Irish Cream Chocolate Cheesecake

This turned out well. I cannot honestly say I loved it, though. I felt like it needed less Bailey's, and more chocolate flavoring. All the same, I guarantee you not a single piece will go to waste, so it IS a tasty recipe. Mine did crack before the end of the cooking time; the recipe did not specify to grease the pan in any fashion but I went ahead and PAM'd my springform pan. This is a standard cooked cheesecake so I do recommend that you look up tips & tricks for how to avoid cracked cheesecakes if you're serving it for company :) Unlike the no-bake kind, this kind will crack very easily!

Chocolate Chip Cookie Ice Cream Cake

This cake is amazing, and it's completely customizable. You can mix up the ice cream flavors, mix up the cookie flavors, add different toppings - and the outcome will always be delicious. I made this for my mom's friend's 40th and it was devoured. The only problem I have is that the crust sticks to the bottom.

Stuffed Pork Chops I

Well Ms. Tina, what an absolutely delightful recipe. I made a couple changes; brined chops for 2 hours, slit chops and stuffed them with pork dressing, put remainder on top. A keeper and a repeat at out table for sure! Thank you for sharing.

Pollo Mediterranean

Pretty good. I used the dry packaged sun dried tomatoes b/c it was what we had and served this with pasta. Hubby and I enjoyed it and the kids ate it :) Next time I will probably use kalamata olives.

Creamy Au Gratin Potatoes

These were good. I skipped the roux to make ours gluten free, by using corn starch dissolved in milk. Was very yummy. I cook ours the last 30 mins uncovered and would probably go longer uncovered, too.

Ham and Cheese Bowties

This was pretty good for a quick and easy meal. I used elbow macaroni only because it is what I had on had. I skipped the roux and sauteed the garlic is a tsp butter. Added the milk and cheese, mustard and pepper, and then tossed with the macaroni. Yummy and easy meal! Thanks for sharing!

Kalua Pig in a Slow Cooker

THIS WAS DELICIOUS. I MADE THIS THE FIRST TIME WITH SEA SALT AS I DID NOT HAVE THE HAWAIIAN SEA SALT. IT WAS SUPERB. I WANTED TO MAKE IT AGAIN SO I LOOKED FOR THE HAWAIIAN VERSION IN THE STORE AND WAS SHOCKED TO SEE THE PRICE OF $14.00! I WAS SO CURIOUS TO SEE IF THERE WAS SUCH A DIFFERENCE THAT I BOUGHT IT. SAVE YOUR MONEY, I COULD TELL NO DIFFERENCE! SERVED IT WITH YELLOW RICE WITH BLACK BEANS...SOOOO GOOD!

FANTASTIC soup! Use combination of heavy whipping cream in combination with the soup! Wow....very, very tasty...added sweet corn. Will try fish or shrimp instead next time ..... very, very good :)

Easy Southern Biscuits

The texture & taste was more like a muffin than a biscuit but I liked that they were A LOT healthier than real biscuits (if you use fat free mayo as I did)... the sacrifices I make to keep my waistline in check! I plan to test the other biscuit recipes on this site that call for cream cheese or sour cream instead of the usual butter or shortening before coming back to this one.

Amazingly Easy Irish Soda Bread

Simple, basic, rises well, good flavor. However, I found it a little dry when mixing. YES, I measured everything accurately and included all ingredients. I was having a hard time getting the dough to form a ball so I added dribs and drabs of extra buttermilk until I got the consistency I wanted, which was the consistency of biscuit dough. Once that was achieved, the dough kneaded easily and baked beautifully. I did brush it with buttermilk and butter and it had a great crust. Bread was dense, moist and very flavorful. Will make again.

Irish Chicken and Dumplings

I made this for dinner tonight and it had a real good taste but I need to work on my dumplings...lol I did use chicken stock instead of water and I also used 3 cans of soup I will make again but have get better at dumplings...
