Raleigh, North Carolina

The state capital and one of the points that makes up North Carolina’s Research Triangle, Raleigh is home to a half-dozen colleges including North Carolina State University. This being North Carolina, the rallying cry in Raleigh is for basketball…and barbecue. And not just any barbecue. Pork barbecue is the name of the game. Pulled pork sandwiches are a favorite, topped with a heaping helping of coleslaw. Pork ribs and hush puppies excel here too. On a hot day, nothing goes down better with North Carolina barbecue or a fried chicken dinner than a tall glass of iced tea. If you’re looking for trendy dining in the City of Oaks, the gentrifying Glenwood South neighborhood offers anything from wine bars to sports bars. The enormous State Farmers Market is held daily and shows off the region's bounty, from organic fruits and veggies to fresh-baked cakes and lovingly preserved jams and jellies.

About me:
I've loved to cook ever since I was little. I used to tell people I was going to be a "cooker" when I grew up. Many of my favorite memories involve helping my Grandma in the kitchen. The first dishes I mastered on my own were spaghetti with meat sauce and potato salad. In college and early adulthood I didn't cook much due to space constraints and that cooking for one person seemed like a waste. Now that I'm married, my love for cooking has been brought out once again. I love cooking for my husband, our family, and friends.

Balsamic Bruschetta

Reviewed on jul. 4, 2009 by SCOTTYGIRL
This is the best and most simple bruschetta recipe. It is great! I usually make it early in the morning so it has time for the flavors to blend. It is great the next day too if it lasts that long.

Chipotle Crusted Pork Tenderloin

Reviewed on jul. 4, 2009 by SCOTTYGIRL
I love this and have made it multiple times how. I have made it both with and without the Chilie Powder. So, if you need to omit the spicy/hot taste it is great without!!! It is so moist and tender. This is a winner!

New Red Potato Salad

Reviewed on jul. 2, 2009 by Kimberly
So wonderful! I read the reviews and added 4 chopped hard-boiled eggs and 1 lb. cooked bacon. I also used Red-Wine Vinegar. It was super! Everyone just loved it. It is great as a side dish on those hot summer days when you are grilling out and don't want to heat up the oven.
