Cheater Pot Pie

After Thanksgiving I wanted something quick and easy to make with the leftover turkey. This recipe was the winner. I used about 1 cup of turkey as opposed to chicken and instead of frozen vegetables, I used can green beans (since I had no peas) creamed corn (since we didn't have regular corn) baby carrots and mushrooms. I opted to cook everything in the sauce pan and added 1 can of creamed chicken (since I used a can of creamed corn) as well as milk to get the desired consistancy. For the pie portion of this recipe, I rolled out a defrosted frozen pie crust (A leftover, since its mate was used in a pie the night before), cut shapes with cookie cutters and baked in the oven per package directions to make pie crust cookies to serve on top of the pot pie. Definitly a cheater pot pie. I must say. I enjoyed the slight sweetness the creamed corn added.

Carrot Cake III

Only change I made to this recipe was to substitute 2 cups of white sugar for 1 cup white 1 cup brown. Since I didn't want a cake, I made 24 cupcakes and must say they are delicious. *For the icing I only needed 2 cups of confectioners sugar.

Caramel Apple Pork Chops

Made this recipe with the suggestions (marinated in soysauce/apple juice mix and baked on 350 for 25 min) of others and was pleasantly surprised. Certainly an ideal fall meal.

Apple Crumb Pie

This is an excellent recipe, and my family really liked it. For health reasons, I used 1/2 cup of Splenda instead of 3/4 cup white sugar. I agree with slicing the apples thin (I slice them about 1/8" thick) because this gives the pie a much better texture, making it a little crispy and fresh, but not overly crunchy and raw like some apple pies that slice the apples in larger sections (like 3/4" thick). Personal family preference led to me using twice the cinnamon and walnuts. I also replace the raisins with dried cranberries instead. The pie was a winner. Thanks for the excellent recipe!

Easy Salsa Meatloaf

I thought the salsa idea, to replace the typical onion, green pepper, and tomato sauce, was a good one. The meatloaf turned out to be very tasty, and my family enjoyed it. I think I would avoid using salsa with a lot of cilantro, however. Thanks for the recipe.

Pumpkin Cookies V

Very good cookie! To save some fat, I used 1/2 cup shortening, 1/2 cup butter and 1 cup of applesauce in place of the 2 cups of shortening. They turned out amazing - my cookies turned out looking like the kaspmary picture. Only other thing I did, based upon other reviews, was use 2 tsp. of pumpkin pie spice in place of the cinnamon, but felt they were still a little too bland for me, so I also added about 1/8 tsp. of nutmeg and 1/2 tsp. of cinnamon. Dipping the cookies in the icing worked out great. I cooked mine for 16 minutes at 350. I used a medium-sized cookie scoop. Definitely smooth the "sticky-uppy" parts after the dough is on the cookie sheet (I used insulated cookie sheets, too). Perfect!

No Bake Cookies I

Only change I made was to use smooth peanut butter and I used the new Jif Natural. The cookies turned out perfectly!! My little guy is gobbling them up. Thanks for the recipe. The boiling time is perfect.

Sauce Rosee

I had a craving for tortellini in rosee sauce with sausage after having it at a local restaurant. This recipe did not disappoint! I browned the sausage in the olive oil and herb mixture, then removed the sausage and added the wine to let it reduce for a bit. I then followed the recipe, adding my cut up sausage before the cream after having let them sit for a bit to let the juices settle. I used a mixture of sweet and hot italian sausage. This was the best pasta dish I've made at home ever and will be my go to meal. It's easy, not too expensive to prepare, and very tasty.

Spicy Tortilla Roll-Ups

This was probably the simplest "snack" recipe that I've put together. I took it to a barbecue (used spinach and tomato wraps to make it festive) and it was gone within 30 minutes. Everyone enjoyed it. Thanks for the great recipe!!!

Italian Herb Bread I

I halved the recipe and put the ingredients in the "manufacturer's recommended order" in my bread machine on the dough cycle, then followed the rest of the instructions. It turned out wonderful!! I made it to spruce up our leftover Baked Ziti for tonight's dinner. My four-year-old has already had two pieces!! Thank you for a great recipe!

Baked Ziti IV

Hands down, the best Ziti recipe I have ever made or eaten!! I have been making this recipe for years and kept meaning to add to the reviews. I use fat free sour cream and fat free ricotta cheese(instead of the cottage cheese). I have also used my own sauce for this recipe and found it to turn out equally delicious. The sour cream, ricotta (or cottage) cheese and provolone combination I think is what makes the difference, compared to other recipes. Definitely a family favorite.

Unbelievable Chicken

Delicious. The combination of ingredients makes for an unexpectedly delicious meal. Don't let the bland color of the marinade fool you. I only marinated for 7 hours, but even that was delicious, cannot wait to try this while the meat had all night to marinade.

Spicy Black Bean Cakes

These were good and I will make them again. They were quite dry and fell apart easily, so next time I will try using 3 eggs to help hold them together. I will also use more Jalepeno to make them more spicy for our taste. The sour cream (I used fat free) was very, very good with them. But, next time I will use a bit more lime juice and Jalepeno. Thanks for the recipe!

Jam Filled Butter Cookies

Delicious. However I had to do this in shifts, and for whatever reason the second half of my batch became crumbly and would not cooperate. Although, the first batch that did come out was delicious - I modified by doubling the recipe, and adding salt and vanilla. Next time I would use less flour, as I think that is the reason my cookies were crumbly. As other reviewers mentioned I filled a baggie with the filling and had my 5 year old thumbprint all cookies, while I easily filled the holes.

Tangy Slow Cooker Pork Roast

Wonderful, easy recipe. Pork was not bland, but full of flavor! I doubled the recipe, everything, including say sauce, vinegar, ketchup and spices. In addition, I added carrots (which were delicious) and next time I will add potatoes and celery (I had none at the time.) Delicious recipe. Even the 5 year old loved it!

Slow Cooker Chicken and Dumplings

Delicious and easy. The only change I made was to add additional vegetables I had on hand to this recipe (corn, carrots and peas) and 1 can of biscuits as opposed to the necessary 2 cans. I added the biscuits (which I tore and rolled into dime sized balls) 3 hours before I planned to serve this meal.

Banana Crumb Muffins

A delicious recipe. I didn't have the necessary 3 bananas, but 2 worked well enough. The cook time on this seemed a little long - wish I had taken it out a couple minutes sooner. However even a bit over cooked these were delicious and moist.
