Fast and Friendly Meatballs

This recipe is great and SIMPLE. (Used 94% fat-free turkey which was fine.) I added some chopped onions, and next time I would probably put even more stuff like maybe parmesan cheese, garlic, black pepper, etc. to give it more flavor. Also, they were already stuff to the pan at 15 minutes so I might turn them sooner, or just giggle the tray to keep them loose. I'll definitely be making this again. Thanks.

No Fail Pie Crust I

Never, Never Fail Pie Pastry

My first from scratch pie crust. Absolutely beautiful. The flavor is awesome, flaky and just so good. I used lard and I love that it is not a sweet crust, lends well to sweet fillings.

Chocolate Eclair Cake

After reading through many of the reviews I did the following: 1) used honey graham crackers, 2) used French Vanilla pudding, 3) used the "Satiny Chocolate Glaze" for the chocolate sauce and doubled it. Took the cake to a dinner party and everyone loved it, however I am my own worst critic. I think the chocolate sauce turned out a bit grainy and turned too thick. After keeping the cake out of the fridge for a little while the sauce thinned out a bit and was a little better. Great treat for all...just need to perfect the topping sauce.

Black Bean and Corn Quesadillas

These were phenominal! The brown sugar gave it a distinct flavor that I thought accented the red pepper flakes so well. My meat loving boyfriend even said these were good!

Pecan Pie Muffins

These were a hit. I used mini muffin tins that I sprayed well and had no problem with them sticking or being greasy. Just like a pecan pie without all the mess. Excellent recipe.

Peanut Butter Oatmeal Cookies II

this is a great basic recipe (i doubled it, and turned out fine) saw another name for these; "cowpies" - I thought that was cute. wouldn't change a thing! trick is, when it starts to boil hard, THEN time one minute - otherwise if you don't do it long enough, it's gooey runny and if you boil too long, it's hard and crumbly... good luck and thanks for the recipe!

Chocolate Chip Cheese Ball

This is easy and SO good! I made this cheese ball for a baby shower I hosted last fall, and it was a huge hit. I served it with ginger snaps, graham crackers, and vanilla wafers. The ginger snaps were best with it IMO!

Grandma Strait's Fudge

This should definitely be modified to specifically say POWDERED sugar, not regular. Mix was way to thick in the beginning and was extremely difficult to get to temperature was very grainy now adding milk in a hope to salvage. I am going back to my grandmothers way from now on, no more fake shortcut recipes.

E-Z Marinated Swordfish

This just did not work for us. The recipe stated to marinate for at least 10 minutes and preferably up to 3 hours. I marinated about 2 hours and when I took the fish out to cook the lime juice had starting "cooking" the outside of the fish (like a ceviche). Once I cooked it the outside ended up a little tough and had a too strong lime/vinegar taste. I won't make this again.

Asian Orange Chicken

We really enjoyed this recipe. I made exactly as stated - but, as others said the cornstarch to water ratio was off. I just used the measurements suggested on the side of the cornstarch box. I did add some Sarachi hot sauce to the sauce because we like it spicy. The only reason I didn't give this five stars is I thought the recipe was a little sweet - it may have come from too much sugar or by just using the orange zest only. If you get orange chicken in a restaurant they use some pieces of the rind in the sauce. I think the bitterness of the rind must counteract some of the sweetness. I will probably try this next time to see if it balances out the sweetness for me.

Southern Fried Chicken Livers

I am not a fan of chicken livers, but, I thought I would surprise my husband with them since he likes them. This recipe was very easy to prepare - I actually just cooked them in my deep fryer. I didn't taste any, but, my husband said they were great and perfectly seasoned.

Zesty Porcupine Meatballs

This recipe was just ok for my family. We thought the meatballs were pretty good, but, the sauce had a little too much "tang" - it was a strange aftertaste. Probably won't make this again.

High Temperature Eye-of-Round Roast

I usually cook a tougher piece of meat in the crock pot for long hours, but, I thought I would try this recipe for something different and it worked perfectly for me. I cooked exactly as stated, but, used some different seasoning instead of just salt and pepper. It was cooked perfectly and was great the next day sliced thin on an au jus sandwich.

Mexican Bean Salad
