Fettucine in Creamy Mushroom and Sage Sauce

Reviewed: Oct. 25, 2009
The only changes I made to this (other than doubling it!) was use farfalle pasta, grated in a bit of nutmeg and used two 6-oz bags of baby spinach... delicious! It went together very easily and quickly after all the chopping was done. Hubby wanted to help and he ended up doing just about everything (*I* did the chopping, of course-- he always wants to do the fun part!). I'm really looking forward to having the leftovers for lunch tomorrow!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Aug. 14, 2009
I love this recipe as does everyone else that I bake them for. This has become my favorite recipe to use. I follow it down to the T and back a few more minutes until golden brown...they are truly what the title suggests. The Best, Big Fat Chewy Chocolate Chip cookies. I keep them in a airtight cookie jar to keep them nice and fressh.

Barbie's Tuna Salad

Reviewed: May 21, 2009
My husband is a mayo and tuna only purist but he was over the moon with this. Said this is the best hands down tuna salad he had ever had. I followed the recipe exactly. EZ!

French Leek Pie

Reviewed: May 1, 2009
This was really very easy to make, and the results were absolutely delicious! Since some of the prior reviews indicated that this could have used more filling, I used 4 leeks which I sauteed in about a tablespoon of bacon fat. I didn't have enough time to cook bacon to add to the pie, but I'm definitely doing that next time-- that would turn this into a 10-star dish! I kept the amounts of the other ingredients the same, and added a dash each of thyme and garlic powder. I kept back about 1/3 cup of the cheese and sprinkled it on top. This was nicely browned by the 30 minute mark and smelled like heaven... I can't wait to make this again!

Middle Eastern Turkey Dogs

Reviewed: Apr. 29, 2009
I tweaked these just a bit to suit my family's tastes-- I used only about 1/4 tsp of cinnamon and added some garlic powder and onion powder. Also, the package of turkey was slightly larger than one pound-- it was 20 ounces. I mixed up the meat and spices and let it sit for about 30 mins, then made small patties out of it (hubby said they looked like sliders) and cooked them in a non-stick skillet. Tasty, especially with some tahini dressing I had on hand! I'll definitely be making this again-- always looking for a way to eat less red meat and this was *so* quick & easy.

Pesto Pasta with Chicken

Reviewed: Jan. 18, 2009
This was delish-- so much so that hubby and I "fought" over the leftovers! I did add a 9 oz bag of fresh spinach to this (trying to get more veggies!), so I included a little fresh grated nutmeg (waaay better than the pre-ground stuff) and some of the pasta cooking water as well to "loosen" everything up. The best part was how quickly this all went together, since I used store-bought pesto (Trader Joe's). I'll definitely be making this again!

Pancakes

Reviewed: Nov. 16, 2008
I don't eat pancakes, but I've made these twice for my kids and both times they've loved them. I did add an extra 1/4 cup of flour and 1/2 tsp of baking powder. All in all, not bad.

Swink's Chili

Reviewed: Oct. 28, 2008
A waste of 2 lbs of ground beef. It tasted like something out of a can. I thought the baked beans would bring an unusual twist to this recipe but they were a big mushy disappointment and have no place in a chili. The tomato taste was way over powering and you could taste the soup. This is something I can guarantee I will not make again.

Juicy Roasted Chicken

5 STARS!!!!! I added cut up potatoes, carrots and onions the last half an hour, increasing the baking time but is well worth it. Made gravy with the juices by adding some cornstarch to milk then adding to liquid on medium heat. Making chicken hash with leftovers!

Easy and Fast Cajun Chicken Caesar Salad

Reviewed: Jul. 3, 2008
This was amazing. Point blank. I made a huge batch of it for a family dinner with my husband's family. I used turkey bacon on the salad (no red meat for me..) it went along great with homemade onion rings and squash/zucchini and pasta. We followed up the completely filling meal with the Strawberry Jell-o pie. Perfection on a plate in salad form :) Thanks for sharing this with us all!

Wave Your Flag Cake

Reviewed: Jul. 3, 2008
I liked the cake, a lot! I made this yesterday for the Wednesday night service at my church. We celebrated the fourth of July two days early and the cake was great. Everyone who ate it had seconds and some had thirds. Like I said, I liked it, but it seems to me their could be another substitute for the jell-o because some of the people there did not eat it because of the jell-o...any who, great cake, great recipe :)

Pasta e Fagioli a la Chez Ivano

Reviewed: Jun. 30, 2008
This was an amazing recipe and a fantastic product. Thank you so much for sharing this with us all! I normally do not alter recipes on the first try and experiment on the second time around, but I cannot eat red meat so I had to do some tinkering with Ground Turkey and Chicken stock. It was still great and a lot leaner. Also I couldn't find the ditalini pasta and I used campanelle pasta which was a beautiful substitute. Amazing!

Strawberry JELL-O® Pie

This was a great recipe, BUT I did not have any sugar at all to put into the initial mix, and boy am I glad I didn't! It was sweet enough. The pie was awesome, but the crust wasn't tops...I think I'll have to stick to my own home-made graham cracker crust :)
