Real Hummus

Reviewed: May 14, 2008
Yum! So easy and so good. This is a good basic hummus recipe. Can be customized easily. The second go round, I added roasted red pepper. Also good.

Quick Yeast Rolls

Reviewed: May 14, 2008
These are pretty good. I've made them a few times now and they always turn out fairly well. I never put mine in muffin cups, I just dump spoonfuls of the dough onto the pan and they turn out just fine. I don't know why everyone's so uptight about the dough being sticky, since you don't have to knead it at all. The recipe is good as-is.

Spinach Tomato Tortellini

Reviewed: May 14, 2008
I'd consider this average but filling. It needed tweeking just like other readers suggested. I added lots of garlic, twice the spinach (since it wilts down to practically nothing), and no-salt added diced tomatoes. I added more parmesan and used half & half instead of a mixture of heavy cream with milk. It was still creamy but mild flavored. It was a simple dish. Don't make this if you are looking for your mouth to go "pop". It was a great and easy meal for a fill-in night.

Lemon Whipped Pie

Reviewed: May 13, 2008
I halfed the recipe as I didn't want 2 pies, but used the full amount of pineapple and wished I would have used even more. This was very light and refreshing and I'm sure would work with other kinds of jello as well. It's a lot more similar to a lemon meringe than a cheesecake tho (I don't really get that comparison). My main issue with this recipe is that the "chill before serving is rather vague"...perhaps it should be common sense, but I made this about 6 hours (in the freezer) before serving and it still hadn't set...I recommend giving yourself 12-24 hours in the fridge to allow the right consistency.

Black Bean And Corn Salad II

Reviewed: May 13, 2008
Such a flavorful and healthy salad! To the dressing I added red wine vinegar and white wine vinegar to make it more tangy. I also added lime zest and a green bell pepper. The fresh cilantro is a necessity when making this because it just adds a whole other element and flavor. Overall, really enjoyed eating this!

Mama's Tomato Gravy

Reviewed: May 13, 2008
I've made Tomato Gravy in the past, but never had actually seen a recipe for it. I didn't have tomato paste, so used tomato sauce instead (just used a tad more flour to make sure it would thicken) and once the gravy started thickening, I added some Petite diced tomatoes. We use this over rice... never had over biscuits.

White Berry Pie

Reviewed: May 13, 2008
I love this recipe. I make it all the time. I just made some minor changes. I added more white chocolate to the filling the second time I made this. I also tried raspberries instead of strawberries but were great. This pie taste like a very creamy cheesecake. My work loves this and ask me to make it all the time. This one is worth keeping!

White Berry Pie

Reviewed: May 13, 2008
4 stars as written, 5 stars with a couple minor alterations! I doubled the amount of white chocolate called for. I used a whole 10 oz bag of white chocolate chips, and melted about 6 oz to mix into the cream cheese & whipped topping mixture. I also used a whole 8 oz package of cream cheese instead of the 3oz called for and sprinkled in a little more confectioners sugar. I sliced the berries, & drizzled the remaining 4oz of melted white chocolate on top. The more strawberries you can fit in your pie, the better it turns out! A word to the wise though! Make sure you use the freshest berries you can, and try to eat the pie in as timely as a fashion as you are able to. Otherwise, you will have a runny strawberry juicy mess!

Baked Ziti I

Reviewed: May 13, 2008
Wonderful recipe! The only thing that I changed was I added some fresh chopped garlic, and I changed the way I layered it. I mixed the sauce & noodles up before layering into the dish so that the sauce would get into them all and there would not be any dry noodles. Then I added the sour cream, then the cheese. I will definatly be making this one again. Love it!

Creamy Spiced Coleslaw

Reviewed: May 13, 2008
Very good coleslaw recipe! I used 3/4 cup of mayo & 1/4 cup of sour cream. I have always found that to be the secret of a good coleslaw. I did not have any celery seed, so I used celery salt. I also added a good sprinkling of Janes Crazy Salt. Extremely good!
