Chicken Lasagna IV

Reviewed: Aug. 18, 2009
I tried this recipe for a candidate for a wedding reception. I made the following changes: 1: I cooked my chicken in water with one envelope of Lipton's Golden Onion soup mix, reserved liquid 2: Added 16 oz bag of frozen broccoli 3: Combined chicken, soups, parmesan cheese, ommitted sour cream, added 4oz Cream cheese, garlic powder and italian seasoning to taste, and 2 cups of reserved liquid from chicken. 3: I then layered sauce, uncooked noodles, sauce, broccoli, Italian cheese, noodles, sauce, broccoli, cheese...ended with noodles, sauce and cheese..then poured remaining liquid from chicken over top, baked in oven, covered for about an hour, then uncovered for about 15-20 minutes or until brown....This turned out really good...For the reception, I am thinking about making this in lasagna rolls for an elegant presentation..I'll update on the results..

Fruited Curry Chicken Salad

Reviewed: Jun. 24, 2009
I hosted a baby shower and made this recipe. Served it on small squares of wheat pita with a little bit of crisp lettuce... it was a huge hit. I thought I added too much curry but everyone else at the shower just raved over the taste. I thought it was good too. They must have really loved it, there was some left over and people took some home. I was very pleased and will make again!!

Pretzel Coated Fried Fish

EXCELLENT!!! I also used talapia, sure it would work for any white fish. Only change was I used fish fry instead of flour. Served with thousand island dressing, for dipping & a side of garlic carrots! Will make again!

Buttery Herb Wine Sauce

Reviewed: May 11, 2009
THIS TURNED OUT TO BE A REALLY GOOD RECIPE. I didn't have any white wine in the house, so I had so improvise. I used homemade chicken stock, fresh sauted mushrooms, and deglazed the pan after cooking the chicken. The whole whole family loved dinner tonight. I even caught my hubby licking the spoon as he cleaned up the dishes from the stove! We will definately be making this one again!

YUM! I used bay scallops & got a great result. Next time I will only use the eggs as they are needed as I had a whole omlete left over... but otherwise really terrific!

Excellent. I made this in the slow cooker. Browned ground beef & onions. Then used 4 beef bullion cubes with 4 cups of water & added everything else & cooked on low for 6 hours. Topped with a dollop of sour cream, YUM!

Cheesy Potato and Corn Chowder

Reviewed: Jan. 29, 2009
Oh my gosh this is so good! I thought the combination of chilies and gravy mix would be odd. Oh but to the contrary!! Everyone in my house gives this one a big 5 stars. It was exactly what I was looking for, tastes just like (maybe better) than the corn chowder from the sandwich shop.

Smothered Green Beans

Reviewed: Nov. 17, 2008
Very good recipe, I'm not a huge green bean fan but I really liked these. I even got my children to eat some. Its a keeper. The only slight change I made I added fresh mushrooms with the onions, just because I had them and had to do something with them. They didn't change the taste of the beans, I don't believe and they tasted really good. I can't think of anything that wouldn't be good saute in bacon fat, onion and garlic.

Banana Pudding IV

Reviewed: Sep. 24, 2008
Very nice recipe, easy, creamy, rich. I like the fact that it is no bake, the bananas didn't turn that yucky grey color they sometimes do when heated. This is a keeper, I'm taking it to my family reunion this weekend, I am sure it will be a hit. I do think next time I'll use neufatel cheese instead of cream cheese. I think it might cut down on the richness a bit. It set up beautifully, great presentation! Even better the next day.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Sep. 6, 2008
Oh My Goodess! This roast was soooo yummy! I let it cook all day in the slow cooker while I was at work and it was still tender and delicious. I poured the juice through a strainer to get out all the particles, then added cornstarch and water to make a gravy. My family loved it! Thanks for a great easy recipe.

Roasted New Potatoes

Reviewed: May 26, 2008
This recipe turned out very tasty, but 425 was too high for my oven and the potatoes burned. Next time, I will keep it at 400 degrees. But, regardless of a littel charring, they still tasted very good. I really liked the rosemary. We will make this again!

Feta Chicken

Reviewed: May 26, 2008
This was so yummy! I followed the recipe, adding only a little salt and pepper to the tops of the chicken before sprinkling on bread crumbs. I didn't like the way the bread crumbs were "dry" on top. When I make this again, I will spray the tops with some olive oil. But, the whole family lived this recipe. It was juicy and flavorful.
