White Chocolate Raspberry Bar

Used Betty Crocker sugar cookie mix because I used up all the flour and sugar in the house. Came out REALLY greasy. I might try it with half the butter or without the cookie mix when I get to the grocery store.

Acorn Squash

I have been making acorn squash for years like this just for me since my significant other sticks his nose up to any vegetable. I have, however, not split the baking but willl do that today when I bake one for dinner. Acorn squash is also excellent plain which I sometimes do as I like cooking in the nude. Thank you for a reminder of a delicious and nutritious recipe.

Aunt Teen's Creamy Chocolate Fudge

Kind of hard, but I tasted a piece out of the fridge. It should be softer and more fudge-like at room temp. The only change I made was I half-n-halfed the chocolate chips. Came back to give it the extra star, was perfect at room temp and the first thing everyone ate in my Christmas goodie tins. One coworker asked me if she gave me back her tin if I would fill it with this fudge.

Fried Cabbage with Bacon, Onion, and Garlic

Meatball and Pasta Soup

Very good soup. I omitted the tomato paste and store canned tomatoes, using 1 pint of home canned tomatoes. Used hot Italian sausage (Roma). Initially I was doubling the recipe, but when I tired of making the meatballs, I just mixed the sauteed carrots, celery, and onions with the remaining meatball mixture, formed it into a loaf and we had a wonderful meatloaf supper!!

The best cutout cookie that I have ever eaten. These are not sugar cookies, which I hate. These are a more sophisticated, lightly sweetened, rich, buttery cookie. Many requests at all holidays for these.

Baked Salmon Fillets Dijon

Enjoyed this. I used 1/4 cup of panko breadcrumbs with 1/4 tsp of thyme and oregano added to it. Melted the butter and mixed with the breadcrumbs before adding it to the salmon.

Soft Christmas Cookies

I just made these and they're easy and so delicious! This will be my sugar cookie recipe from now on. The cookies held their shape with the cookie cutters and puffed up beautifully in the oven. But they're not too soft that I couldn't decorate them...a great cookie!

Slow Cooker Sweet Potato Casserole

I lost my old recipe for sweet potato casserole, and this one is now my new favorite. Admittedly, I do often change the recipe slightly, but not because of any fault in the original. My changes: I omit the orange juice and instead add a layer of canned manderin oranges between the middle of the sweet potato mash; I sometimes increase the brown sugar and pecans a little; I bake it in a casserole dish for 40 mins. Yummy!

Amazing Butternut Squash

I'm not brave enough to try the mayonnaise thing in squash, so instead I substituted with an extra egg an 1/4 cup safflower oil. I know it's essentially the same thing, but without the salt and vinegar or lemon. It rose up a little in the oven (almost like a souffle!) and had a really nice flavor and texture.

Blueberry Buckle

Used butter not shortening, a mix of whole wheat and all-purpose flour, and added strawberries with the blueberries. This is good served warm in a bowl with a little full cream drizzled on top.

Baked Paprika-Parmesan Chicken

I used a grated Italian blend, which contained parmazan, romano, and mozzerella. I also added 1/4 tsp. of garlic powder. I had 2 large breasts and double dipped; there was just enough coating for this. I only used half the butter. I baked it for 45 minutes at 375 degrees, and it was perfectly done. Served with au gratin potatoes and green beans. A great easy meal.

Big Batch Kris Kringle Cookies

Excellent recipe! I used white chocolate chips to avoid having to chop squares. I used a dark non stick coated cookie pan, and I should have turned the heat down by 10 degrees as my first batch was overdone a little. The second batch I cooked at 365 and moved the oven rack one up from the middle and they were perfect. I used walnuts and they were good, I'll try pecans next time - if they're on sale that is! The cookies don't spread as much as I thought they would, so you can put a little closer together.

This recipe is excellent - I've made it over 10 times now & it's one of our favorites. I try to spice it up a bit depending on what herbs I have on hand. I've made it without the celery when I was out and it was just as good.

Out of this World Turkey Brine

yea yea yea, I could make this recipe as is but I firmly believe in as using recipes as a basis. With that said, I used this recipe + directions by alton brown and substituted half of the water for vegetable/chicken/turkey stock and decreased the salt to 1 cup because our turkey was 9lbs. I used several whole garlic cloves that I smashed and sprinkled some all spice in the pot. I took all the ingredients in my big pot and (minus the very cold water) and shimmered them on the stove top to make sure they were completely dissolved. Then I cooled the liquid, then added the water and submerged the turkey. I only brined overnight (approximately 16 hours). Then I created a dry rub of minced garlic+ sage+ sazon+ smokey sweet red pepper seasoning. I glazed with melted butter halfway through. But the brine is was makes this dish Deliciously moist !

Beef Enchiladas I

The proportions of items on this seemed way off. I even added half of some once I noticed how off it was. The recipe was ok after I made the changes, but I'm sure glad I didn't use the tomato sauce or as much as it called for. I also didn't use as much green chilies as called for. The two small cans of sauce I added were even a little much. I don't see myself making it again.
