Pesto Sauce

Try using 1/4 cup cashews, only 1-2 cloves of garlic, and only 1/4 cup olive oil. Parmesan reggiano cheese is the best. To thin out, use 1/4 cup hot pasta water to add to noodles.

Mix-Easy Oatmeal-Raisin Cookies

This was very easy to make and I followed the directions exactly. These cookies were good but not the best I have had. One thing that stood out was that there was a hint of "cake mix" in the flavor. My kids liked them :-)

Grandma's Chicken Noodle Soup

This recipe is a good start. I used whole wheat wide egg noodles, large dash of black pepper, low sodium chicken broth, and 1 cup thinly sliced carrots. Also boiled un-cooked chicken in water for 25-40 min (length depending on how thick the chicken is) After chicken is cool shred and add to soup to warm.

Applesauce Pork Loin

This is so gross! The sauce was just a blob on the pork, it didnt cook into a 'sauce' or carmalize as others had happen. It was a nasty puke color, and just plain bad. I will not make again!

Jamaican Saltfish Fritters (Stamp and Go)

I kicked it up a notch by adding bonnet scotch. I blended that with the tomatoes, onions, pepper in my vitamix first then continued with the receipe!

Easy Oatmeal Cookies

I liked these, but there were a few things I would do differently next time. I will add less cinn. and nutmeg. They were REALLY strong. Also, I would add a tad bit more brown sugar. These weren't as sweet as I like. In fact they weren't sweet at all!. But other then that they were very good, and I will make them again (just tweeked) I liked the suggestion of another poster on here about making alot as using a fast breakfast. These would be good for that because they weren't sweet! I will try that. Oh I forgot to add that I didn't add the raisins or nuts. I just kept them plain.

Basic Corn Muffins

AWESOME! I made a batch of MINI muffins for my daughters Thanksgiving party at school. They were a hit! I added more sugar (I like sweet corn muffins) and I added about 3/4 C. sour cream. They are definetely a keeper!

King Ranch Chicken Casserole III

Well, I hated this, but my husband LOVED LOVED it. So, For that I'll rate it in the middle. I thought it looked like pink mush and I didn't like the taste or tesxture. ALthough, hubby loved it and went back for seconds and thirds. Go fiqure.

Easy Pancakes

I have never made pancakes without burning them or ruining them. It's a running family joke. So what possessed me to try again, I'll never know. But these turned out PERFECT! They were fluffy, they tasted GREAT, I got rave reveiws. Definetely a keeper in my 'pancake' folder. Oh... I also used half white flour and half whole wheat flour, SUPERB!

Flavorful Beef Stir-Fry

I made this last night with red wine as the liquid for the sauce and the addition of tri-color bell peppers...wonderful, fast, easy, adaptable recipe! The kids and husband all loved it. I'll be making this again for sure!
