Broccoli Chicken Salad

Using broccoli is a wonderful and surprising addition to this nicely balanced recipe; an ingredient I would not have thought of. I might add a scant amount of tarragon to up the "gourmet" factor; using tarragon vinegar is another possibility. You can use alternate ingredients like walnuts (which I used), currants instead of raisins, or cubed turkey instead of chicken with excellent results. I also cut the raisins. Overall, a very versatile recipe which allows for variants. A keeper for me!

Island Kielbasa in a Slow Cooker

I cut down on the brown sugar by half and 1/4 cup of mayo. I also added green peppers and cooked rice right before I turned the slow cooker off. It was GREAT!

Classic Spanish Sangria

This is wonderful and only gets better with age. I use Arbor Mist blackberry merlot with whatever rum I have at the house. Everyone loves it and requests me to make it.

Valentino's Pizza Crust

The Best Rolled Sugar Cookies

I added almond extract instead of vanilla because I love the taste of almonds. And so did everyone else who ate these. Wonderful! And be careful, these cookies spread out more than I thought they would. I tried to crowd a bunch on a tray and ended up with bar cookies at first.

Fresh Pear Cake

This is such a treat in our house when we have pears to use up. I use 2 whole eggs instead of the egg whites and just add the pear mixture last. Terrific and so moist!

Playgroup Granola Bars

These are wonderful. It's a great base recipe that you can add any dried fruit or nuts too. I added chopped almonds, craisins, and coconut. YUM!!!!! My kid each ate 3 the night I made them. I also use whole wheat flour and less brown sugar. No one even knew.

Tasty Whole Wheat Bread

This was so easy to make and to work with. My young daughter made the braided loaves with ease. I found the loaves did not need to bake even 30 minutes though. Just keep an eye on them so they don't get too crusty! It has a wonderfully soft texture.

Too Much Chocolate Cake

I only had a box of vanilla pudding so I used a dark chocolate cake mix. Then I stirred in toffee bits with the chocolate chips. A chocolate lover's dream especially while it is still warm. My hubby had seconds.

Red Velvet Cake I

I made this for my daughter's birthday and it was probably the best red velvet cake I have ever had. The icing MAKES the cake. I have always made a frosting that takes 15 minutes to mix but is not cooked. No more. This is wonderful!

Four Egg Yellow Cake

I did as others recommended and used half butter, half shortening. I cannot imagine how this would be with all shortening. The cupcakes are greasy, crispy on top, and rubbery from the shortening. I will try again with all butter. I will also do as others recommended and cream the butter and sugar together until smooth. Then add the eggs one at a time. I added the eggs and sugar together like the recipe stated, and the batter looked grainy.

Rubbed and Grilled Pork Loin

I just made this tonight. I did soak my pork in a salt brine for a few hours before rubbing and grilling it. It was delicious. My hubby said it was the best pork he head ever had. I'm just glad I doubled the pork because now we have lots of leftover.

Potato Rolls

I have made these for every special holiday. They are delightful and everyone looks forward to them. Take note though. The knots as the recipe describes make sandwich rolls. If you want dinner rolls, divide the dough in half again and make 48 rolls.

Butterscotch Oatmeal

This was incredible and quick. I love oatmeal and I don't mean the instant kind. I love to experiment with different flavors and this was simply delicious. I did use skim milk and half the sugar & butter it calls for. Then I added a little cinnamon and vanilla with the butter. My kids and hubby all wanted seconds.
