Banana Oatmeal Cookies I

These were good, but I changed the ingredients to make them a little less rich, as I wanted to give them to my kids. I cut the butter in half and replaced the butter I cut with applesauce. This added a ton of moisture, and cut the fat big time! I also used 1\2 whole wheat flour, and substitued nutmeg for the cloves, and added 1\2 dark chocolate chips and half milk chocolate chips. I also used quick oats in place of rolled, because that's what I had on hand. All in all, basic substitutions. I agree that these came out very cakelike- almost like little mini banana breads. I know that some of that had to do with the whole wheat flour, but knowing what I know about baking, these would have been very cakelike anyway. However, they are delicious, and my 2 year old devoured them!

Cara's Moroccan Stew

Amazing! I tailored it to my taste- substituted fresh cilantro in place of the Thyme and parsley because I had it on hand and prefer the taste (and because I love cumin and cilantro together!), and subbed chicken stock for the vegetable stock.(I'm obviously not a vegetarian...) I subbed a little allspice for the coriander because I didn't have the coriander. I also added cubes of potato to the boiling water with lentils and boiled until tender to add to the dish, and I added shredded carrot to the sautee of vegetables. Lastly, I added a can of black beans. I think it turned out like an amazing vegetarian chili! Mmmm... I had a ton leftover, so I added shredded chicken to it and it was delicious! A new favorite for me:-)

Parmesan Chicken II

This was good, and quick & easy! I added some italian seasonings and whatnot, but it still tasted just a bit bland. I think next time I will season the coating a bit more heavily. I really LOVE the crispy texture!! For those who find it to be "mushy", try taking the skin off, and then following the recipe. That's what I did to cut down on the fat, and it really was very crispy!

Triple Berry Crisp

I halved this recipe because there are only 2 of us... I melted the butter to make it mix easier into the dry ingredients, and found that worked fabulously. I cut the butter to one stick for a 1\2 recipe, and used Whole Wheat flour... and I feel the butter was still a bit too much, but it tasted heavenly. I used fresh blackberries, blueberries and strawberries from my wholesale club, and I really liked the combo. I think next time i might use just strawberries and blueberries, and cut the butter back even further, adding some applesauce instead to keep it moist. Really good recipe. Love the idea of a top and bottom crumble!

Herb Rubbed Sirloin Tip Roast

I thought this was fabulous. I had a 7lb roast for Easter... so I doubled the recipe. I used chili powder instead of cayann after reading repeatedly that it was too spicy. I also used fresh rosemary and thyme from my garden, and used table salt instead of Kosher salt, I just cut the amount in 1\2. It was really amazing. Took about 3 hours to cook. Great Rub, I can see how it would be excellent on fish, chicken, pork... almost anything! Thanks!

Spinach Chick Pea Curry

This was my first venture with tofu. I followed some of the suggestions others had posted (made my own curry paste, pan-fried the tofu first)and added an extra 1/2 T. of curry paste. Wow! Was this ever good! It's pretty hot and spicy (esp. with the additional curry paste) but packed with flavor! I served it with whole wheat couscous. I can't wait to have the leftovers for lunch! Thanks for a fabulous recipe!

Brown Family's Favorite Pumpkin Pie

I made this pie a few weeks ago for my husband and some friends. I followed the recipe exactly, but used fresh pumpkin puree instead. I made a mistake with the streusel layer and over-mixed it, so it looked more like cinnamon-roll filling than of a crumb topping. I dropped it in spoonfuls all over the pie before I baked it. My friend said it was the best pie he'd ever eaten, and he's pretty picky. I made it again, this time getting the streusel right, and my husband said it was good, but not as good as my first attempt. I am going to make it again, and really soften the butter in the streusel, almost to melting, and drop it on top of the pie and draw it through with a knife all over. I also added the spices for the pie again into the topping (to make it a little spicier). Great pie (though I can't eat it)! This will be my standard pumpkin pie recipe from now on.

Barbeque Beef Casserole

My husband didn't read the note about cutting back on the cornbread- the night he made it, there was way too much cornbread but the next day all the juices soaked in and it was absolutely delicious! Definitely a recipe that gets better every day it's in the fridge! He added some BBQ sauce but it was really better to add the sauce yourself because we like different amounts, like you would with salad dressing or spaghetti sauce (if you're like me).

Chantal's New York Cheesecake

It has been at least 10 years since I've made a cheesecake, and I was worried about this, but I thought with so many reviews, I couldn't go wrong. The flavor and consistency of the filling was absolutely perfect, perfect, perfect. I made a strawberry reduction with fresh strawberries and sugar to put on top. There seemed to be something wrong with the crust---it was awfully dry. I'm not sure if the 15 graham crackers means 15 sections or 15 whole crackers. It seemed like I either needed to halve the graham crackers or double the butter. That said, it was delicious, and I will keep it in my file and make the small change of doubling the butter in the crust.

Four Cheese Macaroni

Absolutely amazing! We decided to change the cheeses and chose our favorites- cheddar, american, muenster and goat cheese- yum! The only downside is that it does not save well AT ALL. My husband made it for Christmas the day before and it lacked the amazing flavor it had when it first came out. Really needs to be served right away/same day, but absolutely delicious!

Homesteader Cornbread

Perfect! Just Perfect! I have been searching for a cornbread recipe, and after 5 or 6 different recipes (or imposters) I found this one! The only change I made was that I switched around the amounts of Flour and Cornmeal. I didn't even wait the 5 minutes so the cornmeal could soak. I just threw it all together and it was UNREAL. It was thick and rich, with the perfect amount of sweetness. It isn't one of those fluffy sort of conbreads. It is dense and full of flavor. The Yellow Cornmeal just gives it the most gorgeous color too. Perfect crust on the outside, too. I can't say enough about it. It's amazing. My new cornbread recipe.

Easy Pizza Sauce III

Buffalo Style Chicken Pizza

I am truly surprised... I really enjoyed this! I had leftover chicken legs in the fridge from dinner the night before, and decided to cut the meat up for this pizza. I used Texas Pete, and skipped the butter. I also used the Peppercorn Ranch because my husband is deathly allergic to Bleu Cheese. I used a mix of Cheddar and motz. cheese... it came out great. This would be GREAT for entertaining or for the "game". Will make again!! Thanks!

Jay's Signature Pizza Crust

This recipe is great for a soft, easy pizza dough that tastes really good for as simple as it is. I don't work with yeast very often, but it really turned out great. I used one cup of bread flour and the rest all purpose flour. It make it a little bit more doughy, which I'm not sure I'll do next time. However... its soft and really good. I made the easy pizza sauce off this site, for one cheese pizza, then I used the 2nd crust for the Buffalo chicken pizza off of this site. Both turned out great. Thanks!
