Slow Cooker Pulled Pork

I used 3lb pork tenderloin, put 1/4 sweet onion & sm bell pepper 2 sm garlic cloves chopped. Sprinkle pork with barbecue seasoning and then placed overtop of veg. Pour 12oz beer over and pour 1/4 of bottle of Sweet Baby Ray's sauce on pork, on low for 4hrs. Drained juices put veg & pork back in along with remaining sauce plus another half a both and cook on med another 1hr. Pork was very tender but too sweet. Next time I'll either use spicier sauce or leave plain & add whatever sauce guest want.

Oven Fresh Seasoned Potato Wedges

These were good. I didn't have Parmesan cheese so I omitted cheese. I cut my a little thinner and they still took 50 mins before they got crisp.

Simple Scones

I really like theses! I used 1/2 Wh Wheat & 1/2 AP flours. I also used my food processor. Use 1/2 cup of frozen cranberries and 1 tbsp orange zest. Next time I will use more Cranberries.

Cranberry Waldorf

The only change I made was to omit the grapes. I made this for Thanksgiving last year for BF as a trail, he loved it so I made it again for New Years when my daughter & husband were here, they loved it as well! This will be our new holiday traditional side dish. *Note* It did turned pinker when using fresh cranberries that I had frozen.

Super Easy Chicken Fingers

I changed the recipe so only 4 stars. I placed chicken in flour, then dipped them in egg whites, and then Japanese panko bread crumbs and it was yummy! baked them in my toaster oven on convection at 400 for 15 minutes. Served with Honey Mustard Sauce from this site. I have also baked them as directed in conventional oven.

I use about 1tbsp of juice from a lime or lemon, whichever I have on hand. I also learn a trick from mexico to put the seed of 1 avacado in the bowl to keep it from turning brown as fast.

A Good Easy Garlic Chicken

Great Chicken! I added about two tablespoons of olive oil to the pan and melted the butter in the olive oil. I also added fresh garlic and onion. I took chicken out and set aside, and took another reviewers suggestions by then add 3T butter and melt it, add 3T flour and whisk to stir the flour and scrape up the chicken bits, the darker the rue the better, then whisk in about a cup and a half of chicken stock, more or less depending on how thick you like it.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I was looking for a recipe that had whole wheat flour, so I used this as a base since I didn't have strawberries..... I plused 2pkgs 0f simmple harvest vanilla,honey,almond ceral, set aside...pulse 4sm bananas & 1 white peach...in lg bowl whisked 3/4c applesauce (instead of oil), 1/2 c brn sugar, 2 eggs, vanilla, cinnamon, 1/2tsp salt folded in banana peach mixed in 1c ap flour, 1c whole wheat flour, baking powder & ceral...spooned in 12 reg muffin tin to the top....baked @ 400 for 5min & then @375 for 15mins. Lightly sprinkle pwd sugar on top before cool. Very Good! Next time I'll add more peach or oranges & carnberries instead.
