Sweet Potatoes With Feta Cheese

Reviewed: Oct. 14, 2009
This dish was ok, but the cheese overpowered the sweet potatoes and you couldn't tast them at all. I'm not sure if I will make this again.

Ginger Steak

Reviewed: Oct. 13, 2009
My husband likes ginger. My husband likes soy sauce. My husband likes steak. Of course he likes this. I thought it was pretty good, but I didn't add salt because soy sauce is so salty on it's own. Wouldn't use on a great cut of steak, but great on the tougher ones.

Bacon Scalloped Potatoes

Reviewed: Oct. 13, 2009
I really liked this, but my husband only kinda liked it. He's not a fan of scalloped potatoes anyway...So I'm not counting his opinion. I only used a 1/4 of a small onion, and I'm glad I did. It would have been way way too much. Used yukon gold potatoes because I wouldn't have to peel them. Added some mozzarella to the sauce with some black pepper and a pinch of nutmeg and garlic. Would have rated 5 stars, but gave it 4 b/c of the onions.

Juicy Roasted Chicken

Reviewed: Oct. 13, 2009
This is the juiciest chicken I've ever had! Making it for dinner tonight. Yum...Just thinking about is making me drool :) Usually stuff onion instead of celery, and sprinkle with garlic powder and a little ground chili powder. Sometimes I stuff the cavity with some bread stuffing too. OMG...Now that is the absolute best!

Apple Strudel Muffins

Reviewed: Oct. 13, 2009
I make my mom brunch for all her birthdays and mother's days. It's her fav meal :) Anyway, she loves these muffins. I try to make them for those special occasions. They are probably the best muffin ever! So good and yummy. Just hate chopping and peeling all those apples, but worth the effort.

Ultimate Maple Snickerdoodles

Reviewed: Oct. 13, 2009
The best cookie ever! I get request for these all the time. Every Christmas I bake cookies as gifts, and these are always included. Only change is I use brown sugar instead of maple sugar to roll them in. For some reason they always remind me of cinnamon pop tarts :) , but way way way better.

Chocolate Ganache

Reviewed: Oct. 11, 2009
I like to use 1 cup of cream and bring it just to a boil over medium high heat before pouring over the chocolate. Depending on what I'm using it for, I'll whisk it really good after pulling it out of the fridge.

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 11, 2009
Troy hates it when I make this, but sometimes it's nice to just be lazy. Used reduced sodium cream of celery instead of cream of chicken, and chicken thighs w/ bones. Before adding dough, I remove chicken from bone and shred. Also usually add frozen peas, corn, and TB cornstarch/water at the end. Not anything like my mommas, but it's something to eat.

How I usually make rice when I consider it "plain" Chicken broth always makes a world of difference in rice. It's a great method, but wouldn't call it special.

Firecracker Fried Chicken Drumsticks

Troy really loved these. Didn't have cornmeal so I just added some breadcrumbs instead. We used Franks Red Hot Sauce. It wasn't spicy, but tasted like hot sauce. Really tender.

Chicken Breasts Pierre

Reviewed: Oct. 11, 2009
Pretty good. Taste like watered down barbeque chicken. Troy loves this and request it pretty often. Usually add 1/2 diced onion. Sometimes I make with pork, but simmer for only 30 minutes then. Oh and double the sauce. Pretty much always serve with brown rice with sauce spooned over top. Only thing is it's not as good leftover.

Baked Ziti I

Reviewed: Oct. 11, 2009
I make a low fat version of this. We use ground turkey, fat free sour cream, and low fat cheeses. I usually cut the recipe in half but double the meat sauce cuz that's how we like it :) and add some extra tomatoes and shredded carrots. Also add sauce to the bottom layer. This is a really great dish to feed a crowd.

Sweet Dinner Rolls

Reviewed: Oct. 11, 2009
Yummy! Very soft and light. I never follow the manufactures settings, and it seems to work for me. Added sugar, water, milk, and yeast. Allowed to proof for 10 minutes. Then melted butter, egg, flour and salt. Rolled into balls and place with sides touching on cookie sheet. Updated - Yesterday made this into a loaf. Best sandwich bread ever! My husband said to throw the old recipe out. Baked at 350 for 30 minutes for that.

Best Bread Machine Bread

Reviewed: Oct. 10, 2009
I make this about twice a week for our sandwich loafs. Make the dough in the bread machine, but finish it off in the oven. If you do this, cut a slit down the center and allow the dough to rise in bread pan for 40 minutes. I brush with milk and bake at 350 for 30 minutes. Also I put a cake pan filled with water underneath the bread as it bakes. Perfect every time. I've also used the dough to make rolls (was pretty good that way, but much better as loaf)
