Pumpkin Bars I

Reviewed: Oct. 22, 2009
I made these yesterday for my weekly church group. They were a big hit, and I will even say that I loved them, and I'm always my toughest critic. I switched the recipe up and bit - I used all-purpose flour, which worked just fine and I was generous with the spices as I always am when making gingerbread, sweet potato pie or anything similar. Plus, I used more like 1 cup of pumpkin because 2/3 cup just didn't seem like enough. Also, I opted to use butter instead of shortening because I thought that might make it a little more flavorful. Shortening would probably be fine, but the butter worked out great. I iced them with cream cheese frosting. Yum! I will definitely make these again.

This would have been great had I not overcooked it (too dry). But besides my mistake this was awesome.

Superb quality and simplicity. Followed the recipe to the letter. Gets better every day. Moist and an old world spice sweet. The perfect texture - I've never had a cake set so consistently as this one. Thank-you!!!!

Hockey Pucks

These are terrific, but I've never made them using regular chocolate, I always use white chocolate or almond/vanilla candy coating. And, I've never heard this called this, but I make these every Christmas and they are probably the most raved about item I make! They are highly addictive! I always make extra otherwise we'll run out because people ask for more.

I omitted the tomato soup and doubled this recipe. It was fabulous! My parents were in town so I wanted something good and simple. This met all the criteria and I got raves on how good it was, I think there was one slice left.

Sauerbraten Klopse (Sauerbraten Meatballs)

Reviewed: Oct. 18, 2009
These sounded good and smelled wonderful cooking. But once we started eating, it was different. I will say the meatballs were good but the sauce was overpowering and my kids 15 and 9) gave it a thumb's down. I wish they had been better...

Pumpkin Walnut Cake

Reviewed: Oct. 17, 2009
NOT for bake sales (too soupy), so I'm having to keep this for myself (oh, poor me!) I mixed some of the cake mix in with the pumpkin, baked it longer than specified and it still wasn't of a consistency that could be cut into bars. I used pecans and it worked well, although I'm sure walnuts would be great. Will definitely pull this out at thanksgiving. Thanks for the recipe!

Cajun Pasta Fresca

Reviewed: Oct. 14, 2009
I really enjoyed this dish. I didn't add anything else to it and my boyfriend said it needed more veggies or meat. Maybe next time I'll add some blackened chicken or something for him. I thought the amount of pasta was too much and only ended up using about 2/3 of the box.

Pollo Mediterranean

This was recommended on the Recipe Exchange (tab at the top) and I liked the flavors. I had to substitute capers for the olives, but they have a similar briny flavor. I did not serve it over pasta or rice to save the carbs. Adding an extra splash of white wine at the end really makes it special!

This is Fall dessert Heaven! I forgot to add the water, and it turned out just fine. The topping was "crisp"-y, and almost like a crumbled oatmeal cookie. Fabulous & easy, will make again soon!

Quick and Easy Vegetable Soup

Yum! This was really good. I was a little scared of the V8 (since I don't like it as a drink), but it turned out great. I took a tip from another reviewer, and pureed it for my toddler and topped with shredded mozzerella, and she loved it! I froze a portion and it reheated great...just have to add some water or broth.
