Flatlander Chili

Reviewed: Oct. 13, 2006
With just a few changes, this is my new chili recipe! We like more beans, more bell pepper, and more spice, usually a chopped up jalapeno. This is super easy and great - thanks a ton!

Sarah's Salsa

Reviewed: Oct. 13, 2006
Where we live, you can't buy salsa, so this was a first time experience to try to make it. This recipe was a great starting point and I can add/change ingredients to suit our tastes more. I still haven't found the perfect mix, but I'll keep working at it. It really is easy to make. If I perfect my recipe, I'll still make it from scratch even when we go back to the States - it's that easy.

That's-a Meatloaf

Reviewed: Oct. 13, 2006
This was a nice, welcome change from just plain old meatloaf. Next time, I'll add onions and a few other spices or just use my normal meatloaf recipe along with the ham and cheese idea as it really does "dress up" the meatloaf a bit, but I would like a bit more flavor than this recipe gave.

Buttery Cooked Carrots

Reviewed: Oct. 13, 2006
These were good. I decreased the brown sugar a bit, to around 1/4 cup and they were still plenty sweet. I also didn't use baby carrots, but just cut regular carrots. Thanks - we'll have these again!

Maryanne's Pasta Primavera

Reviewed: Sep. 12, 2006
This was surprisingly good. I'm not a huge brussels sprouts fan, so I didn't enjoy as much as my husband did, but it was good and simple to make. It was a good way to get more veggies into our diets. I'll make it again, but use other veggies - broccoli, zucchini, peppers, etc. Thanks for sharing!

Italian Vegetable Soup

We loved this, even the kids. The soup was even better the next day, except for the mushy macaroni. Thanks for a great way to get my kids to eat more veggies!

Homesteader Cornbread

Reviewed: Sep. 9, 2006
This is good and very moist. For this southerner, it's a bit sweet for me, but I'm sure for those used to sweet cornbread, it's perfect. I'll keep the recipe, just cut back on the sugar and hope it stays as moist!

Chicken Enchilada Soup III

Reviewed: Sep. 9, 2006
This is great soup. I cut down on the cheese to lower the fat/calorie content, but then served some on the side in case anyone wanted more cheese. With fried tortilla chips and sour cream, this is definitely restaurant quality. I did make my own enchilada sauce, also from a recipe on this site.

Hamburger Steak with Onions and Gravy

Reviewed: Sep. 9, 2006
We loved this! Served over mashed potatoes, it's about as comforting as you can get. I did double the gravy, as per other reviews and added more onions. Not quite healthy, but on a gloomy day, it will sure make your tummy happy! Thanks for sharing a great tasting, quick recipe!

Ultimate Irresistible Granola

Reviewed: Sep. 9, 2006
This is incredible granola. I've made it several times, the first time following the recipe exactly, except using raisins instead of cranberries since we can't get them here. The following times, I've often added more oatmeal, wheat bran, and/or flax seeds in order to cut down a bit on the fat and calorie content. That's the only downside for us. This is incredible and will be a great Christmas gift this year for friends.

Mama Bear's Porridge

My 4 year old was the only one who liked this. We're a family of oatmeal lovers, but something about this just didn't appeal to us. The texture was off or something.

We loved this one and it looks great, too. I served with buttered pasta and steamed veggies. Next, I'll try it with chicken. Loved it, loved it, loved it! Thanks!

Fruit Dip VI

I let the cream cheese sit out a bit to soften, then mixed it all up with the electric mixer. Served at a Bible Study with strawberries and apple slices and it was a huge hit - they couldn't believe how simple it is! Thanks for a great recipe!

Cinnamon Belgian Waffles

Reviewed: Aug. 11, 2006
The taste of these waffles is excellent. My only complaint is that I like a little more texture to my waffles. These are very fluffy, almost spongy. So, taste wise, a definite 5, texture wise, a 3, so I'll give them a 4! They're yummy - you should try them!

Cola Pot Roast II

Reviewed: Aug. 11, 2006
My husband is a huge pot roast fan, so I'm always on the lookout for a new twist. This was excellent. I added chopped potatoes with the carrots. I'm sure the sodium is out the roof with the mixes and the soup, but the taste is wonderful and the meat was very tender. Thanks for a great recipe!

Best Lemonade Ever

Reviewed: Aug. 11, 2006
This is great. As per other reviews, I reduced the sugar a good bit as we like a little "tang" to our lemonade, rather than just sweetness. In a glass pitcher with lemon slices and a few sprigs of fresh mint, it also looks very pretty! Thanks!

Mom's Chocolate Cake

Reviewed: May 13, 2006
Wonderful recipe. Where we live, cake mixes are very expensive and so this is a great, quick way to have cake. It's not too sweet, so it's very versatile. Put frosting on it to make it more sweet or just sprinkle powdered sugar on it to make it more "coffee cake" like. I've made this many times and usually am asked who brought me a cake mix from the States! Thanks so much!

Classic Tiramisu

Reviewed: Apr. 29, 2006
VERY rich, quite good. I made this for my husband's birthday and one guest said "this reminds me of flavored whipped butter" and it really did have that consistency. I went back the next day and looked at the nutrition facts and was amazed - per serving, it has over 30 grams of fat and 129% RDV of cholesterol!!! We didn't even eat the leftovers. It was very good, but I won't be making it again because it is just so bad for you. If you're looking for a yummy tiramisu, though, this is definitely one of them!

Winter Lentil Vegetable Soup

Reviewed: Apr. 18, 2006
I was excited about this because of all the rave reviews, but was disappointed. It just didn't work for us. It wasn't bad, but I wouldn't say that it was good either. My husband said that he'd eat it again if I made it again, and my 2 & 4 year olds didn't eat more than one bite. Oh, well.

Peppy's Pita Bread

Reviewed: Feb. 17, 2006
I can't believe making pita bread is this easy! Where we live, it's hard to find pita bread, so I was looking for a recipe that hopefully my three year old could help with. She loved mixing the dough and rolling it out and was especially excited to eat the finished product! Thanks for a great recipe!
