Pumpkin Brownies

I wanted to try something different and since I love chocolate and pumpkin I decided on this recipe. It is to die for. I took the batch over to the flower shop where my Mom used to work and they said the same thing. They could not believe how good they were. I am making several batches to use for a fund raiser. They should sell quickly. Thanks for the great recipe.

Quinoa with Chickpeas and Tomatoes

Yum! I first sauteed a little bit of chopped onion and let that cook down a little. Then I added the quinoa and broth (instead of water) and it took more like 45 minutes to fully cook. Then I added a full can of chickpeas, about 1 cup of halved grape tomatoes (could have used more), and 2x the amount of dressing. I let it sit overnight to eat...easy and tasty!

Jamaican Jerk Dry Rub

I didn't have any chipotle powder, and I halved the cayenne as others recommended. I used this as a rub for a chicken I baked for dinner, and my boyfriend and I both loved it.

Addictive Pumpkin Muffins

These muffins are awesome! I used all whole wheat flour in mine along with 2 cups of splenda and 2 cups of brown sugar splenda. I also subed craisins instead of raisins and made some with coconut added! Make sure you use pumpkin puree too, not pumpkin pie mix! These are very hearty muffins, but the taste is wonderful! Everyone who has tried these loves them! One thing to note is that they cook a bit faster than mentioned...mine only took about 20 minutes in the oven!

Sloppy Joe Sandwiches

Maybe I made this wrong, but the sauce was too dry for me, unlike the manwich stuff. I will try adding more liquid ingredients next time.

Black Bean Vegetable Soup

Chocolate Chip Pudding Cookies

Good, cake-like textured cookie with many different possibilities for variation. I used Pumpkin Spice pudding mix and added caramel bits & raisins. Perfect for Autumn. Tasted like little mini pumpkin cakes. Could have used a bit more spice though. Can always add some next time.Using a small cookie scoop, the recipe made approx. 6 1/2 dozen cookies. They're thicker than I expected - especially with using a full 1-cup butter. That's a lot of butter. It should have been a flatter cookie with that much butter. I think it may have something to do with the high temperature. Would like to try again, decreasing the oven temp to 350. A good cookie for folks who like their cookies soft.

Pumpkin Pie Spice I

WONDERFUL. I was going to buy pumpkin pie spice at the store yesterday. But it cost $5.49 for a tiny 1 oz. jar. I thought that was outrageously expensive. This mix was right on the money -- and used what I already had in the spice rack. Ingredients were the same as listed on the jar at the store. THANKS FOR SHARING!

Banana Banana Bread

This is very good banana bread! I made it exactly as written - the only substitution I had to make was that I didn't have whole eggs, only egg whites in the carton - but it worked just as well. I was careful not to overmix the batter. It worked out very well for me - lots of banana flavor. Wonderful!

Creamy Hot Cocoa

I am drinking this Hot Chocolate as I write this and it is wonderful! I added the recommended amount of sugar but put 1 1/3 water instead of the 1/3 recommended. I also added 1 tablespoon of vanilla instead of the 3/4 because I love the flavor of it. I will make this again!

Golden Sweet Cornbread

Spaghetti Sauce Mix

Excellent and frugal recipe. My mom used to make spaghetti using the mix, and everyone loved it. I used the mix recipe, but with a twist. I browned grown beef, onion, green pepper, and fresh garlic. Stirred in 1/4-cup of the mix, 2 cans tomato paste & 4 cups water. Let it simmer while I cooked spaghetti. Turned out great -- and cheap too. My kind of recipe.

Penne and Vodka Sauce

This may replace my weekly spagetti dinners! We love our tomato pasta, but this was a very nice change. I sauteed onions with the butter and added a bit of oil, then added some minced garlic and then the pancetta. I added a number of italian spices (italian seasoning, garlic powder, onion powder, parm. cheese and red cayenne pepper) to the sauce once i added the tom. sauce and cream. It was lovely! Not a bite left between the THREE of us!

Crispy Fish Fillets

I was surprised at how much I loved this fish. The mustard taste did not stand out. I have made this with seasoned bread crumbs, and prefer that to the potato flakes.

Island Kielbasa in a Slow Cooker

Chicken Biryani

I was somewhat disappointed by this recipe after putting in about 2 hours of preparation. The potatoes were not completely cooked (had to pick them out and microwave them for a minute or two), the chicken didn't absorb any flavor and was very dry, and some of the rice wasn't cooked all the way either. I was disappointed by how bland it was in spite of all the spices used. It was all around okay but I probably wouldn't make it again.
