Fiesta Cheese Rice

I did everything this recipe asked for, (with very few changes) and it was amazing. Everyone I made it for LOVED it. First I ground up some cubed chicken bouillon cubes and measured that as the tablespoon needed. Instead of the diced tomato with green chiles can I used a tomato and oakra can since everyone in the family loves it when we just heat it up to at alongside rice. I did what one of the reviewers above said to: To add all the cheese and mix it together instead of adding some on as a crust later. All in all, the recipe was a success!

Grandmother's Buttermilk Cornbread

Pollo Mediterranean

This was delicious! I didn't know how much milk to add so I just poured a little in. I didn't add the olives and added 1/2 a cup of sun-dried tomatoes instead of 1/4 a cup. I served the chicken and sauce over bow-tie pasta and it was delicious! Thanks for a great recipe! Will def. use again!

This had great flavor. I do think that adding a little more sour cream makes it creamier and a less dry in the end. I think it could be better is is was not as dry.

7-Layer Meatless Tortilla Pie

The concept was good. I do not like picante sauce so I subtituted taco sauce instead. I think this recipe is great idea and be spruced up to be a great meal.

Spiced Sweet Roasted Red Pepper Hummus

Awesome hummus recipe! I did cut the cayenne pepper to 1/4 teaspoon as suggested by some of the other reviewers, and I used roasted red peppers that were marinated in olive oil and garlic - which turned out great to me. Definitely a keeper!

Anniversary Chicken I

I made this recipe last weekend and it's definitely a keeper. I marinated the chicken breasts in the teriyaki sauce, as suggested by other reviewers. The chicken was very moist and the combination of flavors was different, but very good! Highly recommended!

My mother-in-law makes this every Christmas. Her recipe is slightly different. She uses twice the ground pork (2 lbs). She also uses 3-5 slices of white bread (without the crusts) that she mixes with water to make a paste..she uses the bread paste instead of breadcrumbs and milk. Mmmm...what a treat!

Shrimp Scampi II

I'm giving this a 4.5. It's yummy! My husband just made this dish with a few changes. We didn't have any wine, so he used about 3/4 cup of Dry Sherry. He sauteed some chopped onion and garlic in about 1/2 the butter this recipe called for. Then added the sherry, broth, and red pepper flakes. He skipped the flour as was suggested by others. He used the juice of an entire lemon and it wasn't too lemony. The sauce was allowed to reduce a little and then he added about 1/2 cup pasta water to reconstitute it a bit. He added the shrimp at the very end and allowed it to cook in the sauce. Next time we'd add some mushrooms, artichoke hearts, and/or shallot.

Tuna Noodle Casserole I

This was easy to make and turned out great. I love that this version doesn't use a can of condensed cream soup. I used half and half instead of milk to enrich the flavor. I also used 2 cans of tuna since one didn't seem like enough. And a little red pepper flakes gave it a nice kick. Other than that I followed the recipe exactly. Tastes like Mom used to make.

Beef Stroganoff III

I thought this was tasty. We certainly didn't have any problems finishing it since we kept going back for seconds. However, my husband insisted there was something missing from this dish...perhaps some rosemary. He followed the recipe almost exactly except he used a slightly better cut of beef and he accidentally used too much sour cream (so it was extra tangy). All in all, we'll definitely make this again. Good easy comfort food for a cold day.

Beef Spinach Hot Dish

I thought this was yummy. I did make the following changes since I didn't have all the ingredients: 1) used ground turkey instead of beef 2)mixed 1/2 bag of cooked egg noodles in before I baked it 3)generously added red pepper flakes 4)used about a cup of shredded cheddar instead of mozzarella since it was all I had 5)used only half the amount of spinach and sour cream 6) some artichoke hearts instead of shrooms It was easy and tasty.

Cran-Raspberry Snowball Punch

This recipe was very good. Instead of using the fruit juice above I used a Old Orchard brand Cran-Apple juice and Diet Sierra Mist. For the jam I just used some of my homemade strawberry jam and followed the instructions above. It turned out great!
