Easy Spiced Brown Rice With Corn

Maybe if I were in a more generous mood, I might give this four stars, but it would be cutting it close. It was just okay. The corn was an interesting addition, but there was nothing "spiced" about it really. Maybe if it had other spices? But then again, with rice, you're not usually looking for a lot of flavor, so maybe that's the way it's meant to be. Just didn't work for our family. Sorry.

Ty's Barbequed Chicken

Okay, but that's about it. It didn't taste like barbecue chicken to me. Maybe if I weren't expecting that, I would have given it four stars, but just barely. It was just okay, so I won't be making it again.

Buffalo Chicken Fingers

Good, but not really "buffalo" chicken fingers since there's no sauce. With buffalo sauce served alongside, they were good, but without it, they were just too plain for us. It was a lot healthier than wings, so I appreciated that.

Baked Teriyaki Chicken

Really good. It was a bit sweet, so I cut down the sugar the second time I made it. I also used boneless chicken breasts instead of thighs. The second time I made it was vegetarian night, so I just made a vegetable stir-fry and made the sauce to pour over it. Great!

Classic American-Style Potato Salad

This is really good. Having grown up in the South, this is the potato salad that I remember from potlucks and family get-togethers. Next time, I'll add a bit more mustard to spice it up a little more and some of the pickle juice to give it more of a pickle flavor. Better the next day!

Crunchy Oven Fried Tilapia

This was good. It didn't taste like fried tilapia to me, but it is a lot healthier and it was a good recipe. I added italian seasoning and pepper flakes to the bread crumbs. I will definitely make again.

Curried Chicken and Rice Salad

A good change of pace for our family. The crunchiness of the celery was a nice contrast with the rice and chicken. Next time, I'll add more vegetables and a bit more of the dressing ingredients, but it was still good as it was.

Antipasto Pasta Salad

This was great! Where we live, you can't get pepperoni or Asiago cheese, so I used all salami and mozzarella cheese. It made a TON, but I was glad because that meant more to eat for us! I'll be making this again tomorrow. YUMMY!

Sweet and Sour Veggies

Scottish Oat Scones

I've made these several times since finding this recipe and will continue to make them. They're great. I've made several variations - half whole wheat flour/half white flour, raisins in place of the currants, dried cranberries in place of the currants, and sprinkled with cinnamon and sugar. It's a great, easy recipe. Thanks so much for some variety in my breakfast repertoire!

Spinach Saute

I had spinach and cream cheese that I needed to use up, so I tried this and it was surprisingly good. My husband and even my kids, 2 & 3, wanted more when it was all gone. I did cut down on the lemon juice a bit, but I don't think it would have been bad with the original amount Thanks for a great recipe!

Tabbouleh III

This one just didn't do it for me. It wasn't like the tabbouleh I've had and it also was way too minty for our tastes. I made it exactly according to the recipe and ended up throwing pretty much the whole thing out. It did look pretty, though! I won't be making this one again.

Enchilada Sauce

Wow! Incredible - you'll never eat canned sauce again. I had another recipe that I had been using, but then decided to try this one and I'm so glad that I did. I did have to let it simmer for about 30 to 45 minutes to thicken up, but it did it on it's on without cornstarch or flour. Thanks for a great recipe!
