Mediterranean Stuffed Chicken

This is simply wonderful. I made it for the 1st time last night, I pounded the chicken breast out thin and based on other reviews after rolling it in the butter I rolled it in Italian bread crumbs and after it was in the baking dish put sliced baby bella mushrooms and fresh parmesan cheese on the top. Mine had to bake for a lot longer than 20 minutes, but I had large breast. I altered the filling amounts to accommodate the amount of chicken I had and used the whole 8 oz f cream cheese and extra feta. I did not alter the garlic or the dill amounts. I served this with the Almond Strawberry Salad & the Lemon Thyme rice from this website. It all went together perfectly! I will be keeping this one to use over and over again!

Lemon Thyme Rice

Made this last night to go with a chicken dish! Only difference was I put in the the rice cooker to cook. Other than that I and the fact that I used fresh thyme I followed the recipe to a T. It is to die for! Will be making this again!

Cinnamon Ice Cream

This is my favorite ice cream to make at home. I used 3/4 cup sugar and skim milk instead of heavy cream, but it was still plenty rich and delicious! I would recommend this recipe to anyone.

Holiday Guacamole

my roommate found this recipe and we loved it. We used red grapes since that was what we had in the house and omitted the serrano chile peppers, instead we used some chile and cayenne powder. All of the different flavors were a great combination. Thank you so very much for sharing this recipe

English Muffins

These are amazing! I wasn't sure they were going to come out correctly at first, but once I got them cut out and they went through the second rise, they looked great! I baked them in a size 10 black iron frying pan and they look as good as Thomas's. I scaled the recipe down to 6 servings and for about 40 cent we have 6 gorgeous muffins for the morning which beats paying 3 dollars for a package. I will be making these again! :)

BLT Wraps

Easy and delicious! I did add a little mayo right on top of the cheese. It didn't look so good when I put it on, but once you roll it up, who cares? It was delicious and I'll probably make all my BLTs this way from now on.

Bacon and Tomato Cups

Definitely opt for the phyllo shells - you won't be sorry. I made them with biscuit dough first, and although they were quite good, they were outstanding with the phyllo shells. Thanks for the easy and delicious recipe.

Chocolate Brittle Surprise

Blueberry Oat Muffins

So good! This is my mom's go-to recipe for blueberry muffins. It's hard to tell they contain oatmeal and orange juice in the finished product. My favorite part is the crunchy cinnamon sugar on top :)

Baked Potato Soup

Really good! I used Frank's hot sauce, doubled the recipe everywhere else. I did not add onions as my son doesn't like them, so I doubled up on what the recipe called for garlic. I didn't have basil so I used a bit of oregano and a bit of tarragon. Very good!

Apple-Cheddar Tossed Salad

This was so tasty! My husband liked it better than most of the other "fruity" salads I've made. (The exception being "Jamie's Cranberry Spinach Salad" from this site--that one has even converted my 70 year old father into requesting cranberries anytime a salad is served!) I used pecans in place of walnuts, was out of walnuts. I like them both equally so I'm sure it didn't affect things one way or the other. I didn't have celery seed, but only celery salt, so I used that and omitted the table salt listing. I shredded my cheese too, and would only ever do that--high-quality Cheddar has too much bite to go eating it chunk-style in a salad, (especially if you aren't expecting it!) Thanks for the recipe, we'll have this one again :)

White Chocolate Pretzel Snack

This is a true staple when it comes to holiday treats for my family! I have always, always, always used white chocolate candy melts or almond bark instead of white chocolate with shortening and it works great, plus it saves the step of having to add the shortening. I have seriously been making this stuff since I was barely old enough to use the stove, or even the microwave, since that's usually how I melt the white chocolate/almond bark.
