Best Chocolate Chip Cookies

Awesome!!! I have been looking for a new & better recipe for choc. chip cookies and this is it. They come out just as it says. Crispy on the outside & chewy on the inside. My hubby & kids love them! The only things I changed---I omitted the nuts (I prefer my choc. chip cookies without nuts) and I added 1/2 tsp Cream of Tarter (it doesn't change the flavor it just gives the cookie a different appearance). This recipe is definitly a keeper!!

Finally a biscuit worth making! I have searched and searched and tried and tried. Most were good but this one is it, the one I have been looking for and super simple to boot :). Used half cubed butter/half shortening...perfection.

Pollo (Chicken) Fricassee from Puerto Rico

My husband thought this was the most delicious meal to ever come out of our crockpot. I liked it but thought it was very salty. Other than the salt, the spice mixture was mild enough for wide appeal. I did use boneless chicken breasts in place of the legs.

Chipotle Sweet Potatoes

I'm always looking for interesting side dishes and this was tasty. I've never used the chipotle peppers in adobo sauce before, and the strong liquid smoke smell did turn me off a little. I used 2 peppers and did not find this to be terribly hot, in fact I thought it could have used 3 peppers. I will definitely make these again.

World's Best Lasagna

Wonderful!!! I had to add more sauce from my freezer b/c I wanted to really cover the noodles. I also made it with rice pasta for a gluten free meal. I didn't even need to boil the pasta first. It sat over night before cooking it. Timing for cooking was perfect.

Orange Cream Cheese Frosting

Raspberry and Almond Shortbread Thumbprints

This was great!! added a few extra TB of flour, baked at 340 for 13-14 minutes. Froze each batch for about 10 minutes before baking to help retain shape. Used a sterilized chapstick top to make 'thumbprints.' Used strawberry jam. Did not use sugar/milk drizzle.

Tomato Spinach and Basil Soup

This soup is good. It’s snowing here today and my kids enjoyed this with a grilled cheese sandwich after playing outside. They don’t care for spinach but they had no problem eating it in this soup.

Exquisite Pizza Sauce

Very good sauce- I followed the recommendations of other reviewers and lessened the amt of honey. We like it hot and spicy, so we didn't lessen the amount of peppers. We happened to have just today bought a can of anchovies- we crushed enough to make two teaspoons (I doubled the amount to freeze some) and added that- it does add another very delicate layer of flavor- however, I am sure it would be almost as good without! I did use a 12 oz can of tomato sauce and let it reduce it down to thicken it some. Definitely a keeper.

Vegetarian Sweet and Sour Meatballs

I knew right off that I couldn't stomach all that fat, so yes, I did alter. My rating is based on the recipe, with changes. Used more onion, added cumin because I like it-a lot! Made a "hot" sweet and sour sauce, adding anaheim chili pepper and seeds. I used only 3 eggs, and 2 Tbsps powdered milk mixed with 2 Tbsps water for the 4th egg. I used 1/3 less fat monteray jack cheese, and light cottage cheese. Lastly, I substituted about 1/2 cup soy granuals for 1 cup of the breadcrumbs. I think I added a little water also, but check consistency and texture first. The balls should be somewhat firmer/denser than meat-type meatballs, but they should still be moist enough to yield under moderate thumb pressure. The balls will lose much of their density/firmness as the fat is cooked off into the sauce.

Basic relish/salad/side dish. Easy to make. Sitting overnight didn't make any big difference. If I were to do it again I might cut down on the vinegar some...it was a little strong.

Enchiladas Suisas

This had a nice, subtle flavor. I used 1/2 c jalapenos and 1/2 c green bell just because that's what I had. The man wanted more spice to it, so next time I'll make it with the whole cup of chili peppers. This sauce was tasty! I suggest doubling it; there was not enough IMHO. I used a mexican cheese blend, a rotisserie chicken to cut down on prep time and wheat tortillas. I did not fry the tortillas and I simply put a heaping spoonful of sauce on the inside instead of dipping them. I greased the baking dish with Pam and used fat free half & half instead of heavy cream. I got 5 perfectly stuffed 8" enchiladas out of this. Thank you!

White Cheese Chicken Lasagna

This was very good...I made it today, I used chicken breast which I baked earlier with a little salt, pepper, and a bit of lemon juice, it was very moist, and the broth it made was very good, so I used that broth for my sauce...I also used fresh spinach, which I threw in with my onions & garlic when they were almost done....hubby even threw in some chopped cilantro coz we didn't have fresh parsley...I also used cottage cheese instead of ricotta coz that's all I had on hand, but I added an egg, parmesan cheese and a bit of the cilantro in....the sauce was soooo rich & creamy, very decadent, hubby loved it, in fact he was dipping a few pieces of chicken in the sauce as I was putting it together...I am SOOO glad Ifound & tried this recipe instead of some of the others on the site, it took a bit longer, but I didn't want an alfredo sauce w/either cream of chicken or mushroom soup...very rich & fattening, but very good, and worth all the effort...we served it w/a nice salad and garlic bread...will be making again for special occasions...

Ice Cream Kolacky

The funny thing about making this was that I followed everyone tips in making it a turnover and I really should have left it alone. The original directions were great other than the extra flour needed. They were a huge hit with my FIL. I did glaze some with sugar water, but you couldn't tell the difference between the ones I did and didn't so it wouldn't have matter. After I finally followed the original directions everything went smoothly.

Blue Cheese Waldorf Salad

Excellent! The cayenne adds a nice kick (don't omit it; it's very subtle), and the bleu cheese does add a certain creaminess, again, without dominating. I used GrannySmith and Braeburn apples. Brought to a holiday potluck and brouhgt home about a cup (having doubled the recipe). A definite hit and will file away for next Thanksgiving!
