Haystacks

Reviewed: Jan. 18, 2008
I made this recipe in a pinch since we had all of the ingredients in the house. We used sliced spinach instead of lettuce. I also mixed in a can of condensed cheese soup with the beans. It was so good! Quick and easy but packs a lot of protein.

I made this as a quick fix meal last night, and it was great! I doubled the recipe as other had suggested. I used one can oregano, garlic, and basil dicred tomatoes and one can petit deiced tomatoes. I also used 2 big cloves of garlic and only one diced onion. I would definitely make this again!

Pierogi (Polish Dumplings)

Reviewed: Dec. 26, 2007
Growing up, My Momma would make these with a burger & mashed potato mixture... She always made them best. Since my family loves Sauerkraut, I made it with Sauerkraut, They were very yummy... However, for some reason some of the dumplings busted open & I had Sauerkraut all over in my water.

Oh my... this is the most wonderful meat ball sub I ever had. Yummmm!!!! I made 30 balls though. 12 balls are way too BIG and would never fit into my mouth and too BIG to put onto the bread. I will be making this again. Mmmmm

These are very yummy after a small tweak... I used chicken broth instead of veggie and omitted the salt. I also used 8 slices of bacon, in my opinion 2 wasn't enough.

I like a more cream cheese taste... so I ended up adding 16 oz of cream cheese. So, next time I will use 1/2 the butter and about 3 cups of powdered sugar.

Iced Pumpkin Cookies

Reviewed: Dec. 5, 2007
Incredibly Delicious!!! SO Light & Fluffy... I had enough pumpkin to double the recipe. The fist I made just as written. The second batch I made, the only change I made was, I added a cup of walnuts & iced ½ of them with cream cheese icing & ½ without any icing. To tell you the truth they are so Yummy they don't even need the icing.

Tartar Sauce I

I love this recipe. It is way better than store bought. I used low 3 parts fat mayo and 1 part non fat yogurt, a little extra relish, added about 1T. of minced bread & butter pickles, and a dash of Texas Pete for kick. This recipe is too quick and easy to make, plus lower in sodium and no preservatives! Why would anyone every buy store bought after tasting this? Next time, instead of Texas Pete, I might mince some roasted jalepeno or green chili (we like it hot!)

Broccoli Cheese Soup V

Reviewed: Dec. 1, 2007
I made this tonight for dinner & my hubby said I need to become a chef... This was SO Yummm-Ooh... I did tweak it a little. I didn't have chicken broth, so I just added 5 cups of water & 5 chicken bouillon cubes to 40 oz (instead of 30 oz) of broccoli. In the onion mixture, Instead of 2 cups milk, I added 1 cup heavy cream & 1 cup milk, for an extra creamy texture. I also put a whole 2 pound block of Velveeta... It was SO Delicious!!!

This is SO Yummy just as written!!! I made it a second time with an extra acorn squash I had, So I figured I would tweaked it big time... I boiled & smashed one butternut & one acorn together, added about 2 teaspoons of cayenne, about 1 tablespoon garlic, one whole onion, 2 packs cream cheese, 3 cups chicken stock... blended it all together... Mmmm it was thick & delish...

Restaurant-Style Zuppa Toscana

Reviewed: Nov. 28, 2007
Won a Blue Ribbon at my church for this soup. People were raving and my kids love it too!! This is one of my favorite recipes to date. I made this following the recipe closely which I almost never do; it is fabulous! Saute onions and bacon separately and then add garlic. I dice and cook potatoes through and add with cream, turkey sausage and kale. Add as much Kale as you like to look or taste... Kale is one of the most nutritious foods on Earth and you will love it in this soup. One key step is to bring up to a rolling boil after adding in last ingredients, softens the Kale; fabulous then next day!! I guarantee you will love it!!
