Eileen's Spicy Gingerbread Men

Reviewed: Dec. 23, 2009
Following the recipe, the dough was incredibly sticky--to the point it completely stuck to the wax paper I was rolling it between. I thought nothing stuck to wax paper! Using a cookie cutter was impossible because trying to remove the extra bits and pick up the cutout to place on the pan was virtually impossible. Another reviewer said that these cookies hold their shape well...and that is completely untrue! The 4 gingerbread snowmen I managed to cut out blew up to big blobs. Taste is OK, but not worth all trouble. You HAVE to work in at least a little more flour in to the dough!

Spaghetti Squash I

Reviewed: Nov. 3, 2009
I made this for dinner the other night and it was delicious. I did make a few changes. I cooked two squashes and had to bake for about 45 minutes to get them soft enough. I didn't have fresh tomatoes, so I used one large can (28 oz I think) of diced tomatoes with the juice. I used kalamata olives and dry basil. I sauteed the onion and garlic, then dumped everything else into the pan and let it simmer while the squash cooked. Right before serving, I added about half of the feta cheese to the pan of sauce to melt. To serve, I scraped out the "noodles," topped with sauce, then sprinkled with the remaining feta cheese. This made enough sauce for 1.5 large (3+ lb each) squashes.

Feta Cheese Turkey Burgers

Reviewed: Aug. 13, 2009
I love this recipe. I have made these burgers twice and both times, they were great and not dry at all! The only change I make is to use about 1 TBSP of Greek seasoning (onion, garlic, oregano, mint) instead of plain oregano. Thanks for a great meal!

Jennifer's Granola

Reviewed: Aug. 11, 2009
Most delicious! I made a batch of it and before I knew it, it was all gone because everyone else thought it was just as good as I did. ...and it makes the house smell wonderful. So now for round 2, where I'll make 2 batches and hope it lasts a little longer... though that's not very likely :)

Perfect taste but doesn't hold it's shape well enough to pipe onto cupcakes.

Basic Chicken Salad

Reviewed: Jul. 28, 2009
Wow. Being a vegetarian, I have missed chicken salad so much. I made this with Morningstar Farms fake chicken strips. It was absolutely fantastic! I lightly browned the strips in a pan (directions are on the bag), chopped them up, and put them in the fridge to cool. Then I mixed everything together. Soooo good.

Carrot Burgers

Reviewed: Jun. 17, 2009
Yum! I made the "kid-friendly" modifications for my hubby: used onion powder and celery seed instead of fresh onions and celery. I also chopped the carrots into tiny pieces instead of dicing. I topped it with muenster cheese and ketchup, and served it on a whole wheat bun. I wasn't too hungry so I just prepared a burger for him. But while I was waiting for him to come down for dinner, I ended up eating half of his burger because it was so good. My meat loving husband finished the other half and I had to make another whole one for him. This was the first veggie burger my picky husband has ever ate, and he said he would eat it again.

Dirt Cake I

Reviewed: May 15, 2009
It's a fun cake and a great conversation piece, but the taste isn't anything extraordinary. The only big downfall of this recipe is the butter & cream cheese mixture. I didn't think the butter was necessary, the cream cheese didn't add much flavorwise either, and it was difficult to spread on top of the yet unset pudding mixture. I'd make it again for a fun kid's party, but not when I'm going for taste.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Apr. 5, 2009
Most commercially prepared BBQ sauces already have a lot of brown sugar or other kind of sweetener. I would have preferred this without the extra brown sugar because it made the chicken a bit too sweet.

Burgundy Pork Tenderloin

Reviewed: Mar. 23, 2009
I'm sorry to leave such a poor review when the recipe got so many raves. The taste, however, wasn't very good, and it looked extremely unappealing. After cooking in burgundy wine, the pork took on an unappetizing grayish purple color. The sauce turned a dark blackish purple when I added the brown gravy mix. The "purple" meat with "black sauce" reminded me of orc carnage from Lord of the Rings.

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Mar. 12, 2009
I really enjoyed this recipe. I made my own cajun seasoning based on a couple different recipes from this site and my own tastes. The fish was actually pretty spicy and the dill sauce was the perfect complement. I used dried dill, since that was what I had on hand (2 tsp). I served with mashed sweet potatoes and green peas and went from fridge to table in about 40 minutes including time to find recipes and make my own seasoning blend. Thanks for a great dinner!

Teriyaki Flank Steak

I usually don't bother to review recipes, and I don't even like steak that much, but this steak was fantastic! Followed the directions exactly except marinated for about 36 hours. The taste was indescribable...more than the sum of its parts!

Golden Sweet Cornbread

Reviewed: Jan. 29, 2009
I made this last night to go with chili and it was great. I made muffins and cooked them at 400 for about 15 minutes in a dark, non-stick muffin pan. The muffins were moist with just the right amount of sweetness. Next time, I'd probably use just a little less baking powder, since I like it a tiny bit more dense. I also added a little bit of extra oil based on other reviews.

Italian Dressing Mix

Reviewed: Jan. 28, 2009
Very good recipe using things I already had in the house. I used garlic powder instead of garlic salt and cut way back on the regular salt too. I used celery seed because that's what I had on hand. Next time, I may put less oregano because that flavor tended to overpower the rest. I've used it to make dressing (in a Good Seasons cruet - about 2 TBSP plus oil and vinegar as indicated on the bottle) and for other cooking. Worked great every time! Thanks!

Green Beans Amandine

I've made this recipe many times and love it. Sometimes I add dried cranberries to it too, for a different flavor. I used frozen french cut green beans. I also prefer to just use kosher salt instead of the seasoned salt.

Salisbury Steak

Reviewed: Jan. 28, 2009
I have made this recipe a couple of times. The first time, I made it exactly as the recipe is written. We enjoyed it, but didn't think ketchup belonged in the sauce. The next time I made it, I simply omitted the ketchup and we like it much better. Will continue to make this recipe without the ketchup from now on. Thanks!

These were delicious. We used leftover fajita chicken (using Chicken Fajita Marinade recipe from this site). We added jalapenos, sour cream, salsa, and guacamole to the top. They were gobbled up in an instant! Thanks!

Sangria! Sangria!

Reviewed: Jan. 28, 2009
We made this for a housewarming party to serve with margaritas and chicken fajitas. Went over very well. We made it the night before so the fruit could release all of its flavor into the liquid. I think we ended up tripling the recipe and had to make it in empty milk jugs for storage. Thanks for the recipe!
