Super-Delicious Zuppa Toscana

Reviewed: Jan. 6, 2010
This soup is fantastic! I followed the recipe with one exception-I used kale instead of spinach. I also found that 3 russet potatoes were plenty (instead of the recommended 5). Will be making this over and over again. Taste just like the famous restaurant soup!

This is a pretty basic and good casserole. My hubby loved it but I think that it could be better.

Cocktail Meatballs

This were really good and very flavorful. The sauce was a perfect accompaniment to the meatballs. I made the recipe exactly as is except I used italian bread crumbs and added a little salt and pepper to the meat mixture.

Chocolate Chip Cheese Ball

I thought this was really good. I was surprised though because it wasn't received well at my holiday party. I think people were confused by a sweet cheese ball. The flavor was really good though.

This was so yummy, EASY, & a great addition to my holiday goodie bags. It screams Christmas. Will definitely make again. ( I did use white chocolate baking bars instead of white chocolate chips)

E-Z Marinated Swordfish

Reviewed: Dec. 21, 2009
This just did not work for us. The recipe stated to marinate for at least 10 minutes and preferably up to 3 hours. I marinated about 2 hours and when I took the fish out to cook the lime juice had starting "cooking" the outside of the fish (like a ceviche). Once I cooked it the outside ended up a little tough and had a too strong lime/vinegar taste. I won't make this again.

Asian Orange Chicken

Reviewed: Dec. 21, 2009
We really enjoyed this recipe. I made exactly as stated - but, as others said the cornstarch to water ratio was off. I just used the measurements suggested on the side of the cornstarch box. I did add some Sarachi hot sauce to the sauce because we like it spicy. The only reason I didn't give this five stars is I thought the recipe was a little sweet - it may have come from too much sugar or by just using the orange zest only. If you get orange chicken in a restaurant they use some pieces of the rind in the sauce. I think the bitterness of the rind must counteract some of the sweetness. I will probably try this next time to see if it balances out the sweetness for me.

Southern Fried Chicken Livers

Reviewed: Dec. 21, 2009
I am not a fan of chicken livers, but, I thought I would surprise my husband with them since he likes them. This recipe was very easy to prepare - I actually just cooked them in my deep fryer. I didn't taste any, but, my husband said they were great and perfectly seasoned.

Zesty Porcupine Meatballs

This recipe was just ok for my family. We thought the meatballs were pretty good, but, the sauce had a little too much "tang" - it was a strange aftertaste. Probably won't make this again.

High Temperature Eye-of-Round Roast

Reviewed: Dec. 21, 2009
I usually cook a tougher piece of meat in the crock pot for long hours, but, I thought I would try this recipe for something different and it worked perfectly for me. I cooked exactly as stated, but, used some different seasoning instead of just salt and pepper. It was cooked perfectly and was great the next day sliced thin on an au jus sandwich.

Mexican Bean Salad

I think this was good and a nice twist on a standard three bean salad. I served this with roasted pork tacos and mexican rice. I made this exactly as stated and I wouldn't change anything.

Fried Rice Restaurant Style

Reviewed: Dec. 21, 2009
This was really good and so simple. I used chicken broth instead of water when cooking my rice because I just think it gives that extra flavor you need. I followed the advice of a previous reviewer and heated the dry rice in the pan before adding the liquid. I think it did help reduce the stickiness of the rice. Will definitely be making again - yum.

This turned out to be a yummy cake. It didn't taste like pumpkin at all though. We thought that it was just like a good carrot cake. The recipe was fairly easy and the results were impressive.

Pumpkin Pancakes

These out so good that my sons were begging for more. Great flavor and texture. I do recommend aging the batter for at least 10-20 min. before cooking. Do not stir the batter again after the initial mix because that will make the pancakes tough.
