I made this recipe for my boyfriend tonight, and we both really loved it. The recipe was easy to make, and of course, I added a few extra ingredients, frozen chopped spinach (thawed and drained) and some chopped onion. I added them with the mushroom mixture to cook them through...turned out great! I'll make this one again for sure!

Rempel Family Meatloaf

This recipe is awesome and it's actually the first time I've attempted to make a meat loaf! I made just a few tweaks. Instead of one packet of onion soup mix I used half a packet of McCormick Meat Loaf Seasoning and half a packet of Ranch dressing mix. I also used 1/2 c shredded cheese and crushed club crackers since that's what I had on hand. I cooked this for the full hour and it was PERFECTION! Next time I will use meat leaner than 90/10 cos there was just a TON of fat even though I used the bread underneath trick. I was able to pour most off it off. Might even try with turkey burger.

Southwestern Corn Bread

This is pretty good corn bread, nice texture. I did add 1/4 cup honey to mine to give it a sweeter taste
