Bars

Reviewed: Jun. 12, 2009
These are SO good! I could hardly stop eating them. Neither could the 8 year old I babysit who will not eat anything! She took a bite, and after a moment of suspense...she belted out "That's the way, uh huh, uh huh, I like it!" LOL. I used Golden Graham cereal because that's what I had in the house, and also boiled the sugar and honey longer as one user suggested. I think I went too long though, because they set up to be hard as a rock. That can easily be remedied though by a few seconds in the microwave. Be careful! The sugar mixture can get VERY hot when reheated! I will be experimenting with different kinds of cereal & next time will only boil the sugar and honey for about 1 minute instead of 3.

Chocolate Orange Truffles

Reviewed: Jun. 8, 2009
These were AMAZING! So good. I made them for my boyfriend & his favorite flavors are orange and key lime so I made half of each. I took a reviewer's suggestion of making the filling mixture the night before and keeping in the fridge overnight. It was REALLY stiff by then, but I was still able to get it into balls. I would definitely double or triple the recipe if making for more than one person because mine only came out to 24 VERY small truffles. Taste is delicious though!

Chocolate Eclair Dessert

Reviewed: May 21, 2009
I have been making this dessert for family get-togethers my entire life! Which is 20 years. Everyone loves it, I don't know what would happen if I decided not to make it one year! Definitely follow one user's suggestion of microwaving the frosting if you are using store-bought - that is the way I have always done it, and not only does it make it MUCH easier to spread, the consistency sits much better with the rest of the dessert. I always try to get it into the fridge the night before serving so that the graham crackers get soft. Delicious!

Butter Bean Burgers

Reviewed: May 11, 2009
Awesome! My family is not vegetarian - but we LOVED this recipe. I thought they were better than regular hamburgers. My husband said that he "wouldn't go that far" - but that he really thought they were tasty and wants me to make them again and again. He even passed the recipe on to one of his buddies at work. This is a must try! I followed the recipe as written - except I used pickled jalapenos and added some bread crumbs as needed to help the patties stay together.

Spinach Cheese Tortellini

Reviewed: Apr. 16, 2009
I liked it! I didn't measure out the milk, just kept adding until I had the consistancy I wanted. Sauted a little garlic and one onion with the mushrooms, and added a little pesto sauce to coat the tortellini. Since some reviewers said it was thick or heavy, I didn't drain the spinach before cooking. Oh, I had some smoked cocktail sausages (hubby wants meat)so I threw them in too. Really good and I'll make this again.

Baked Potato Salad I

Reviewed: Apr. 12, 2009
love love love it! I did the recipe for 12 servings and used a whole package (24 slices)of american cheese and added extra bacon. I also used some ranch dip I had on hand and then added enough mayo to make a cup. Since everything in it is cooked, you don't have to stick it in the oven for an hour, but it's sooooo much better if you do! I didn't add the black olives on top, and next time I might sprinkle some dried onion rings or cut up some red bell pepper to dress up the top, just my personal taste. *Update* made this again, this time using what I had on hand, some purple onion, mayo and ranch dressing, and chedder instead of american, and bacon bits. i double the recipe and we ate half of it unbaked like reg potato salad the first night, and then I put the rest in a baking dish, sprinkled some fried onions on top (just the last 10 minutes) and baked for an hour for the next nights supper. I LOVE the idea of this! I'm now going to try baking other potato salad recipes i have, and I'm thinking of trying this "2fer" on macaroni salad too!
