Easy Decadent Truffles

Reviewed: Feb. 5, 2008
These are wonderful, and versatile as you can change/add ingredients to taste. However, one caveat for those who leave them out at room temp for days: They DO contain cream cheese, which is very perishable, and should be kept refrigerated. Just take out the amount needed to serve about a half hour before serving, leaving the remainder refrigerated. Don't take chances by leaving them at room temp for days on end. Of course, they will go quickly if you have many guests, but do be careful. You don't want to give your guests food poisoning.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Feb. 1, 2008
This is an excellent recipe. I used frozen peaches and strawberries and used fresh apples (fuji), and pears. I omitted the kiwis for the time being. I also used strawberry preserves. I did put a little bit of white sugar on the fruit, but will probably omit that the next time b/c it was slightly sweet (but good). I bought corn tortillas instead of flour tortillas on accident. The chips tasted fine, but I had to cook them about 15-20 minutes. I like them crunchy and so it took longer to get the crunch I wanted. Overall, this is an excellent recipe and I will be making it again.

Holiday Cranberry-Pomegranate Sauce

Reviewed: Nov. 15, 2007
Actually, I haven't tried it yet, but it is very similar to the one I make every year for Thanksgiving and Christmas, and I intend to do this one this year, the pomegranite seeds sound like a great addition, plus I will try the cheesecake as well. Thanks.

No-Peek Beef Stew

Reviewed: Jan. 28, 2007
I give it 2 stars for pure simplicity. The end result was very soupy and bland. I added about 3 tablespoons of cornstarch with equal parts water during the last hour in an attempt to thicken it. Still very runny. Needed LOTS of salt and pepper. I will make it again but will add some spices to it at the beginning and half the liquid.

Turkey Pot Pie I

Reviewed: Nov. 25, 2006
Very, very dry. Next time I will only use 1 potato. They absorbed all of the moisture out of the filling. Needed to bake 25 minutes longer than noted. Disappointed because I really love turkey pot pie.

Italian Sausage Soup

Reviewed: Feb. 13, 2006
I liked this recipe. I made it with hot Italian sausage which gives it a good "kick". It might have been a little spicy for my husband but he's too polite to say anything. I think next time I make it, I will use 1/2 spicy, 1/2 regular, cut down on the zuchinni (too much for my taste) and add some pasta. Good overall though, especially on a cold winter day.
