Marinated Grilled Shrimp

My husband called home and announced that he was "in the mood for shrimp kabobs." Still not entirely sure where the craving came from... but I turned to this site first.... and found that I had everything I needed for the recipe in the pantry. It was easy to combine, no weird ingredients, and marinated quickly. I put the shrimp on soaked bamboo skewers and alternated with lightly steamed zucchini, yellow squash, red grape tomatoes and red onion (both of those unsteamed)... and these were a hit. They took a little longer to cook than the recipe stated... which was either the cold weather and/or my additional ingredients but I just covered the grill and that picked up the pace. Excellent flavor.... and not spicy at all for us. Thank you!!

Golden Pork Chops

Very moist!! I too have trouble with hockey puck chops... and stick to shake and bake!! This recipe changed that! I used Healthy Request Cream of Mushroom to save on fat/calories and seasoned the chops with seasoned salt rather than the s & p. Used baby portobella mushrooms... about 1/2 box... this was a nice change!! Thank you!!

Grilled Sausages with Caramelized Onions and Apples

Wonderful flavors and very fall-ish! Was looking for something quick and easy... and different... so fruit for dinner struck me!! I used kielbasa from Sam's... I don't know the brand but it is one we go back to repeatedly as it is a little sweet... used full 3 pound package...3 large granny smith apples, reduced the onion to 1 (just because I knew my kids would gripe if they saw too many) and then rather than using regular brown sugar, used 1 TBSP of brown sugar substitute (like sweet & lo). The flavors melded perfectly (and I am someone who has never been fond of pork & apples). I'm really glad I tried this...the granny smiths cooked up nicely...was not too soggy, grainy or sweet! Just perfect for us! A keeper!

Irish Chicken and Dumplings

Excellent and easy to sub lower calorie ingredients. I divided the recipe in 1/2 and made it *mostly* as written. I used Healthy Request cream of chicken soup, Heart Smart (I think it is called) Bisquick mix, threw a bouillon cube into the cooking water and left out the potatoes. I'm almost wishing I'd made the whole recipe as my husband was caught eating the rest of the stew out of the pot!! Easy, filling... really cozy comfort food! Thank you for such a great idea!

Baked Ziti with Sausage

I followed this recipe pretty much to a "T". The only change I made was to cook the onion with the Italian sausage cause hubby doesn't like un-cooked onions. Hubby has actually eaten left-overs which is almost unheard of in this house.

Delicious Pumpkin Bread

Decreased the sugar to 2 cups and added only 1/2 canola oil and 1/2 cup apple butter. Turned out great. I also added chopped pecans to one loaf, chocolate chips to another and fresh cranberries to another. Fabulous!!!! I don't think I used the right size pans but it still tasted great. May cut back on the time to 50-55 mins. Great recipe!!! Thanks!
