Cream of Mushroom Soup

Reviewed: Nov. 11, 2007
This was SO YUMMY... My family loves mushrooms so I took a 12oz pack of mushrooms, blended them up in the processor so they where really mushy, then took another 12oz pack & chopped them in big chunks... I also used heavy cream instead of half-&-half, I didn't add salt, chicken broth was salty enough... It was VERY Yummmmy!!!!

Beef-Stuffed Squash

Yummm... This was SO Good. The only change I made was baking the acorn upside down for 50 minutes instead of 30, After stuffing it baked it for the full 50 minutes & Doubled the Glaze... other than that I followed the recipe exactly. My hubby & children loved it... Mmmm, I will be making this again.

My Amish Friend's Caramel Corn

Reviewed: Nov. 8, 2007
The best popcorn ever! I did not use the paper bag, instead I dumped the popcorn into a aluminum pan sprayed down with Pam. I stirred in the caramel. No mess, no fuss. I sent these out for Christmas gifts via mail and they were a hit. I have also added mixed nuts or dried fruits for a variety.

Buffalo Chicken Dip

Reviewed: Oct. 23, 2007
I am completely addicted to this dip!!! When I first made this recipe it was for a quick snack-like dinner...and then I ended up having it three more times that week! I use Texas Pete hot sauce and tortilla chips, but other than that I follow the recipe exactly. No changes necessary! From now on I will always keep these ingredients on hand for my future cravings. SO GOOD!!!

Easy Slow Cooker French Dip

I hate to say this, but I was disappointed with this recipe. I wanted so badly for it to be everything that all the ratings said. Perhaps it's just my experience, but the beer was just too overpowering.

Homemade Pancake Mix

Reviewed: Sep. 12, 2007
Excellent!!! I find myself making 3 batches Sunday night to last all week because my children LOVE these for breakfast before they go to school. I make a whole bunch to last the whole week. Throw the rest in the freezer. In the morning I throw enough in the microwave. My kids enjoy pancakes every morning before school. We LOVE this... Thanks for making this mom's life a little easier.

Really Great! My mother-in-law has asked for the recipe twice... now that is good. My kids think that Tilapia runs around in the barn, at the farm because they don't eat fish. Or so they think. Thank you for one of the best recipes on All Recipes! Superb!

Cajun Chicken Pasta

Reviewed: Sep. 5, 2007
I've never really been an alfredo fan which is why this looked so appealing. That, and I had the ingredients and wanted something new and different. I'm so glad I tried it!!! Because my husband is the pickiest eater on the planet I had to remove all of the vegetables. I doubled the recipe because leftovers make my life much easier. I did, however, make a mistake and used tbls. instead of tsp. for the cajun seasoning (which explains why it was so much spicier than I expected). Whoops. I didn't quite have three cups of heavy cream so I threw in some half and half. The sauce seemed awfully thin to me so I thickened it with a little cornstarch. Surprisingly my husband still enjoyed it after explicitly telling me he didn't want anything too spicy. I think this one will definitely be showing up frequently on our dinner table.

Anniversary Chicken I

Reviewed: Jun. 28, 2007
This was great. A treat for the taste buds. I had to make a few changes though. Since I didn't have any teriyaki sauce I borrowed a recipe from "Baked Teriyaki Chicken" on this website. I made sure it was nice and thick (which meant I didn't have to marinade it) and ended up mixing it with the ranch prior to putting it on the chicken. It's all going to end up that way anyway, right? I did not use any green onions, to my dismay, since my DH doesn't like them. I ended up waiting until the last 15 minutes before adding the cheese. It's definitely going to become a regular at my house. I served it with rice and green beans...add a little extra sauce on that rice and YUMMY!

Chicken Enchiladas I

Reviewed: Feb. 22, 2007
Seeing as that I was born and raised in Texas I grew up with having the best Mexican food. Now that I live in NC I crave it constantly and the closest I can find is Taco Bell. Now, if you're looking for that authentic taste this is not the recipe for you. However, it is VERY good. After reading a ton of the reviews I did change some things. I think the biggest thing that I changed was I poached/boiled the chicken in a bunch of spices (which included Old Bay Seasoning, dried parsley, garlic powder, onion powder, and a packet of chicken bouillon). After the chicken was cooked through I shredded it and then went on with the recipe. CHICKEN: I used crushed tomatoes instead of the tomato sauce and also added a small can of enchilada sauce. I omitted the water, bell peppers, and taco sauce. I also added about two tbls. sugar (divided between chicken and sauce) because the enchilada sauce I bought was medium instead of mild. I also added a tsp. paprika. SAUCE: I used another small can of enchilada sauce with more sour cream and crushed tomatoes. I served it with refried beans which I think I will include inside the enchiladas next time.

Husband's Delight

Reviewed: Jan. 13, 2007
I have been cooking this recipe for years. I remember it being one of the first things I ever made that didn't come out of a box and it's been a family favorite ever since. I will say that my recipe varies slightly. I use 3 green onions instead of regular and mix it with 2 cups sour cream and 8 oz cream cheese in a separate bowl. I also use 16 oz of tomato sauce instead of the diced tomatoes and mix with ground beef, a can of corn, 1 tsp sugar and salt, and 1/2 tsp pepper and Worcestershire sauce. I then layer (repeatedly and in this order) the cooked noodles, beef mixture, and the cream cheese mixture. I then top with a lot of cheddar cheese and bake until it bubbles (about 30 minutes).

Fusion Chili

Reviewed: Jan. 9, 2007
My first time making chili and it was very good. I accidentally used Marsala wine, plus I used venision ground meat so the taste was probably slightly different. Also, could not find the right peppers so I just used green chili's. All in all, will make again but with less honey and more Tobasco sauce for a spicier kick.
